I got this recipe from a friend and it is awesome! When I want comfort food, this is the one that I turn to. My husband loves it too! We love the stuffing so much I usually double the recipe for the bread crumb mixture, leave everything else the same. For the bread cubes, French bread works best, not sourdough.

2 tablespoons vegetable oil
4 raw chop with refuse, 113 g; (blank) 4 ounces thick cut pork chops
3 cups day-old bread cubes
¼ cup butter, melted
¼ cup chicken broth
2 tablespoons chopped celery
2 tablespoons chopped onion
¼ teaspoon poultry seasoning
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet, heat the oil and brown the pork chops. Place the pork chops in a baking dish.
  • In a bowl, toss the bread cubes, melted butter, chicken broth, celery, onion, and poultry seasoning together. Put heaping mounds of the bread crumb mixture onto the pork chops.
  • Combine the cream of mushroom soup with the water, and pour this mixture over the stuffing and pork chops.
  • Cover and bake for 30 minutes.
  • Uncover and continue baking for 10 minutes longer or until juices run clear. The meat thermometer should read 145 degrees F (63 degrees C).

4 bone-in, double-cut loin chops (3 to 4 pounds total)
5 cups water
1/4 cup kosher salt
1 tablespoon fresh cracked black pepper
3 tablespoons Dijon mustard
1 tablespoon dried sage
1 tablespoon granulated garlic
2 tablespoons olive oil
1 tablespoon butter
1/2 cup diced pancetta
6 cups cremini mushrooms, very thinly sliced
Salt and fresh cracked black pepper
1/4 cup minced shallots
1 teaspoon minced fresh sage leaves
1/2 cup shredded fontina cheese
1 teaspoon Italian seasoning
1 teaspoon fresh cracked black pepper
3/4 cup panko breadcrumbs
1/2 cup flour
2 eggs
2 tablespoons olive oil
1/4 cup bacon fat
1/4 cup minced shallots
1 cup chicken stock
2 tablespoons whole grain Dijon mustard
2 tablespoons plain yogurt
2 teaspoons lemon juice
1/2 teaspoon kosher salt
1 tablespoon chopped Italian flat-leaf parsley, for garnish

Steps:

  • For the brine: Rinse and pat the chops dry, slit a pocket into each chop about 3 to 4 inches long and as deep as the bone. Combine the remaining ingredients in a re-sealable bag, place in the refrigerator and brine for 1 to 2 hours.
  • For the stuffing: In a saute pan over medium-high heat, add the oil and butter, and when the butter melts and foams, add the pancetta and cook until crispy. Remove to a paper towel-lined plate, leaving the fat in the pan. Add the mushrooms, sprinkle with salt and pepper and cook over medium-high heat, stirring frequently for 6 minutes. Add the shallots, sage and 1/2 of the pancetta and cook for 3 minutes more. Remove to a plate to cool, spreading out evenly. Once cool, add the fontina cheese. Reserve the extra pancetta for service.
  • Remove the chops from the brine and pat dry. Stuff with the cooled filling and secure the opening with toothpicks. Reserve any remaining filling for the sauce.
  • Preheat the oven to 350 degrees F.
  • For the breading: In a shallow pan or bowl, add the Italian seasoning, pepper, panko and flour. Mix well. Add the eggs to a second shallow bowl and beat.
  • Dredge the chops through the egg, then lay in the breading and press to adhere. Repeat with all the chops.
  • In a large saute pan, add the oil and bacon fat and, when shimmering, add the pork chops, cooking until golden brown, about 5 minutes each side. Hold gently with tongs and cook the edges as well. Place on a baking pan fitted with a wire rack and place into the oven. Cook until the meat registers 135 degrees F on a thermometer, 10 to 15 minutes. Remove and lightly tent with foil.
  • For the sauce: In the same pan that the chops were cooked in, add the shallots and any remaining mushroom filling and cook over medium-high heat for 4 to 5 minutes. Deglaze the pan with the stock and scrape any bits from the bottom. Whisk in the mustard and yogurt until well combined, and then add the lemon juice and salt.
  • Remove the chops from the baking pan, remove the toothpicks and place on a serving platter. Top with the sauce. Garnish with the parsley and the remaining pancetta and serve immediately.

These are quite delicious. You need to have chops at least 1 inch in thickness. You can also a use a frenched rack of pork. I have made it with two thin chops toothpicked together but the presentation is not as nice. My family really liked these, and they are quite presentable for company. Also they are fairly simple to make.

4 thick pork rib chops, 1 inch thick (you can use boneless loin chops)
2 tablespoons butter
1 tablespoon olive oil
1 1/2 cups fresh French bread, cubed into fairly small pieces
1 cup fresh mushrooms, chopped
1 shallots, finely minced or 2 tablespoons onions
1 teaspoon fresh rosemary, minced
1 teaspoon fresh sage, minced
1 garlic clove, finely minced
2 tablespoons chicken stock
1/2 cup crumbled gorgonzola (you can use Roquefort or any blue cheese that you like)
salt & pepper
1/2 cup white wine
1/2 cup low sodium chicken broth (or homemade stock)
1/2 cup heavy cream
2 -3 tablespoons crumbled gorgonzola (you can use Roquefort or any blue cheese that you like)

Steps:

  • Preheat oven to 350°F.
  • Melt 1 Tbsp butter in cast iron or oven proof heavy skillet.
  • Add bread and sauté till golden and crisped (about 10 min) remove and place in medium sized bowl.
  • Melt 1 tbsp butter in skillet.
  • Add mushrooms, shallot, herbs and garlic. and sauté until soft (about 5 minutes).
  • Add 2 tbsp chicken stock. mix in well.
  • Allow mixture to cool.
  • Mix in cheese when cooled. Adjust seasoning with salt & pepper.
  • Cut each chop horizontally in half to bone or almost in half if using boneless chops.
  • Divide stuffing mixture evenly in four and insert into pocket closing with tooth picks if necessary.
  • Season chops with salt & pepper.
  • Add olive oil to skillet and brown chops for 2 minutes on each side.
  • Cover with lid or foil and bake until cooked, about 25 minutes.
  • Sauce:.
  • Remove chops to platter and let rest covered with foil.
  • Add wine to skillet and deglaze. Cook till reduced to a tbsp or two.
  • Add chicken stock and cook a minute or two.
  • Add cream and heat through.
  • Add crumbled cheese and heat gently till melted.
  • Check for salt & pepper seasoning.
  • Pour over mashed potatoes and serve with chops.
  • YUMMY.

1 cup plus 2 teaspoons kosher salt
1 cup dark brown sugar
1 tablespoon whole black peppercorns
1 tablespoon ground mustard
2 cups apple cider vinegar
1 pound ice cubes
4 double-thick, bone-in loin pork chops (1- to 1 1/2-inches thick; about 12 ounces each)
1 1/2 cups cornbread crumbs
1/4 cup walnuts
1/4 cup dried cherries
2 tablespoons golden raisins
1 1/2 teaspoons freshly ground black pepper
2 teaspoons fresh sage
1/4 cup low-fat buttermilk
Vegetable oil

Steps:

  • Place 1 cup of the salt, the brown sugar, peppercorns, mustard and vinegar in a 6-quart container and stir until the salt and sugar dissolve. Let the mixture sit for 5 to 10 minutes. Add the ice cubes and stir to melt most of the ice. Add the chops and make sure they are submerged in the brine. Cover and refrigerate 25 minutes.
  • Preheat the oven to 500 degrees F with the oven rack in the center of the oven.
  • Remove the chops from the brine, rinse and pat dry. Holding a knife parallel to the cutting board, cut a deep 2-inch-wide pocket into the side of each pork chop.
  • Combine the cornbread, walnuts, dried cherries, raisins, pepper, sage, 2 teaspoons salt and the buttermilk in a mixing bowl. Place about 1/4 cup of the stuffing into the pocket of each chop. Brush both sides of each chop with the oil.
  • Heat a cast-iron skillet until smoking hot, about 600 degrees F. Add the chops to the pan and cook until well seared, about 5 minutes per side.
  • Transfer the pan to the oven and cook about 12 minutes more or until the internal temperature of the chops reaches 140 degrees F for medium. Be sure to temp the chops in the thickest part of the meat close to the bone, not in the stuffing. Let the chops rest 5 minutes before serving.

2 leeks, white part only, rinsed and chopped
1 McIntosh or Granny Smith apple, cored and diced
2 teaspoons dried oregano
1/2 teaspoon dried rosemary
Salt and pepper
1 1/2 cups unseasoned bread cubes (or cut up day-old bread)
1/2 cup reduced-sodium chicken broth or enough to moisten bread
4 (5-ounce) boneless pork chops, about 1-inch thick, trimmed of fat

Steps:

  • Preheat oven to 400 degrees F.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add leek and apple and saute 4 minutes, until tender and golden. Add oregano, rosemary, and salt and pepper, to taste, and stir to coat. Transfer mixture to a large bowl and add bread cubes and chicken broth. Mix well and set aside.
  • Using a sharp knife, slice pockets into chops by slicing horizontally into the side, and almost through to the other side. Season the outside with salt and pepper. Stuff chops with apple mixture, allowing stuffing to overflow out of pockets.
  • Heat remaining oil in a large skillet over medium-high heat. Add pork chops and sear on 1 side until browned, 3 to 4 minutes. Flip chops and transfer to oven to finish cooking for 8 to 10 minutes, or until cooked through.

4 double-cut pork chops
1/4 cup bread crumbs
1/2 pound fresh Italian sausage, diced
1 slice prosciutto, minced
1 slice fresh mozzarella, diced
2 cloves garlic, minced
Pinch salt and pepper
String, for tying
2 tablespoons olive oil
1 cup finely chopped yellow onion
1/4 cup butter
1 cup dry white wine
1 1/2 cups chicken broth

Steps:

  • Preheat oven to 350 degrees F.
  • With a pairing knife, cut a pocket in the rounded side of each chop. In a bowl, combine the bread crumbs, sausage, prosciutto, mozzarella, garlic, and salt and pepper. Stuff each chop with the mixture and sew or tie them closed with string.
  • Heat the oil in a skillet over medium-high heat. When the oil is hot, pat the chops dry then place them in the pan. Brown on both sides, about 3 minutes per side. Remove the pork chops and set them aside in a roasting pan.
  • Add the onions, butter, white wine, and chicken broth to the skillet. Cook over medium heat, stirring, for 6 to 8 minutes. Add them to the pan with the pork chops. And bake for 1 hour. Remove the string before serving, and drizzle the pork chops with pan juices once plated.

GRILLED AND STUFFED VEAL CHOP

8 thick veal chops, well trimmed
8 thick slices Italian fontina cheese
8 thin slices, prosciutto ham
Garlic pepper
Seasoning salt (recommended: Lawry's)
Store-bought steak sauce (recommended: Peter Luger's)

Steps:

  • Preheat the grill to high.
  • Cut a pocket in the veal chops and stuff with 1 thick slice of Fontina cheese and one thin slice of Prosciutto. Seal with a toothpick. Season the chops with the garlic pepper and salt. Place on the hot grill and sear, about 3 to 4 minutes. Rotate once in between to achieve grill marks. Then flip the chops and do the same on the other side.
  • Remove from direct heat and put chops on the shelf of the barbecue. Baste with steak sauce and close lid. After about 5 minutes flip and baste the other side. Close lid for 4 or 5 minutes, or until the chops are fully cooked, when the internal temperature is 140 degrees F. Let rest for 3 to 5 minutes in a warm spot. Then serve immediately.

2 tablespoons apple cider vinegar
1 teaspoon cornstarch
1 pinch ground cloves

6 pork chops, 1 1/2-inch-thick

Steps:

  • Preheat an outdoor grill or grill pan to high. In a casserole dish, whisk together the orange juice concentrate, vinegar, cornstarch, cloves and 1 1/2 cups water.
  • In a medium bowl, combine the bread, raisins, garlic powder and 1/4 cup of the juice mixture; season with salt and pepper.
  • Cut a 2-inch-wide pocket through the center of each chop, cutting from the fatty side toward the bone. Spoon 3 tablespoons of stuffing into each pocket. Marinate the chops in the juice mixture for 30 minutes.
  • Lower the grill temperature to medium. Grill the chops, covered, basting once, until golden, about 4 minutes. Turn, and baste again. Cover and grill the chops until an instant-read thermometer inserted into the center registers 150 degrees, about 4 minutes.

2 tablespoons vegetable oil
1 1/4 cups water
2 tablespoons butter
1 (6 ounce) Stove Top stuffing mix (chicken flavor)

Steps:

  • Lightly brown pork chops in oil. Remove from heat.
  • Bring water to a boil and stir in stuffing mix and butter. Set aside for 5 minutes and then fluff with a fork.

4 pork chops (1 in. thick)
1 tablespoon olive oil or 1 tablespoon canola oil
3 cups stale bread, cut in 1/2 inch cubes

1/4 cup finely diced onion
1 teaspoon poultry seasoning

I love finding new and easy recipes that are also inexpensive and quick. This pork chop recipe is all that and more! This serves two people but is very easy to double. From my local paper.

3/4 lb boneless pork chop
2 tablespoons flour
2 tablespoons pesto sauce (I use store bought but if you make your own, more power to ya!)
olive oil flavored cooking spray
salt and pepper

Steps:

  • Put flour, salt and pepper on a plate and combine.
  • Dredge both sides of pork chops in flour, and shake off any excess.
  • Spray a skillet with the cooking spray and preheat on medium-high.
  • Add the chops and brown on each side for two minutes.
  • After they are browned, spread the pesto sauce over the chops and put lid on the skillet.
  • Continue cooking for an additional two minutes or until they reach 160 degrees.
  • The chops will be juicy and not dried out.
