OLD FASHIONED CHOCOLATE COVERED CHERRIES
Old Fashioned Chocolate Covered Cherries are a favorite of ours around Christmas. They make the sweetest gift for friends and family.

- Drain cherries and set on paper towel to dry
- In a medium bowl, combine butter and corn syrup until smooth. Stir in powdered sugar and knead to form a dough. Chill to stiffen if necessary.
- Wrap each cherry in about 1 tsp of dough. Chill until firm.
- In a microwave-safe bowl melt chocolate chips with oil for about 20 seconds at a time (stirring each time) until chocolate is just melted and completely smooth.
- Dip each cherry in by its stem and place on wax paper-lined sheets. Place in an air-tight container (like a large tupperware) and store in a cool place for TWO WEEKS (yes, it is a long time-- but patience... I promise they taste best if you wait until the fondant softens)!

CHOCOLATE-COVERED CHERRIES WITH MELTING FONDANT FILLING
Maraschino cherries covered in fondant then dipped in chocolate. Over the course of a few days, the fondant then melts within the chocolate coating.

- Open and drain cherries. Spread on paper towel and let dry.
- In bowl of mixer combine first three fondant ingredients. Mix on medium speed until light and fluffy for about five minutes. Sift powdered sugar to get rid of lumps - this is a vital step. Add to mixture in mixer bowl and continue to beat until well incorporated. Pull out of mixing bowl and on powder sugar-dusted counter top, knead fondant for five minutes. Cut fondant in half and wrap each piece in plastic wrap, then place in refrigerator for at least 30 minutes to chill.
- With powder sugar covered hands, pinch off small amounts of fondant and cover a dried maraschino cherry with the fondant. Continue until all cherries are covered in fondant.
- Put chocolate candy coating in a microwave safe bowl. Place in microwave oven, microwave on high for 30 seconds, stir well. Microwave in 10-second intervals, stirring after each until chocolate is melted. Take cherries and dip one at a time using a fork. Make sure that the entire cherry and fondant is completely covered! If you leave holes, the fondant will leak out. Place on wax paper or parchment paper-covered cookie sheet. If desired, use sprinkles before chocolate hardens. Cool and let candy harden. Serve in individual candy cups, if desired.
- Store in a covered container with wax paper between the layers. You can store them individually in #4-sized cupcake/candy holders.
- PLEASE NOTE: Chocolate covered cherries need to set up for at least five days for the fondant to dissolve!

- Drain cherries well; let stand on paper toweling.
- Make fondant: Combine butter or margarine, corn syrup and salt; stir in powdered sugar.
- Knead until smooth.
- Chill if too soft.
- Shape a teaspoon of the fondant around each cherry.
- Place on waxed paper-lined baking sheet; chill.
- In small heavy saucepan or deep bowl over pan of hot water, melt chocolate coating, stirring constantly.
- Holding onto stems, dip fondant-covered cherries, one at a time, into melted chocolate.
- Spoon mixture over cherries to coat.
- Place on waxed paper-lined baking sheet.
- Place in refrigerator to harden.
- Store in covered container in cool place.
- Let ripen a week or two and fondant will begin to liquefy.
- Makes 60 chocolate-covered cherries.

CHOCOLATE COVERED CHERRIES
This is a recipe given to me by a friend of my moms. She makes them for Valentines Day. I highly recommend using cherries with stems, the covering process is a little slower but you will be rewarded with a built in "handle" when it comes to dipping. Using paraffin in the chocolate will result in a smooth surface on your candy. These have to be done about 2 weeks before serving so the fondant can soften into a liquid.

- Combine all ingredients in a stand up mixer and mix until smooth. You will need to knock it down every so often. If you don't have a mixer, use your hands. This is a very stiff dough.
- Let stand 1 hour. Pinch of small amounts, flatten slightly and press around each cherry, sealing well. Place on waxed paper to dry. Let stand about 30 minutes, turn cherries over and dry another 30 minutes.
- Combine chocolate and paraffin in double boiler until melted and smooth. Dip balls into chocolate mixture. Place on waxed paper to harden.
- Keep cherries in a cool, dry place for 2 weeks before serving. Do not store in the refrigerator as this will discolor the chocolate coating.

EASY CHOCOLATE COVERED CHERRIES
I've been making this recipe for many years. I'm not sure where it originally came from. The recipe is somewhat time consuming, but well worth it. I usually make two batches because one just isn't enough. This candy is easy to make and it also makes a great gift.

- Drain juice from cherries, set cherries aside until ready to use. To make fondant: Using a electric mixer at medium speed beat together butter, corn syrup and vanilla in a mixing bowl until smooth. Gradually add salt and 3 cups of the sugar, mixing well. When mixture becomes too stiff to beat, stir with spoon. Add 1/2 - 1 cup of sugar to make a mixture that can be kneaded. Form mixture into 10" roll. Wrap in plastic wrap and refrigerate roll until firm.
- Cut roll into 1" slices. Cut each slice into quarters. Flatten each piece in palm of hand; place cherry in center. Fold up fondant around cherry until it is completely covered. Place on waxed paper-lined baking sheet. Chill until firm.
- Melt milk chocolate in the top of double boiler over hot water. Cool slightly. Holding each fondant-covered cherry by the stem, quickly dip it in the melted chocolate until the fondant is covered. Place on waxed paper-lined baking sheets. Refrigerate until chocolate sets. Store in air-tight container in the refrigerate. Make 40-50 cherries, depending on the size of the cherries.
MY FAMOUS CHOCOLATE COVERED CHERRIES
These are so good. I have to make 2 dozen for my grandmother every Christmas and she refuses to share them. She actually hides them and pulls them out one at a time! I really have no idea how many this makes as I usually double or triple the recipe. Also it depends on how much of the center you like . UPDATE: some people have had difficulty with the filling being to runny....adding more powdered sugar is not going to alter the taste so feel free to add another 1/2 c to a cup with out worry :)

Steps:
- Combine the first 5 ingredients until well blended and smooth and place in fridge until firm.
- Meanwhile spread out the drained cherries on a cookie sheet and freeze for at least 1 hours.
- Scoop out about 1-2 teaspoon of filling and form into a ball around a cherry.
- Place on a wax paper lined cookie sheet and freeze for 1 hr after you have formed them all.
- Melt dipping chocolate and using your hands dip each cherry placing it on a wax paper lined cookie sheet and chill in fridge until chocolate is solid.
- Remove cherries carefully as not to break them open and loose the center.
- Place in an airtight plastic container and keep in a cool dry place for up to 1 month.
