Chocolate French Toast image

A very basic French toast recipe with cocoa in the egg mixture. I regularly serve it at our B&B and get rave reviews. It's great served with cherry pie filling and syrup. We prefer using homemade bread.

1 cup milk
4 eggs
⅔ cup white sugar
⅓ cup unsweetened cocoa powder
⅛ teaspoon baking powder
¼ teaspoon salt
8 slices bread

Steps:

  • Beat together milk, eggs, sugar, cocoa powder, baking powder, and salt.
  • Heat a lightly buttered skillet or griddle over medium heat.
  • Dip each slice of bread into egg mixture until well soaked, about 20 seconds per side. Place in pan, and cook on both sides until they are no longer gooey or shiny in the middle when cut in half, about 3 to 4 minutes per side.

1 teaspoon sugar
1 teaspoon vanilla extract

Confectioners' sugar

Steps:

  • In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour half into an ungreased 13x9-in. baking dish. Arrange 6 slices of bread in a single layer over egg mixture. Place 1 piece of chocolate in the center of each piece of bread. Top with remaining bread; pour remaining egg mixture over all. 1/2 teaspoon vanilla extract
1/4 cup part-skim ricotta cheese
8 slices of whole-wheat sandwich bread, crusts removed
1 (8-ounce) container strawberries, hulled and sliced
4 teaspoons bittersweet chocolate chips
Cooking spray
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
  • Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".
  • Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.

1 cup milk or 1 cup half-and-half cream
2 tablespoons sugar (or more or less to taste)
1 teaspoon vanilla

2 tablespoons butter
icing sugar (to garnish)

Steps:

  • Prepare a 13x9" baking pan.
  • In a bowl, beat eggs, milk, sugar, vanilla and salt.

I got this recipe from Healthy Appetite with Ellie Krieger and adapted it to use ingredients that I normally have on hand. I used frozen strawberries(thawed and sliced), as it wasn't strawberry season and mini semi-sweet chocolate chips and it was wonderful!!! Could make it even lighter by using low or no-fat cream cheese, light bread and egg substitute.

12 slices Canadian bacon
6 slices Monterey Jack cheese
12 slices French bread (1/2 inch thick)
3/4 cup eggnog
3 tablespoons butter
6 tablespoons strawberry preserves

Steps:

  • Place two slices of Canadian bacon and one slice of cheese on each of six slices of bread. Top with remaining bread. Place eggnog in a shallow dish. 2 cups whole milk
1/4 cup sugar
Pinch of kosher salt
2 teaspoons orange zest
1 teaspoon vanilla extract
1 loaf brioche bread, sliced about 3/4-inch thick
3/4 cup chocolate-hazelnut spread
3 ripe bananas, sliced on diagonal
2 tablespoons unsalted butter, plus more as needed

Steps:

  • Whisk the eggs, milk, sugar, salt, orange zest and vanilla in a large bowl. Set aside.
  • Spread half of the bread slices with the chocolate-hazelnut spread and top with the banana slices and remaining bread slices.
  • Pour the egg mixture into a 9-by-13-inch baking dish. Place the sandwiches into the baking dish on top of the egg mixture. Let soak 2 minutes. Flip the sandwiches and soak an additional 2 minutes.
  • Meanwhile, melt 2 tablespoons butter in a large skillet.

1 tablespoon fresh lemon juice

3 large eggs
1 cup whole milk
1/2 teaspoon vanilla
1/2 tablespoon granulated sugar
1/4 teaspoon salt

8 (1/2-inch-thick) slices from a brioche or challah loaf (not round)
4 oz fine-quality bittersweet (not unsweetened) or semisweet chocolate, finely chopped

Steps:

  • Make sauce:
  • Purée raspberries, lemon juice, and 1/2 cup confectioners sugar in a food processor. Sweeten with confectioners sugar to taste (up to 1/4 cup more). Force through a fine-mesh sieve into a bowl, discarding seeds.
  • Make French toast:
  • Whisk together eggs, milk, vanilla, sugar, and salt in a large shallow dish until mixture is combined well and sugar and salt are dissolved.
  • Melt 1 1/2 tablespoons butter in a 12-inch heavy nonstick skillet or griddle over moderately high heat. Dip 2 bread slices briefly in egg mixture until lightly soaked, turning once if necessary. 75g milk chocolate , chopped
4 slices crusty white bread from a round loaf
3 medium eggs
1 tbsp double cream
1 tbsp maple syrup
1 tsp vanilla extract
25g unsalted butter

icing sugar or extra maple syrup, to serve (optional)

Steps:

  • Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine.
  • Lay 2 slices of bread on the work surface. Divide the chocolate and banana mixture between them, spreading it almost to the edges. Top each with a second slice of bread and press together to make a sandwich.
  • In a shallow dish, whisk together the eggs, double cream, maple syrup and vanilla extract. Melt the butter in a large frying pan over a medium heat. Lay one sandwich into the egg mixture to coat one side, then carefully flip it over so that both sides of the sandwich are soaked in the egg.
