OATMEAL CHOCOLATE COCONUT CHEWY
A chewy oatmeal cookie with chocolate chips, shredded coconut, and chopped nuts. Great with or without nuts and coconut.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the milk and vanilla. Combine the flour, baking soda and salt; stir into the sugar mixture until well blended. Stir in the oats, chocolate chips. walnuts and coconut until evenly distributed. Drop by rounded tablespoons onto ungreased cookie sheet.
- Bake 10 to 12 minutes in the preheated oven for a chewy cookie or 14 minutes for a firmer cookie.
- Cool for 1 minute on the cookie sheet and then remove to wire rack. Cool completely and then store in tightly sealed container.

- Cream margarine and sugar until light.
- Combine flour, rolled oats, soda and salt. Add to creamed mixture and mix well.
- Remove 1 1/2 cups crumbs. Press remainder into bottom of greased 9x13 inch pan.
- Sprinkle with marshmallows and chocolate chips. Top with reserved crumbs.
- Bake at 350F for 20 to 25 minutes (do not overbake). Cool and cut into squares. Freezes very well.

I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

- In a saucepan, melt butter over medium heat. Stir in corn syrup and cocoa; bring to a boil. Remove from the heat; stir in vanilla, 2 cups confectioners' sugar and milk powder. (Mixture will be stiff.), Turn out onto a surface lightly dusted with confectioners' sugar. Knead in remaining confectioners' sugar; knead 3-4 minutes longer or until stiff. Divide into four pieces and roll each into an 18-in. rope. Cut into 3/4-in. pieces. Wrap each candy in cellophane or waxed paper. Store in refrigerator.

- Cream the butter and brown sugar by hand until well-combined (the mixture will not be creamy or fluffy). Beat in the egg followed by the vanilla.
- Sift the cocoa, flour, cinnamon, baking soda and salt over the bowl and stir in. Stir in the oats until they are well-coated with batter and then stir in the coconut, chocolate chips and dried cranberries.
- Drop the cookie batter by spoonfuls, or using a small ice cream scoop, onto the baking trays, five centimeters between them. Bake the cookies for about 12 minutes, until they lose their shine at the edges. Cool the cookies on the trays, on cooling racks, before removing to store in an airtight container.
