CHOCOLATE COOKIE BITES
These buttery, chocolaty cookie dough bites are made with Gold Medal® flour. Chopped pecans add some crunchiness to this pop-able, melt-in-your-mouth dessert treat.

Steps:
- Heat oven to 400°F. Spray cookie sheets with cooking spray.
- In large bowl, beat 1 cup of the powdered sugar and the butter with electric mixer on medium speed until creamy. Add milk and vanilla, beating until blended. In medium bowl, mix flour, cocoa and salt; gradually add flour mixture to butter mixture, beating until blended. Stir in pecans.
- Shape dough into 1-inch balls; place 1 1/2 inches apart on cookie sheets.
- Bake 11 to 13 minutes or until tops of cookies just begin to crack. Cool on cookie sheets 3 minutes. Remove to cooling racks; sprinkle with remaining 1/4 cup powdered sugar. Cool 10 minutes.

Steps:
- Combine all-purpose flour, soy protein powder, and oat flour together in a bowl.
- Beat white sugar, brown sugar, yogurt, and butter together in a large bowl with an electric mixer until smooth and creamy. Add vanilla extract. Stir in flour mixture. Mix in milk, 1 tablespoon at a time, until batter is thick and smooth. Fold in chocolate chips.
- Roll batter into 1-inch balls with your hands. Arrange on a baking sheet. Transfer to the freezer and chill until firm, about 1 hour, or in the refrigerator, 2 to 3 hours.

CHOCOLATE-COVERED COOKIE DOUGH BITES

- To prepare: Mix first seven ingredients and roll into balls. Place on lined cookie sheet and chill 30 minutes.
- Melt a bowl of chocolate and in another bowl melt the white chocolate. Dip cookie dough balls into white chocolate. Let harden on cookie sheet. Then dip into regular chocolate and sprinkle with toffee bits, if desired. I usually take any leftover chocolate and drizzle it over balls.

- Line 24 miniature muffin cups with paper baking cups, or spray with cooking spray. Make cookie dough by blending cookie mix, cherries, oil, cherry juice, almond extract and egg until soft dough forms. Spoon dough into each muffin cup filling each about 3/4 full.
- Bake at 350°F 12 to 14 minutes or until dough is set. Cool 20 minutes. Remove from pan. Place cookies on cooling racks.
- Heat 3/4 cup of frosting on High for 30 seconds; stir. Dip tops of cookies into frosting. Allow to set about 1 minute; top each bite with cherry.

- Cut a piece of parchment paper to fit an air fryer basket.
- Beat butter in a large bowl with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, white sugar, baking soda, and salt; beat on medium speed for 2 minutes, scraping bowl occasionally. Beat in egg and vanilla extract until combined. Add flour, beating in as much as you can. Stir in any remaining flour, chocolate chips, and pecans.
- Drop dough by teaspoonfuls 1 inch apart onto the parchment paper. Carefully transfer the parchment paper to the air fryer basket.
- Turn the air fryer to 300 degrees F (150 degrees C) and cook until golden brown and set, about 8 minutes. Remove parchment paper to a wire rack to cool. Repeat with remaining cookie dough.

- Place pecans in a single layer in a shallow pan. Bake at 350 for 6-8 minutes or until lightly toasted, stirring once halfway through baking.

- Preheat oven to 325 degrees (or 300 degrees convection bake). Spray a nonstick 48-count mini muffin pan (or two 24-count pans) with cooking spray and set aside.
- In a large bowl, whisk the melted butter, salt and baking soda together. Add the brown sugar and granulated sugar and mix well. Whisk in the egg and vanilla until combined.
- Add the flour, folding it into the wet ingredients with a rubber spatula or wooden spoon. When just a few streaks of flour remain, add the chocolate chips and mix until combined. Be careful not to overmix the dough.
- Divide the dough evenly between the 48-mini muffin tins. I like to use a #60 mini cookie scoop for this.
