GRAHAM CRACKER TOFFEE BARS

Steps:
- Heat oven to 350°F.
- Arrange graham squares in single layer in 15x10x1-inch pan sprayed with cooking spray.
- Bring butter and sugar to boil in medium saucepan on medium heat; cook 1 to 2 min. or until butter is completely melted and mixture is well blended, stirring frequently. Pour over grahams; immediately spread to completely cover grahams.
- Bake 6 to 8 min. or until topping is lightly browned and bubbly. Top with chopped chocolate; bake 1 to 2 min. or until melted. Immediately spread chocolate over grahams. Sprinkle with nuts; press lightly into chocolate with back of spoon. Cool completely before breaking into squares.

CHOCOLATE-COVERED TOFFEE
Chocolate-covered toffee is one of my favorite candies and it's easy to make. All you need is a candy thermometer and some time. The result is a buttery caramel, with a slightly toasty flavor. I added a bit of coffee to the toffee, giving them a slight bitter edge, which is a perfect complement to the sweet candy. To finish them off dip some of them in milk chocolate or drizzle in dark chocolate and sprinkled with toasted almonds and sea salt.

Steps:
- Prepare a baking sheet with a silicone baking mat or greased parchment or wax paper.
- In a large sized heavy-bottomed sauce pan, with a candy thermometer attached, bring all the ingredients, excluding the chocolate, to a boil over medium low heat.
- Continue to cook and stir the mixture until it reads 275 degrees F on the candy thermometer.
- The mixture will be much thicker. Stir constantly until it reaches 315 degrees F, which will happen pretty quickly. Remove it from the heat and stir until very smooth, just a few seconds.
- Pour the toffee onto the prepared baking sheet.
- Using a spatula, spread the toffee out, working quickly because the toffee will set fast.
- Using a pastry wheel or pizza cutter, VERY GENTLY (you don't want to cut so deep that it actually reaches the bottom or you may destroy your silpat) score the toffee into bite sized pieces.
- You should get about 72 pieces. Again work quickly so the toffee doesn't set before you are done.
- Allow the toffee to sit until it is room temperature and then break apart the pieces.
- Melt the chocolate over a double boiler until perfectly smooth. Remove from the heat and allow to cool to just above room temperature. If the chocolate is too hot it will run off the toffee and not give you a nice coating, if it is too cold it will be too thick to work with.
- Set up a second baking sheet with a sheet of parchment or wax paper.
- Drop a piece of the toffee into the chocolate. Use a fork to flip the toffee over to coat the other side.
- Lift the covered toffee from the chocolate and shake gently to allow the excess to fall away.
- In order to get a nice smooth bottom, you want to scrape the bottom of the fork on the edge of the bowl, before laying it on the parchment to harden.
- If you want to sprinkle with toasted nuts and sea salt, this is the time.
- Continue dipping until they are all covered in chocolate. Allow them to sit out in a cool spot to set up or you can set them in the refrigerator for a few minutes until they are firm.
- Fill decorative bags as gifts for Valentine's Day.
TOFFEE CRUNCH GRAHAMS
Only four ingredients make up these toffee bars loaded with crunchy almonds. "My sister gave me the recipe years ago, and it's still a family favorite," shares Carol Horne, Perth Ontario.

- Line a 15x10x1-in. baking pan with heavy-duty foil. Place graham crackers in pan. In a saucepan, bring butter and brown sugar to a boil, stirring constantly. Carefully pour over graham crackers. Sprinkle with almonds. , Bake at 400° for 6-8 minutes or until bubbly. Cool in pan for 4 minutes. Cut each cracker into four sections; transfer to wire racks to cool completely.

This toffee has been a Christmas favorite in our family for over 30 years now. My interest in cooking also reaches back far-to the preparation of those big threshing-day and family dinners when I was growing up in Iowa.

- In a heavy saucepan, combine sugar, salt, water and butter. Cook until mixture reaches 285° (soft-crack stage). Add 1/2 cup nuts. Pour onto a well-greased jelly roll pan or baking sheet; cool. Melt half of the chocolate chips in a double boiler or microwave. Spread over cooled toffee and sprinkle with 1/4 cup nuts. Cool. Turn over onto another sheet of waxed paper; repeat with remaining chocolate chips and nuts. When cool, break into pieces.

CHOCOLATE CARAMEL GRAHAM CRACKERS
Steps:
- Preheat oven to 375°F. Line a 15- by 10- by 1-inch baking pan with foil, leaving a 2-inch overhang at each end.
- Line bottom of pan with graham crackers (it will be a tight fit).
- Melt butter in a 1 1/2- to 2-quart heavy saucepan over moderately low heat, then add brown sugar and salt and cook, whisking, until mixture is smooth and combined well, about 1 minute. Pour over crackers, spreading evenly, and bake in middle of oven until golden brown and bubbling, about 10 minutes.
- Scatter chocolate chips evenly over crackers and bake in oven until chocolate is soft, about 1 minute. Remove pan from oven and gently spread chocolate evenly over crackers with offset spatula. Sprinkle nuts evenly over chocolate and cool crackers in pan on a rack 30 minutes. Freeze until chocolate is firm, 10 to 15 minutes.
- Carefully lift crackers from pan by grasping both ends of foil, then peel foil from crackers. Break crackers into serving pieces.

- Preheat oven to 350*.
- Arrange graham crackers in a single layer in a 15 x 10 baking sheet.
- Combine butter and sugar in saucepan and bring to a boil over medium heat, stirring constantly until butter melts; then boil 2 minutes.
- Remove from heat and stir in pecans.
- Pour mixture evenly over crackers and spread carefully to edge of pan, covering crackers completely.
- Bake for 10 minutes.
- Remove from oven and sprinkle evenly with chocolate chips; when chips melt, smooth evenly to cover top.
- Cool in pan for 5 minutes; carefully separate and transfer squares to a wax paper lined cookie sheet.

CHOCOLATE TOFFEE GRAHAM BARS
These defy description - are they a bar cookie? Or are they candy? Either way they are delicious, very very easy to make. I always make these at holiday time and I also make a big three batch amount to donate to my church's "cookie walk" at our holiday fair. Of course everyone LOVES them. I got this recipe years ago - one of my first years of teaching from a regular substitute teacher who brought them in to share.

Steps:
- In an 11 by 17 inch jelly roll pan, lightly greased, place whole graham crackers side by side.
- I also cut strips to fill in all the open spaces so the whole pan is covered.
- Bring the butter and brown sugar to boil.
- When bubbly add the chopped walnuts or pecans and bring to boil again.
- Pour over graham crackers.
- Bake 350 degrees for 8 minutes.
- Remove from oven and sprinkle with the chocolate chips.
- They wont fully cover the crackers.
- Turn off the oven but put pan back in for a minute or two to help the chips melt.
- Then take the pan out of the oven and spread the chips over the bars with a spatula.
- Sprinkle the colored nonpareils on top of these after spreading the melted chocolate to add a festive look.
- Let the bars cool for 1 hour or so and then cut them into little squares with a sharp knife.
- They might break up a bit when you do this but then it is fun to eat the scraps!
- Keep these in a closed container in the fridge.
