Ingredients

½ cup raw almonds
½ cup walnuts
½ cup pitted dates
½ cup dried cranberries
⅛ cup shredded coconut
3 teaspoons unsweetened cocoa powder
1 teaspoon vanilla extract

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
Pulse almonds and walnuts together in the bowl of a food processor until chopped. Add dates and cranberries, a little at a time, and continue to chop. Add coconut, cocoa, and vanilla extract. Process to desired consistency.
Roll dough into a 2-inch wide log and cut into ten 3/4-inch thick pucks. Place on the prepared baking sheet.
Bake in the preheated oven until set, about 10 minutes.

From Kraft. These turned out so moist and delicious! Used 1 1/4 cup of brown sugar and will lower it next time to 1 cup to lower a bit the calories! Also used about 1/2 cup of mini chocolate chips instead of the baking squares. You've got to try this! :)

1 cup dried cranberries
1/4 cup orange juice
1 1/2 cups flour
1 1/2 cups quick-cooking oats
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup margarine, softened
1 1/2 cups firmly packed brown sugar
2 eggs
4 semi-sweet chocolate baking squares, coarsely chopped
1/2 cup pecan pieces

Steps:

Preheat oven to 350ºF.
Combine cranberries and orange juice in microwaveable bowl. Microwave on HIGH 30 sec. Let stand 10 minute.
Meanwhile, combine flour, oats, baking powder and salt; set aside.
Beat margarine and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture, mixing well after each addition. Stir in cranberry mixture, chocolate and pecans.
Spread dough into 13x9-inch baking pan sprayed with cooking spray.
Bake 25 to 30 minute or until lightly browned. Cool completely on wire rack before cutting into bars.

1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup white vanilla baking chips (6 oz)
1 cup chopped walnuts
3/4 cup sweetened dried cranberries

Steps:

Heat oven to 350°F. Line 13x9-inch pan with foil, leaving 2 inches of foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
In large bowl, beat butter and brown sugar with electric mixer on medium speed until well blended. Beat in eggs and vanilla. On low speed, beat in flour, baking powder and salt until blended. Stir in baking chips, walnuts and cranberries. Spread in pan.
Bake 30 to 35 minutes or until golden brown and set. Cool completely in pan on cooling rack. Use foil to lift from pan. Cut into 6 rows by 4 rows.
