CHOCOLATE PB BANANA BAKED OATS
An easy single serving breakfast, this Chocolate PB Banana Baked Oats is a tasty way to start off the day. A match made in heaven, chocolate with peanut butter and banana is combo that'll you're not going to want to miss out on.

Steps:
- Preheat oven to 350 F. Place rack in the middle of your oven.
- In a blender, blend all the ingredients together, except for the chocolate chunks, until nice and smooth.
- Spray the ramekins (8 oz.) with baking spray. Pour in the batter and top with chocolate chunks. You can also push some of the chunks of chocolate in the batter if you want them incorporated inside the dough as well.
- Bake in the preheated oven for about 25 minutes. Depending on your oven it, may take a little less or a little more. So just check for doneness at around 20 minutes. The dough should not be jiggly in any way, but you also do not want to over cook.
- Remove from the oven and let is cool for a couple of minutes. Drizzle some melted chocolate and creamy peanut butter on top or your favorite topping.

- In medium bowl, mix oats, chocolate chips, brown sugar, baking powder and cinnamon until well combined. Break up cookie dough into small pieces (save other half of roll for another use). Add to oat mixture, and toss to combine. In second bowl, beat milk and eggs with whisk until well combined.
- Place banana slices in single layer in bottom of baking dish. Top with oat mixture. Pour milk mixture on top of oat mixture in baking dish. Use rubber spatula to spread evenly.
- Bake 40 to 45 minutes or until cooked through and bubbly around edges. Cool 5 minutes. Spoon into dishes to serve. Top with Greek yogurt and maple syrup.

- Line the baking pan with the banana slices, and sprinkle most of the chocolate chips over the banana slices. Reserve about 1 tablespoon of the chocolate chips to sprinkle over the top of the oats when it comes out of the oven.

- Pre-heat oven to 350 degrees and grease an 8″ x 8″ oven-safe dish. If desired, prepare a parchment sling by cutting out a piece of parchment paper slightly larger than the pan (for easy removal of bake).
