4 large egg whites
3 cups sliced fresh strawberries
1 teaspoon plus 1 cup sugar, divided
1-1/2 cups heavy whipping cream
1/3 cup confectioners' sugar
3/4 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup semisweet chocolate chips

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Meanwhile, in a small bowl, combine strawberries and 1 teaspoon sugar. In another bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until soft peaks form. Refrigerate strawberries and whipped cream, covered, until assembly., Preheat oven to 250°. Line a baking sheet with parchment. Trace two 8-in. circles 1 in. apart on paper; set aside. Add cream of tartar and salt to egg whites; beat on medium speed until foamy. Gradually add remaining sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Spread evenly over circles., Bake until set and dry, 70-80 minutes. Turn off oven (do not open oven door); leave meringues in oven 1-1/2 hours. Remove from oven; cool completely. , In a microwave, melt chocolate chips; stir until smooth. Spread evenly over tops of meringues. Carefully remove one meringue to a serving plate. Remove whipped cream from refrigerator; beat until stiff peaks form. Spread half of the whipped cream over the meringue; top with half of the strawberries. Repeat layers. Serve immediately.

1/4 teaspoon cream of tartar
3/4 cup sugar
1 ounce unsweetened baking chocolate, coarsely grated
2 cups sliced strawberries
1 quart strawberry fat-free frozen yogurt

Steps:

  • Heat oven to 275°F. Line cookie sheet with heavy brown paper or aluminum foil.
  • Beat egg whites and cream of tartar in medium bowl with electric mixer on high speed until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Fold in chocolate.
  • Drop meringue by 1/3 cupfuls onto cookie sheet. Shape into about 3-inch circles, building up sides. Bake 1 hour. Turn off oven and leave meringues in oven with door closed 1 1/2 hours. Finish cooling at room temperature.
  • Place strawberries in blender or food processor. Cover and blend on medium speed until smooth. Fill each meringue with about 1/2 cup frozen yogurt. Top with strawberries.

3/4 cup plus 2 tablespoons granulated sugar, divided
1 teaspoon balsamic vinegar
3 egg whites, at room temperature
1/4 teaspoon cream of tartar
5 teaspoons cocoa powder, sifted
3/4 cup heavy cream
2 tablespoons confectioner's sugar
2 ounces dark chocolate (60%¿70% cacao), shaved

Steps:

  • Heat oven to 325°. In a bowl, combine strawberries, 2 tablespoons granulated sugar and vinegar. Using an electric mixer, beat egg whites until peaks form. Add cream of tartar and a pinch of salt; beat to combine. Slowly add remaining 3/4 cup granulated sugar, beating until stiff peaks form. Sprinkle cocoa over egg mixture; whip until just combined. Spread into 6 mounds, 3 inches each, on a parchment paper-lined baking sheet. Make an indentation in the middle of each meringue so sides are 1/2-inch thick. Place in oven, reduce temperature to 300° and bake until meringues are dry on outside and soft in center, 50 minutes. Cool on sheets. Using an electric mixer, whip cream and confectioner's sugar. Top meringues evenly with berry mixture, whipped cream and chocolate.

Steps:

  • Preheat the oven to 100°C (210°F).
  • In a bowl, separate the egg whites and whisk until soft peaks form.
  • Gradually add the sugar in stages, as you whisk.
  • Whisk in the vanilla extract and white wine vinegar.
  • Keep whisking until stiff peaks form, or until you can tip the bowl upside down and the meringue holds its shape.

100g dark chocolate , roughly chopped
400g strawberries
30g white and milk chocolate , roughy chopped (optional)

Steps:

  • Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
  • Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
  • If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

1/4 teaspoon cream of tartar
1 teaspoon vanilla
1 cup sugar
1/2 cup finely chopped toasted almond
1 (3 ounce) package cream cheese, softened
1/2 cup packed brown sugar
1/2 cup cocoa
2 tablespoons milk
1/2 teaspoon vanilla
1 cup whipping cream, whipped
3 cups whole fresh strawberries
2 ounces semisweet chocolate, chopped
2 teaspoons shortening

Steps:

  • Place egg whites in mixing bowl; let stand at room temp for 30 minutes.
  • Add cream of tartar and vanilla; beat on medium speed until soft peaks form.
  • Gradually beat in sugar, 1 Tablespoon at a time, until stiff peaks form.
  • Fold in almonds.
  • Line a baking sheet with parchment paper.
  • Trace a 9-inch circle on the paper.
  • Spoon meringue evenly over circle, forming a 1-1/4 inch rim.

  • When completely cool, remove meringue from parchment paper.

5 egg whites, at room temperature
1 pinch salt
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
6 -7 ounces superfine sugar
1/4 teaspoon ground cinnamon
4 ounces semisweet chocolate, grated
4 ounces strawberries, to serve
whipped cream, to serve
chocolate piece, to serve

Steps:

  • Whisk the egg whites until they are foamy. Add salt and cream of tartar and beat until very stiff. Whisk in vanilla, then sugar, a small amount at a time, until the meringue is shiny and stiff. This should take just about 3 minutes by hand and under a minute by electric mixer.
  • Whisk in the cinnamon and grated chocolate. Spoon mounds, about 2 tablespoons, on to an ungreased nonstick baking sheet. Leave plenty of space between the mounds.
  • Place in a preheated oven at 300°. Bake for 3 hours or until set.
  • Carefully remove from the baking sheet but if the meringues are too moist and soft, return to the oven to firm up and dry out some more. Allow to cool completely.
  • Serve the meringues dusted with cinnamon and accompanied by strawberries and chocolate-flavored cream.
  • To make the flavored cream simply stir half-melted chocolate pieces into stiffly whipped cream, chill until solid.
