1/2 pound good bittersweet chocolate (recommended: Lindt)
1/2 pound good semisweet chocolate (recommended: Ghiradelli)
1 cup heavy cream
2 tablespoons orange flavored liqueur, optional (recommended: Grand Marnier)
1 tablespoon prepared coffee
1/2 teaspoon good vanilla extract
Confectioners' sugar
Cocoa powder

Steps:

  • Chop the chocolates finely with a sharp knife. Place them in a heat-proof mixing bowl.
  • Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve into the bowl with chocolate. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the orange flavored liqueur, if using, coffee, and vanilla. Set aside at room temperature for 1 hour.
  • With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Roll each ball of chocolate in your hands to roughly make it round. Roll in confectioners' sugar, cocoa powder, or both. These will keep refrigerated for weeks, but serve them at room temperature.

6 ounces semisweet baking chocolate or white chocolate baking bars, chopped
2 tablespoons butter
1/4 cup heavy whipping cream
1 cup semisweet chocolate chips or white vanilla baking chips
1 tablespoon shortening
Finely chopped nuts or candy decorations, if desired

Steps:

  • Line cookie sheet with foil. In 2-quart saucepan, melt baking chocolate over low heat, stirring constantly; stir in butter until melted and smooth. Remove from heat; stir in whipping cream. Pour mixture into small bowl. Refrigerate 10 to 15 minutes, stirring frequently, just until thick enough to hold a shape.
  • Drop mixture by rounded measuring teaspoonfuls onto lined cookie sheet. Return to refrigerator 5 to 10 minutes or until firm enough to shape. Shape into balls. Freeze uncovered 30 minutes.
  • In 1-quart saucepan, heat chocolate chips and shortening over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Using 2 forks, dip and roll chocolate balls, one at a time, into melted chocolate; tap off excess chocolate. Place on lined cookie sheet. Immediately sprinkle with nuts. If chocolate has cooled too much, reheat. Repeat with remaining chocolate balls.
  • Refrigerate truffles about 10 minutes or until chocolate is set. Store in covered container in refrigerator. Remove from refrigerator about 10 minutes before serving.

1/4 C heave cream
7 oz. good chocolate, chopped (can use milk, dark, or white)
2 tbsp liqueur (and flavor but I recommend Frangelico or Baileys)
1/2 tsp vanilla extract

Steps:

  • Heat cream over med-low heat on a double boiler. (or a bowl set over a pot with 1 inch of water in the bottom)Be careful not to use too much heat. Add chocolate, stirring constantly. Heat until chocolate is melted and mixture is creamy and blended. Remove from heat and stir in extract and liqueur. Cover and chill until firm but pliable. Scoop out mixture by the TBSP and roll into balls between your hands. Place on a cookie sheet covered in waxed paper. Chill balls until serving. If desired, the balls can be decorated with drizzled melted chocolate, sugar sprinkles, cocoa powder, etc...

With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the Grand Marnier, if using, coffee, and vanilla. Pour into 8x8 pyrex dish and refrigerate for 1 hour.
With 100 scoop, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Refrigerate for 40 minutes, until firm. Roll each dollop of chocolate in your hands to roughly make a round ball. Roll some in confectioners' sugar, some in heath toffee with milk choc bits, and try chopped almonds some time. These will keep refrigerated for weeks, but serve at room temperature.

  • I did half the recipe and used 4 oz ghirardelli 60% baking bar and 4 ounces dove milk chocolate (16 piece, bit over 4 ounces). I didn't do the coffee, though would probably be good. above are my altered directions. mix of ms recipe and this. bershads slightly preferred ms recipe since has salt and no vanilla but agree this prob has more of a broad based appeal. I love both. Declan and M prefer this one.

6 ounces semisweet or bittersweet chocolate in small pieces
1/2 cup heavy cream
1 1/2 tablespoons Grand Marnier or other liqueur (optional)
1/2 pound semisweet or bittersweet chocolate for coating (optional)
1/2 cup unsweetened cocoa

Steps:

  • Combine the chocolate and the cream in a heavy saucepan and place over low heat, stirring occasionally, until the chocolate has melted.
  • Remove from the heat and transfer to a bowl. Stir in the liqueur, if desired. Refrigerate until the mixture is firm, 2 hours or longer.
  • Spread a sheet of waxed paper on a baking sheet. With a spoon or spoons, scoop mounds of the mixture about 1/2 inch to 1 inch in diameter, then use your fingertips to form balls quickly. If the mixture becomes too soft, chill briefly before making more truffles. Place them on the paper. Refrigerate overnight.
  • If using a chocolate coating, break the half-pound of chocolate in pieces and melt them in the top of a double boiler or in a microwave oven. Remove the melted chocolate from the heat or the oven and allow to cool to tepid, 90 to 100 degrees, stirring it from time to time.
  • Spread the cocoa powder onto a chilled platter.
  • Remove the truffles from the refrigerator and, if using the chocolate coating, drop them one at a time into the melted chocolate and quickly lift them out with a fork or a professional dipping loop, allowing excess chocolate to drip off. Roll the coated truffles in the cocoa, return them to the baking sheet lined with waxed paper and refrigerate again until firm. If not using the chocolate coating, roll the balls in cocoa and refrigerate again until firm.

1 pound bittersweet chocolate
1 cup heavy cream
Best-quality cocoa powder, for rolling

Steps:

  • Chop chocolate finely using a serrated knife, and place in a large heatproof bowl.
  • In a medium saucepan, bring cream to a boil over medium-high heat; pour directly over chopped chocolate. Allow to sit 10 minutes; use a rubber spatula to gently stir chocolate and cream until combined. Allow to sit at room temperature until just thickened, about 15 minutes.
  • Pour ganache mixture into a shallow glass dish. Cover with plastic wrap, and refrigerate until mixture is very cold and set but still pliable, about 30 minutes.
  • Using a small spoon, scoop out ganache into 1-inch nuggets; place on a parchment-lined baking sheet. Chill for 10 minutes. Use fingertips to mold truffles into round shapes. Roll in cocoa powder to coat; chill in an airtight container until ready to serve.
