SPANISH APPLE SALAD



Spanish Apple Salad image

Crunchy tart apples team up with Spanish Manchego cheese and Marcona almonds for a salad that has a surprise in every bite.

Provided by Dawn Dobie

Number Of Ingredients 8

1-2 Granny Smith apples (peeled, cored, and chopped into 1/2-inch cubes (to equal about 2 cups))
5 ounces Manchego cheese (cut into 1/2-inch cubes (to equal about 1 cup))
1 tablespoon chopped fresh chives
2 tablespoons chopped Marcona almonds ((I used Trader Joe's Roasted Marcona almonds with Rosemary))
2 tablespoons Spanish olive oil
1 1/2 teaspoons apple cider vinegar
salt and freshly ground pepper
endive leaves (--optional)

Steps:

  • Combine cubed apples and cheese, chives, and almonds in a medium bowl and stir to combine.
  • Drizzle olive oil and vinegar over apple mixture and toss to thoroughly coat it.
  • Season to taste with salt and freshly ground black pepper, if desired.

With tart apples, nutty manchego, and a cider vinaigrette, this autumn arugula salad hits all the right taste buttons.

5 ounces arugula or baby arugula
1 crisp apple, such as Fuji or Honeycrisp
3½ ounces Manchego, thinly sliced
½ cup sliced almonds, lightly toasted if desired
2 tablespoons cider vinegar
6 tablespoons vegetable oil
2 teaspoons maple syrup
1 teaspoon Dijon mustard
1 tablespoon finely chopped shallots, from 1 shallot
Heaping ¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • Make the vinaigrette by whisking all of the ingredients together in a small bowl. Set aside.
  • Place the arugula in a serving bowl. Whisk the vinaigrette again until well combined, then add to the salad, little by little, until the greens are well dressed; you may have a little left over. Right before serving, cut the apple into thin slices and toss into the salad along with the Manchego and almonds. Taste and adjust seasoning, then serve immediately.

My new favourite recipe from Jenn Segal of Once Upon a Chef. Salad is tossed in an Cider Vinaigrette and can be perfectly paired with many fall dishes.

5 ounces baby arugula (washed and ready to eat package)
1 honeycrisp apple
3 ounces manchego cheese
1/2 cup sliced almonds
6 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
2 teaspoons maple syrup
1 teaspoon dijon mustard
1 tablespoon finely chopped shallots
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Toast the almonds in a large frying pan over medium heat - watch and stir frequently.
  • Using a vegetable peeler thinly slice the manchego cheese.
  • Whisk together all vinaigrette ingredients in a small bowl or measuring cup.
  • Thinly slice the apple.
  • In a large bowl dress arugula little by little - do not over dress - you may have a little left over. Stir in apples and top with cheese and almonds.

Thanksgiving Side Dish--Apple, Manchego, and Chive Salad image

Number Of Ingredients 6

2 large apples, (Granny Smith or Honey Crisp)
4 ounces Manchego cheese
1/4 cup chives, minced
2 Tbls. fresh lemon juice
1-2 Tbls. olive oil
Fresh ground black pepper and Kosher salt, to taste

Steps:

  • Slice apples in matchsticks by cutting the apple into 4 quarters and then thinly slice each quarter. Stack slices and then cut long thin slices to form matchsticks. Cut the long matchsticks in half. Toss the matchsticks in lemon juice.
  • Cut the cheese into matchsticks and add to the bowl of apples. Add the chopped chives and stir so the cheese and chives are mixed throughout.
  • Drizzle with the olive oil, and season with salt and fresh ground pepper. Toss and serve.

1/4 cup Extra Virgin Olive Oil
2 1/2 Tablespoons Lemon Juice
1 Tablespoon minced Shallot
1 teaspoon Dijon Mustard
1 teaspoon Honey
1/2 teaspoon Kosher Salt
1/8 teaspoon Black Pepper
1 Tablespoon Cooking Oil
1/2 cup Whole Almonds, chopped
1 large bunch Kale, stem removed and leaves very thinly sliced ((any type of large-leaf kale will work - I like curly-leaf or Tuscan))
1 Green Apple, julienned
2/3 cup grated Manchego Cheese ((sub parmesan or gruyere))

Steps:

  • Heat cooking oil in a skillet over medium-high heat. Add chopped almonds and cook, stirring occasionally, until golden brown, 4 to 5 minutes.
  • Combine all ingredients for the dressing in a jar with a lid and shake well until combined (or whisk together in a bowl).
  • Place kale in a large mixing bowl and add about 1/4 of the dressing. Use your hands to gently massage the dressing into the kale leaves. (This helps to season and tenderize the kale.)
  • Add all remaining salad ingredients to the kale. Add dressing slowly, while tossing, until salad is dressed to your liking.
  • Serve immediately.
