Cranberry chocolate chip bread recipe with streusel crumbles and topped with icing. Perfect holiday recipe for breakfast, snack, or dessert.

For the Bread:2 cups all-purpose flour3/4 cup sugar2 teaspoons baking powder1/2 teaspoon salt1 large egg, room temperature3/4 cup whole milk6 tablespoons butter, melted1 cup fresh halved (frozen can be used, just defrost before halving)1 cup miniature semisweet chocolate chips
For the Streusel Crumble:1/3 cup packed brown sugar2 tablespoons all-purpose flour1/8 teaspoon ground cinnamon2 tablespoons cold butter
For the Icing:1 cup confectioners' sugar2-3 tablespoons whole milk1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees. Spray a 9x5 loaf pan with non-stick cooking spray. Line the bottom of the pan with parchment paper, then spray that as well. (don't skip this part - you don't want the bread to get stuck in the pan.)
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  • In a mixing bowl fitted with the paddle attachment, mix the melted butter, egg and milk, blending until combined.
  • Turn the mixer to low speed and slowly add in the flour mixture, scraping the sides as necessary until the batter is combined. Fold in the cranberries and chocolate chips. Pour into prepared loaf pan.
  • In a small bowl, whisk together the flour, brown sugar, and cinnamon. Cut in the butter, using a fork to mix until crumbly. Pour this streusel crumble on top of the bread batter. Bake for 60-65 minutes, until a cake tester comes out clean.
  • Remove the bread from the oven and place the bread pan on a wire rack to allow even cooling. Let cool in the pan for 15 minutes before gently removing to the cooling rack.
  • When the bread is completely cool, prepare the icing by mixing the confectioners' sugar with the milk. If the mixture seems too thick, add a few drops of milk until desired consistency is reached.
  • Drizzle icing over bread and serve.

1 cup fresh cranberries or 1 cup frozen cranberries, coarsely chopped
1/2 cup pecan pieces
2 teaspoons freshly grated orange rind
2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons shortening
3/4 cup orange juice
1 egg, slightly beaten
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon cocoa or 1 tablespoon Hershey's dutch-processed cocoa
1 tablespoon water
1/2 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Heat oven to 350°F.
  • Grease and flour three 5 3/4x3 1/4x2-inch miniature loaf pans.
  • Stir together chocolate chips, cranberries, pecans and orange peel in small bowl; set aside.
  • Stir together flour, sugar, baking powder, baking soda and salt in large bowl; with pastry blender, cut in shortening until mixture resembles coarse crumbs.
  • Stir in orange juice, egg and reserved chocolate chip mixture just until moistened; divide evenly among prepared pans.
  • Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean.
  • Cool 15 minutes; remove from pans to wire rack.
  • Cool completely.
  • Drizzle Cocoa Drizzle Glaze over top.

  • Microwave butter in small microwave-safe bowl at HIGH (100) 20 to 30 seconds until melted.
  • Stir in cocoa and water.
  • Microwave at HIGH 15 to 30 seconds or just until mixture is hot, slightly thickened and smooth when stirred.
  • Do not boil.
  • Gradually add powdered sugar and vanilla, beating with whisk until smooth.
  • If necessary, add water, a few drops at a time, until of desired consistency.
  • Makes about 1/4 cup glaze.

This is from Canadian Living. It is sweet, sticky and soooo good! It would be great for a brunch. It sounds complicated but is actually quite easy. Takes awhile to make. What I like is this recipe has a bread maker option (see bottom of recipe). I did it in my breadmachine and used Fleischmann's breadmachine yeast. While the recipe calls for chocolate chips I used a chopped up chocolate bar instead and think that this made it even better.

1/4 cup granulated sugar
1/2 cup warm water
2 1/4 teaspoons bread machine yeast or 1/4 ounce active dry yeast
1/2 cup milk
1/4 cup butter
1 teaspoon salt
3 eggs
4 cups all-purpose flour (approx)
1/4 cup packed brown sugar
1/3 cup corn syrup
3/4 cup dried cranberries or 3/4 cup raisins
2/3 cup chocolate chips or 1 chopped chocolate bar
1/3 cup chopped pecans
1 teaspoon cinnamon
1/4 cup sifted icing sugar
2 teaspoons milk
2 teaspoons melted butter

Steps:

  • In large bowl, dissolve 1 tsp (5 mL) of the sugar in warm water. Sprinkle in yeast; let stand for 10 minutes or until frothy.
  • Meanwhile, in small saucepan over medium heat, heat milk, remaining sugar, butter and salt until butter is melted; let cool to lukewarm. Whisk 2 of the eggs; whisk into yeast mixture. Whisk in milk mixture. Stir in 3-1/2 cups (875 mL) of the flour to make soft slightly sticky dough.
  • Turn out onto lightly floured surface; knead for 10 minutes, adding enough of the remaining flour as necessary to make dough smooth and elastic. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise in warm draft-free place until doubled in bulk, about 1 hour.
  • Grease 10-inch (3 L) springform pan; set aside.
  • Filling: In bowl, mix sugar with corn syrup; stir in cranberries, chocolate chips and pecans. Punch down dough; turn out onto lightly floured surface. Roll out into 18- x 11-inch (45 x 28 cm) rectangle. Spread filling over dough, pressing into surface; sprinkle with cinnamon. Starting at long edge, tightly roll up; pinch seam to seal. Place seam side down; cut in half lengthwise. Keeping cut sides up, twist halves together; place in prepared pan, shaping into ring. Pinch ends together to seal. Cover with plastic wrap; let rise until doubled in bulk, about 1 hour.
  • Beat remaining egg; brush over wreath. Bake in centre of 350°F (180°C) oven for 35 minutes or until golden. Run knife around bread; remove from pan and let cool on rack.
  • Icing: Mix together icing sugar, milk and butter; drizzle over bread. (Twist can be wrapped and stored for up to 1 day.).
  • Additional Information.Bread Machine Chocolate Cranberry Twist (for dough only). Use 4 cups (1 L) flour. Into pan of 1-1/2- to 2-lb (750 g to 1 kg) machine, add (in order) water, milk, eggs, melted butter, sugar, salt, flour and yeast. Choose dough setting. Shape and bake as above.

2 cups white sugar

1 cup canned pumpkin
½ cup vegetable oil
2 eggs, beaten
1 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4x2-inch loaf pans and flour pans using 2 teaspoons flour.
  • Stir 2 1/4 cups flour, sugar, cinnamon, baking soda, ginger, nutmeg, cloves, and salt together in a bowl. Whisk pumpkin, oil, and eggs together in a separate bowl. 1 cup sweetened dried cranberries
4 eggs
1 1/4 cups packed brown sugar
1/2 cup unsweetened baking cocoa
3 cups half-and-half
1/2 cup granulated sugar
2 tablespoons butter
1 cup white vanilla baking chips
1 cup whipping cream
2 tablespoons bourbon or 1 teaspoon vanilla extract

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. Place bread and cranberries in baking dish; toss to mix.
  • In large bowl, with wire whisk, beat eggs, brown sugar, cocoa and half-and-half until well blended. Pour over bread mixture. Stir mixture gently with large spoon to coat bread with liquid. Let stand 10 minutes. Stir mixture.
