Number Of Ingredients 6

4 chicken breast halves with skin and bone (2 to 2 1/4 pounds)
2 tablespoons extra-virgin olive oil
3/4 pound yellow squash, cut into 1/2-inch pieces
1 pound tomatoes, coarsely chopped
2 garlic cloves, chopped
3 teaspoons chopped marjoram, divided

Steps:

  • Pat chicken dry and season with 3/4 teaspoon salt and 1/2 teaspoon pepper. Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers.
  • Add chicken, skin side down. Cover with a round of parchment paper, then a heavy pot or skillet, followed by a 3- to 5-pound weight (such as two 32-ounce cans or a brick wrapped in foil). Cook 10 minutes, then remove weight, pot, and parchment.
  • Turn chicken over and re-cover with a clean round of parchment, pot, and weight, then cook until just cooked through, about 8 minutes more. Transfer chicken to a plate and keep warm, covered.
  • Add squash, tomatoes, garlic, 2 teaspoons marjoram, and 1/4 teaspoon salt to fat in skillet. Cook over medium-high heat, stirring frequently, until squash is just tender and tomatoes have become saucy, 6 to 8 minutes. Stir in any juices from plate and season with salt and pepper. Spoon over chicken.
  • Sprinkle chicken and vegetables with remaining teaspoon marjoram.
  • Serve with: a green salad tossed with red-wine vinaigrette

Here's what you need: large spaghetti squash, salt, pepper, olive oil, boneless, skinless chicken breasts, garlic, roma tomatoes, spinach, marinara sauce, fresh basil, red pepper

1 large spaghetti squash
salt, to taste
pepper, to taste
olive oil
2 boneless, skinless chicken breasts, cubed
3 cloves garlic, minced
4 roma tomatoes, diced
8 oz spinach
24 oz marinara sauce, 1 jar
½ cup fresh basil
¼ teaspoon red pepper, crushed

Steps:

  • Preheat oven to 375˚F (190˚C).
  • With a sharp knife, slice the squash in half. (If the squash is too tough - puncture in several places forming a dotted line around the squash. Microwave 3-5 minutes to soften. Allow to cool before cutting in half - following the dotted line).
  • Scoop out the seeds, brush with oil, salt, and pepper, and place face down on a baking tray. Bake for 35-40 minutes or until a fork can easily pierce the skin.
  • Heat olive oil in a large pan. Add chicken breasts (seasoned with salt and pepper) and garlic, and fully cook.
  • Add tomatoes and spinach. Cook until spinach has wilted. Add marinara sauce.
  • Stack the basil leaves and roll them up. Cut into slices and add to pan.
  • Add crushed red pepper, and stir until the ingredients are fully incorporated.
  • Once the squash has finished roasting, remove from the oven and let it sit for a few minutes before turning over and pulling at it with a fork. (Careful, there will be some steam!)
  • Shred the inside of each squash, being careful not to poke through the skin. Pour the sauce over the shredded squash, top with fresh basil, and serve.
  • Enjoy!

1 can Italian-style stewed tomatoes
1 chopped tomato
1/2 cup chopped green pepper
1 chopped onion
1/2 cup sliced mushrooms
1/2 cup chopped green onion
1 teaspoon oregano
1 teaspoon thyme
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook chicken until done in a skillet using olive oil and a touch of butter for flavour over medium heat.
  • Add in tomatoes to deglaze the pan and then add in the rest of the ingredients.
  • Cook for 20 minutes on medium low temperature until vegetables are tender.

1 spaghetti squash, halved lengthwise
6 links Italian chicken sausage, casings removed
1 head broccoli, cut into bite-size pieces
1 green bell pepper, cut into bite-size pieces
1 pinch chopped fresh basil, or to taste
1 pinch chopped fresh rosemary, or to taste
1 pinch Italian seasoning (such as Mrs. Dash®), or to taste
1 tablespoon olive oil
⅓ (7 ounce) container pesto, or to taste
10 sun-dried tomatoes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sprinkle squash with Italian seasoning and place upside-down on a rimmed baking tray. Add about 1 inch of water.
  • Bake in the preheated oven until tender, 35 to 40 minutes. Remove from the oven and let cool for 10 minutes; strands of squash should easily pull away when scraped with a fork.
  • Heat a large skillet or wok over medium heat. Cook and stir sausage, uncovered, in the hot skillet until mostly browned and crumbly, about 10 minutes. Stir in broccoli and bell pepper. 8 chicken cutlets, or 4 boneless, skinless chicken breasts, halved horizontally (about 1 1/2 pounds total)
3 tablespoons fresh lemon juice
1/4 cup olive oil
2 garlic cloves, crushed
3 yellow squash (1 1/2 pounds), halved lengthwise
3 medium tomatoes, halved
Salt and fresh ground pepper
1/2 cup lightly packed fresh basil, torn into small pieces, plus more for garnish

Steps:

  • Heat grill or grill pan to medium-high. Place chicken in a shallow nonreactive dish, and toss with lemon juice, 2 tablespoons oil, and 1 garlic clove. Cover; marinate 15 minutes.
  • Meanwhile, in a medium bowl, toss squash and tomatoes with remaining 2 tablespoons oil and remaining garlic clove, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Grill vegetables until charred and slightly softened, 3 to 5 minutes per side. Let cool slightly, then cut into large chunks. Combine vegetables in a bowl with basil; cover, and set aside.
  • Remove chicken from marinade, and season with 1/4 teaspoon each salt and pepper; discard marinade. Grill chicken until browned and cooked through, 2 to 3 minutes per side.
  • Transfer vegetables to a serving platter. Place grilled chicken on top, and garnish with more basil.

This is a Pinterest recipe that I adapted to my tastes that is so simple but extremely delicious. We served ours over linguine that was drizzled with a little EVOO. This dish makes a lot of liquid even though I removed seeds from tomatoes and squeezed the artichokes. It never really thickened for me but I think that is what made the chicken so tender.

5 plum tomatoes, cored, seeded and chopped
3 garlic cloves, finely chopped
13 3/4 ounces artichoke hearts, drained well & chopped (not marinated)
2 tablespoons olive oil
1 teaspoon sugar
2 tablespoons flour
salt and pepper
4 -6 boneless skinless chicken breasts
1 cup mozzarella cheese, shredded
fresh basil leaf

Steps:

  • Preheat oven to 350 degrees.
  • Place tomatoes, garlic and artichoke hearts in a bowl. Drizzle with olive oil and then add the sugar, S&P and flour. Mix well. Butter a 13x9 glass baking dish and add chicken breasts; season with additional S&P; then add the tomato mixture around the chicken breasts.
  • Bake chicken for about 50 minutes or until almost done. Remove from oven and add the shredded mozzarella cheese and fresh basil leaves. Bake for an additional 10 minutes or until cheese is browned and bubbly. Serve over a bed of pasta, if desired.

  • In a large measuring cup or mixing bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, garlic powder, black pepper, and remaining 1/2 teaspoon salt. Pour half of the mixture into the ziptop bag (watch for spills). Seal the bag, removing as much air as possible.
