VANILLA RICH CHOCOLATE CHIP COOKIES

Steps:
- Preheat oven to 375 degrees F. Mix flour, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate chips and walnuts.
- Drop by rounded tablespoons about 2 inches apart onto ungreased baking sheets.
- Bake 8 to 10 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

- In a large bowl, combine the wafer crumbs, butter and brown sugar. Press onto the bottom of a greased 13-in. x 9-in. baking dish. Bake at 350° for 5-8 minutes or until lightly browned. Cool. , In a microwave, melt white chips; stir until smooth. Cool. , In a large bowl, beat cream cheese and sour cream until smooth. Add melted chips; beat well. Fold in whipped topping., Pour filling over crust. Cover and refrigerate for 2 hours or until set. Drizzle with chocolate topping if desired.

Steps:
- Melt 4 ounces chocolate in a double boiler or heatproof bowl set over a pan of simmering water. Let cool to room temperature. Pour into gem candy mold. Refrigerate until hardened, about 15 minutes. Remove chocolates from mold. Repeat with 4 ounces chocolate.
- Melt remaining ounce chocolate, and brush on undersides of first batch of gems. Immediately top with second batch of chocolates, flat sides together, matching sizes and shapes. Refrigerate until set, about 15 minutes. Wrap each in a foil wrapper.
CHOCOLATE CHIP VANILLA GEMS
These are a tasty morsel of a muffin, that's great with a cup of coffee or a glass of milk. My preference is to leave out the chips, but my kid's wouldn't have them any other way. The small size brings out the intensity of the vanilla. Use the batter with out the chocolate as a base for a delicious regular sized berry muffin.

Steps:
- Pre heat oven to 400 degrees.
- Grease 24 mini muffin pan.
- Stir together in a mixing bowl all the dry ingredients and the chocolate chips.
- Make a well in the flour mix and set aside.
- In another bowl whisk together all the wet ingredients and pour into the well in the flour mix, stirring together gently until all the flour is mixed inches
- Don't over mix there will be some lumps.
- Spoon batter into muffin pan filling to the top.
- Bake 15 - 18 minutes, or until top just begin to get golden.
- Note: quantities will vary based on the size of muffin pan, there are many different sized mini muffin pans, if they are larger, don't fill all the way to the top.
