- In a large bowl, stir together the crushed vanilla wafers, 3/4 cup confectioners' sugar, cocoa, and nuts. Blend in corn syrup and rum.
- Shape into 1 inch balls, and roll in additional confectioners' sugar. Store in an airtight container for several days to develop the flavor. Roll again in confectioners' sugar before serving.

CHOCOLATE RUM BALLS (NO COOK)
A coworker brought these to a potluck and they were inhaled. I misplaced the recipe for a while and found it again today. Before I lose it again I'm going to post it. I haven't made them myself yet so the number of balls this makes is an estimate. Unlike many rum ball recipes, this recipe contains no corn syrup. **Chill time not included in time to prepare**

Steps:
- Combine butter, icing sugar and chocolate chips in a microwavable bowl.
- Microwave on low to melt - do not cook.
- Stir in beaten eggs and salt until thick and smooth.
- Add rum and crumbs then mix well.
- Refrigerate until mixture is stiff enough to form balls (about 3 hours).
- Roll balls in chocolate shots, ground nuts or coconut.
- Chill.

CHOCOLATE RUM BALLS

- In a medium bowl, combine the 2 types of chocolate and melt over a double boiler. (Or in a metal bowl over a pot of simmering water.) Whisk in the butter pieces. Whisk in the sugar and the rum.
- Put the sprinkles in a bowl. Roll the chocolate mixture into small balls, about 1 1/2 inches each. Roll them in the sprinkles until they are fully coated. Store them in an airtight container.
NO-BAKE CHOCOLATE BOURBON BALLS
Chocolate chips, chocolate cookies and a bit of booze make these balls great for the grown-ups.

- Bring about 1 inch of water to a simmer in a medium saucepan. Put the chocolate in a medium heatproof bowl. Set the bowl over the saucepan, making sure that the bottom of the bowl does not touch the water. Let the chocolate sit until melted and smooth, stirring occasionally. Remove from the heat.
- Meanwhile, put the cookies in a food processor and process until finely ground (you should have about 1 1/2 cups crumbs). Pour the cookie crumbs into the chocolate. Add the figs, confectioners' sugar, bourbon, condensed milk and vanilla and stir until well blended.
- Cover and refrigerate the mixture until firm enough to roll into balls, about 45 minutes. Spread the granulated sugar in a shallow bowl. Scoop about 1 tablespoon of the mixture and shape into a smooth ball and then roll in the granulated sugar. Serve at room temperature.
- Store the balls in an airtight container in the refrigerator for a week or in the freezer for up to 1 month.

- Heat a pan over medium heat and add oats. Toss and shake until fragrant and lightly toasted, 5 to 7 minutes.

- Preheat the oven to 350°F.
- Spread the pecans on a baking sheet and roast in the oven for about 10 minutes, or until they begin to brown.
- Set aside to cool.
- Combine coconut, Splenda® and cocoa in a large mixing bowl.
- When the pecans have cooled a little, coarsely chop them in a food processor.
- Add the pecans to the coconut mixture.
- Melt the butter.
- Mix the rum with the melted butter and stir into the combined ingredients.
- Place egg white powder in a small bowl and add the warm water.
- Beat with a whisk for 2 minutes, until frothy and dissolved.
- Mix the egg whites into the combined ingredients.
- Form the mixture into little balls.
- Leave the candies on a baking sheet for about an hour to dry.

MAGIC CHOCOLATE BALL RECIPE BY TASTY

- Melt the milk chocolate in the microwave in 20-second intervals, stirring until smooth.
- Open the fillable ornament and coat the inside with a lightly oiled paper towel. Pour the melted chocolate into one of the halves. Close the ornament, rotating the ball so that the chocolate evenly coats the entire surface. Continue slowly rotating for 5 minutes. You may have to shake it a bit to get the chocolate to fill any holes. Place the ball in the freezer, then flip it after 2 minutes. Continue to flip it every few minutes, 2-3 more times. The chocolate should be set by then. Freeze for 30 minutes.
- Remove the ball from the freezer. Carefully open the ornament and remove the ball. Work quickly and avoid touching the ball for too long with your warm hands. If you want to be extra careful, immediately after unmolding, place the ball back in the freezer for a few minutes.
- Dip or run a flat-bottomed bowl in boiling water, then dry the entire bowl. Invert the bowl onto a flat surface, then place one side of the frozen chocolate ball on the hot bowl.
- Twist back and forth with a gentle motion, making sure that you're not applying too much pressure to the ball, as it is very fragile. Use a paper towel to help insulate the ball from your warm fingers. You may have to reheat and wipe off the bowl a few times as it will cool down a bit. Place the ball back in the freezer.
- On a large plate, stack the brownies on top of each other, then surround them with berries. Place a scoop of ice cream on top of the brownies, then slowly place the chocolate ball on top. To cover up any holes or imperfections along the seam where the ball touches the plate, surround the base of the ball with more berries.
- Microwave the dark chocolate with the heavy cream in 20-second intervals until smooth and glossy.
- Pour the chocolate sauce over the ball in a circular motion.
- Enjoy!

- Note about erythritol:
- I realize that the erythritol is a special ingredient.
- Some stores are starting to carry powdered sugar alcohols, or you can order online from Netrition or other places.
- I haven't figured out how to make really delicious chocolate treats without it at this point.
- Erythritol is the sugar alcohol with the least blood sugar impact, but you can use others.
- If the erythritol you use isn't powdered, it won't dissolve much in this recipe, so I recommend running it through a blender first, but I'm happy that the most recent erythritol I got came powdered, which is great.
- Mix all dry ingredients together in bowl.
- Add vanilla and liquor.
- If the artifical sweetener is liquid and concentrated, add it to the liquor.
- Since there are different liquid sweeteners of different concentrations, you may have to play with the total amount of liquid, and cut down on the liquor, or add water.
- Usually the total liquid you want is about 2.5-3 T.
- Add the liquid slowly and mix until it all comes together.
- Roll into balls.
- The flavors will mellow over the next few days.
- Store in refrigerator or cool place.
- Carbs depend on serving size.
- 17 balls will get you exactly 1 gram of effective carbohydrate per ball, plus a tad over a gram of alcohol and 1.5 grams of fiber.
