MELTING SNOWMAN BARK
Puddles of creamy white chocolate harden into delightful holiday treats without turning on the oven. Decorate them with different candies.

- Line a baking sheet with parchment paper. Put the white chocolate in a medium microwave-safe bowl and melt in the microwave at 50 percent power for 30 second intervals, stirring after each, until it is completely smooth.
- Melt the semisweet chocolate in a small bowl in the microwave at 50 percent power in 15 second intervals, stirring after each until it is completely smooth. Transfer to a piping bag with a small plain tip (#2 or #3). (Alternatively, transfer to a resealable plastic bag and snip off a corner.)
- Spoon 12 ovals of white chocolate onto the parchment for the melted snowman bodies, leaving several tablespoons of white chocolate behind in the bowl. Top each oval with a truffle for a head. (If the truffle has a flatter side, attach it facing up for the hat decoration option, so the hat will adhere. If you are making the earmuff option, place the more rounded side up.)
- For the hat decoration: Cut each licorice gumdrop in half crosswise. Lay the flat disc-shaped piece on a flat surface and use the heel of your hand to flatten it into a larger disc shape. Attach the other half of the licorice back onto each using the sticky sides to adhere to each other. Dip the bottom of the licorice candies in the reserved white chocolate and attach to the tops of the truffles for hats.
- For the earmuff decoration: Spread white chocolate on the rope licorice and attach to the truffles for earmuff headbands. Dot white chocolate onto the mini candy-coated chocolates and attach to the sides of the truffles to make the earmuffs.
- For the body and face decoration: Stick the pretzel pieces into the white chocolate for arms and arrange some of the mini candy-coated chocolates down the center for buttons. With scissors, cut the gummy belts in half lengthwise, trim the ends to make scarves and set aside.
- Spread a little white chocolate on the orange candies and attach for noses, holding in place until the chocolate hardens. Pipe the semisweet chocolate on for the eyes and mouth. Refrigerate until set, about 30 minutes.
- Wrap the gummy scarves around the snowmen and pinch to attach at the front. Serve immediately or keep refrigerated until ready to serve. Dust the melted snowmen with confectioners' sugar if desired.
CHOCOLATE SNOWMEN SPOONS

- Cover baking sheet with waxed paper. Dip 12 plastic teaspoons, 1 at a time, in white chocolate; shake gently to remove excess chocolate. Place on prepared baking sheet. Refrigerate 10 min. or until chocolate is firm.
- Melt semi-sweet chocolate. Partially dip each spoon in chocolate; return to baking sheet. Refrigerate 10 min.

- Dip a pretzel rod two-thirds of the way into melted white chocolate, or drizzle chocolate over pretzel with a spoon. Attach miniature chocolate chips for eyes and buttons; attach a sprinkle for a nose., Using decorating gel, add a mouth. , For hat, attach a chocolate kiss to the top of pretzel. - Melt the chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bowl doesn't touch the water, or in 20-second bursts in the microwave. Line two baking trays with baking parchment and spoon over puddles of the melted chocolate, about 6cm in diameter. Stick a marshmallow 'head' into the middle of each, then two pretzel 'arms' alongside the head. Decorate with two colourful chocolate 'buttons', then leave to set for at least 2-3 hrs or overnight.
- Draw black eyes and mouths, and an orange carrot nose onto the marshmallow heads using the icing pens. Leave to set for 30 mins. You can then wrap the snowman buttons in bags to give as gifts. Will keep in an airtight bag or container in a cool, dry place for up to five days.

- Empty 1 bag white candy melts into a microwave-safe bowl. Microwave at 50% power for 1 minute. Stir and continue to microwave in 15- to 30-second intervals until candy is almost completely melted. Let sit for about 1 minute and stir until smooth. Set the second bag of white candy melts aside.
- Dunk a cookie in the white melted candy. Use a fork to turn it over to ensure it's completely coated on all sides. Transfer to a parchment-lined baking sheet. Place 2 sprinkles in the middle for eyes. Place 1 half of a Tic Tac® under the eyes for a nose. Place 4 more sprinkles in a semi circle on the bottom for the mouth. Repeat for remaining cookies, melting the second bag of white candy melt as needed.
- Place the baking sheet in a cool, dry area for about 25 minutes so candy coating can harden. Do not place in the freezer or the snowmen will sweat.
- Melt the red candy melts as in step 2.
- Cut any excess chocolate off around each cookie. Dip the top part of each cookie in the red melted candy to make a hat and add an M&M® for a design. Place on a new parchment-lined baking sheet and allow to harden, about 25 minutes. Cut off any excess chocolate before serving.

- Mix the flour, cocoa and a pinch of salt in a bowl. Beat the butter with the sugars in another bowl for about 3 mins until pale and creamy. Stir in the egg and vanilla. Gradually mix the dry ingredients into the wet, and bring together with your hands. Wrap the dough and leave to chill in the fridge for 1 hr.
- Heat the oven to 170C/150C fan/ gas 3. Roll out the dough on a lightly floured work surface to a thickness of about 4mm, and press out circles in three sizes. Place them, sorted by size, on baking sheets lined with baking parchment. Bake the smallest cookies for 6-8 mins and the remainder for about 10-12 mins. Remove from the oven and transfer to a wire rack to cool completely.
- Tip the icing sugar into a small bowl and gradually add the milk, stirring until smooth and thick. Coat the tops of the biscuits with it using a small knife, then stack three of each biscuit, starting with the largest. Cut the cranberries into small pieces and stick to the snowmen as eyes, mouths and buttons. Cut the strips of mango into the shape of mini carrots, and place them on the faces as noses. Leave to dry. - In a small bowl, combine milk and extract. Stir in 2 cups confectioners' sugar and cocoa to form a dough. Turn onto a surface lightly sprinkled with confectioners' sugar. Knead in enough remaining confectioners' sugar to form a soft dough (dough should not be sticky)., Divide into thirds. Shape one portion into twenty-four 1/2-in. balls. Shape remaining portions of dough into twenty-four 1-in. balls. Using melted coating, attach a 1/2-in. ball near an edge of each circle. Let dry 1 hour., Using gumdrops, cut out noses and earmuffs as desired. Melt remaining white candy coating; cool slightly. Working in batches of six, spoon candy coating over snowmen, allowing coating to drape over each until completely covered. Immediately attach noses and earmuffs. Let stand at room temperature until dry to the touch, about 1 hour., In a microwave, melt chocolate chips; stir until smooth. Using a toothpick and melted chocolate, form eyes, mouths, buttons, arms and tops of earmuffs.
