CHOCOLATE CHIP STRAWBERRY BANANA MUFFINS



Chocolate Chip Strawberry Banana Muffins image

These healthy muffins taste as tender as cupcakes! Leftovers will keep for at least 5 days if stored in an airtight container in the refrigerator. Reheat individual muffins for 12-15 seconds in the microwave. These freeze really well too!

Yield 12 muffins

Number Of Ingredients 13

2 cups (240g) whole wheat or gluten-free* flour (measured correctly)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tbsp (14g) coconut oil or unsalted butter, melted and cooled slightly
2 large egg whites, room temperature
1 ½ tsp vanilla extract
¾ cup (200g) mashed banana (about 2 medium)
¼ cup (60g) plain nonfat Greek yogurt
3 tbsp (45mL) honey
¼ cup (60mL) nonfat milk
1 cup (160g) diced fresh strawberries (about 8 large)
2 tbsp (28g) miniature chocolate chips

Steps:

  • Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick cooking spray.
  • In a small bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Stir in the mashed banana and Greek yogurt, mixing until no large lumps of yogurt remain. Stir in the honey. Alternate between adding the flour mixture and milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour in 3 equal portions.) Gently fold in the strawberries and chocolate chips.
  • Evenly divide the batter between the prepared muffin cups. Bake at 350°F for 17-20 minutes, or until a toothpick inserted into the center comes out clean. Cool in the muffin cups for 10 minutes before carefully transferring to a wire rack.

2 small ripe bananas, mashed
1 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder

5 small strawberries, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  • Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
  • Sift flour, baking powder, baking soda, and salt over the banana mixture. Beat until just combined. Stir in chopped strawberries. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 16 to 18 minutes. Cool for 5 minutes then transfer to a wire rack to cool completely.

2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra-ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1 teaspoon baking powder
1 teaspoon baking soda

1 egg
1/2 cup canola oil or 1/2 cup vegetable oil
1/2 cup sour cream or 1/2 cup plain yogurt
1 teaspoon vanilla extract
1 cup mashed ripe banana (2 to 3 medium)
1 -1 1/2 cup chopped fresh strawberries
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F/180 degrees C and grease a 16 cup muffin pan or place 16 paper muffin cup liners in muffin pan.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, whisk the egg, oil, sour cream (or plain yogurt can be used) and vanilla. Stir into dry ingredients just until moistened. Fold in bananas, chopped strawberries and chocolate chips.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake in preheated oven for 22-25 minutes or until a toothpick inserted near the center comes out clean (toothpick inserted into center of muffin may be a bit moist and gooey because of using fresh chopped strawberries, but that's alright). Cool for 5 minutes before removing from pans to wire racks to cool completely.

1 1/4 C flour
5 TBSP milk
1 egg
1/2 C sugar
1/2 tsp cinnamon
1/2 tsp baking soda
pinch of salt
1 tsp vanilla extract
3 small bananas (mashed)
1/4 C packed brown sugar
1/2 C fresh strawberries (chopped + a few extra to put on top of each muffin prior to baking.)
1/2 C mini chocolate chips

Steps:

  • Preheat the oven to 425 degrees and line a 12 ct. muffin tin with cupcake liners OR spray with non-stick cooking spray.
  • Combine the mashed banana with all the ingredients, except the mini chocolate chips and fresh strawberries, mixing well.
  • Gently add in the mini chocolate chips and fresh strawberries.
  • Fill each muffin well/cupcake liner about 3/4 of the way and place a few mini chocolate chips and fresh strawberries on the top of each muffin.
  • Bake for 5 minutes on 425 degrees. After 5 minutes, reduce the oven temperature to 350 degrees and bake another 12-15 minutes.
