Homemade breads are my favorite goodies to give. After delivering these lovely loaves to friends and family one Christmas, people kept asking me for the recipe. I was happy to share it! -Nancy Tafoya, Fort Collins, Colorado

Yield 1 loaf (12 slices).

Number Of Ingredients 15

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon almond extract
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
TOPPING:
1/3 cup finely chopped hazelnuts
1/3 cup miniature semisweet chocolate chips
3 tablespoons sugar
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder, baking soda and salt; gradually add to the creamed mixture alternately with sour cream., Pour half of the batter into a greased 9x5-in. loaf pan. Combine topping ingredients; sprinkle two-thirds over the batter. Top with remaining batter. Sprinkle with remaining topping; press down lightly. , Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

4 cups brewed coffee
1/4 cup hazelnut flavoring syrup
1 tablespoon sugar
1/8 teaspoon ground cinnamon
1/4 cup heavy whipping cream
1 tablespoon Nutella

Steps:

  • In a large saucepan, combine the coffee, flavoring syrup, sugar and cinnamon; heat through. Divide coffee mixture among four mugs., In a small bowl, beat cream and Nutella until thickened. Gently spoon onto tops of drinks. Serve immediately.

2 cups hot espresso
1/4 cup simple syrup (equal amounts sugar and water heated until sugar dissolves)
1/4 cup melted bittersweet chocolate
2 tablespoons caramel syrup
1/4 cup hazelnut-flavored liqueur (recommended: Frangelico)
Ice cubes
Whipped cream, for serving

Steps:

  • Stir together the espresso, simple syrup, melted chocolate, caramel syrup and hazelnut liqueur in a heat-proof pitcher. Cover and refrigerate until chilled.
  • Fill tall glasses with ice and fill 3/4 of the glass with coffee mixture and top off with whipped cream.

1/2 cup (125 ml) softened butter
1 1/2 cup (375 ml) granulated sugar
3 eggs
1 1/2 tsp (7 ml) pure vanilla extract (club house)
1 1/4 cup (300 ml) all-purpose flour
2/3 cup (150 ml) cocoa powder sifted
1 tsp (5 ml) baking powder
1/2 tsp (2 ml) salt
3/4 cup (175 ml) milk
1/2 cup (125 ml) chocolate chips
1/2 cup (125 ml) chopped hazelnuts

Steps:

  • Preheat oven to 350°F (180°C).
  • In large bowl with whisk or electric beaters, beat butter with sugar until fluffy; beat in eggs and vanilla.
  • In separate bowl, whisk together flour, cocoa powder, baking powder and salt; stir into egg mixture. Stir in milk just until combined. Stir in chocolate chips and nuts. Spread evenly in greased or parchment lined 9x5-inch (23x13 cm/2 L) loaf pan.
  • Bake for 65 to 75 minutes, or until cake tester inserted in centre comes out clean. Let cool in pan on rack.
  • Test Kitchen Tips:• To make glaze, whisk 1 cup (250 mL) icing sugar with 3 tbsp (45 mL) chocolate hazelnut spread and 3 tbsp (45 mL) milk until smooth. Drizzle over loaf.

1 tablespoon hazelnut-flavored liqueur, such as Frangelico (or more to taste and depending on the size of your cup or mug) (optional)

Steps:

  • Start with a cup or mug of your favorite hot coffee.
  • Add 2 teaspoons or more of Nutella; stir until the Nutella melts.
  • Top with as much whipped cream as desired.
  • Decorate with chocolate shavings or sprinkles.
