  • Mix butter, 1/2 cup powdered sugar, and both extracts with an electric mixer until fluffy. Add flour, salt, and food coloring (if using) and mix until the dough comes together. **This will take a minute or two with a stand mixer. If you’re using a hand mixer it can take even longer. Get your hands in there if it’s not mixing up. Eventually it WILL come together like a cookie dough.** Stir in the chocolate chips. If dough is too soft, chill it until you can work it easily with your hands.

  • In a stand mixer or large mixing bowl combine butter, powdered sugar, and vanilla and mix until fluffy.
  • Next, add in salt and flour a little at a time until the dough forms. If you are using a hand mixer, this can take a few minutes so continue mixing until it reaches a dough consistency. Stir in the chocolate chips.
  • Next, use a small cookie scoop to form about 1 tablespoon size balls of dough. Place on your parchment lined baking sheet and (if needed) refrigerate for 5-10 minutes. Because these cookies don’t spread, you can place them close together. I was able to bake all 14 cookies on one sheet.

  • TOAST PECANS: Preheat the oven to 350 degrees F. Spread the pecans in an even layer on the sheet pan. Bake for 5-7 minutes or until they smell fragrant. Watch carefully-- you don't want to burn them. Remove from the oven and allow to completely cool before transferring them to a mini food processor or cutting board. Pulse on the "chop" setting or finely chop. You want very small pieces, but avoid over-pulsing in the food processor or you'll end up with pecan butter.
  • WET INGREDIENTS: Either in a bowl of a stand mixer with the whisk attachment or a large bowl (and using a hand mixer) combine butter and 3/4 cup powdered sugar. Cream together until smooth and creamy, about 3-4 minutes. Add in the vanilla, salt, cornstarch, and chopped pecans. Beat until smooth and combined. Add in the flour and beat slowly until combined and smooth. Add in chocolate chips and mix until combined. It will seem sandy and crumbly at first; keep mixing, and it will come together. Once combined, do not overmix.
  • BAKE: After being chilled, measure out cookie dough using a 1-tablespoon measuring spoon (each ball should use exactly 1 tablespoon). If the dough gets too warm from being rolled or sitting in a warm kitchen, put it in the freezer for 10-15 minutes. Preheat the oven to 375 degrees F. Line a light-colored sheet pan with a Silpat liner (See Note 3). Bake for 7-11 minutes (mine always take 10 minutes). Remove from the oven, let stand on tray for 3-5 minutes and then transfer to a wire cooling rack. Let cool for 2-3 minutes.

  • Preheat the oven to 350 degrees F. Spread the pecan nuts in an even layer on the sheet pan. Bake them until fragrant for about 5-7 minutes. Watch them carefully, you don't want to burn them. Remove them and allow them to cool completely before transferring them to a mini food processor or spice mill. Pulse or finely chop. You want a powder with some very small pieces left. Avoid over-pulsing or you'll end up with pecan butter. I add a tbsp of flour to the nuts to prevent this.
  • Either in a bowl of a stand mixer fitted with the whisk attachment OR a large bowl combine room temperature butter and 3/4 cup sugar-free powdered sugar. Cream together until smooth and creamy, about 3 minutes.
  • Add the vanilla, salt, cornstarch, and pecans. Beat the mix until smooth and combined. Now, stir together sifted flour and spices and add the flour mix to the butter mix. Beat slowly, until just combined and smooth. Add in sugar-free chocolate chips and mix until combined. I switch to a spatula at this point to avoid overmixing.

  • Place the oats and 1 cup of shredded coconut in a large bowl. Set aside. (Reserve the remaining coconut for step 3.)
  • Combine the butter, sugar, milk, cocoa, and salt together in a large saucepan over medium heat. Whisk until the butter melts, then bring to a boil. Allow to boil for 1 minute without whisking. Remove from heat, stir in the vanilla extract, then pour over the oats/coconut. Stir until combined. Cover tightly with aluminum foil or plastic wrap and chill for at least 45 minutes and up to 2-3 days.
  • Meanwhile, pulse the remaining coconut in a food processor to break it down. It’s easier to coat the balls when the coconut shreds are broken up/smaller.
  • Line two baking sheets with parchment paper or silicone baking mats. And make sure there is enough room in your refrigerator for the baking sheets.
