THE BEST CARAMEL APPLES
When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

- Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
- Line a baking sheet with parchment paper.
- Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
- Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

CARAMEL APPLES
Steps:
- Wash and completely dry the apples. Insert a stick into the stem end of each.
- Line a 9-by-9-inch or 7-by-11-inch baking pan with foil. Place the chopped nuts into the lined pan.
- Fit a heavy-bottomed saucepan with a candy thermometer. Over high heat, cook 3/4 cup of the cream, the corn syrup, butter, and sugar to 280 degrees F (firm ball); at this point the syrup will be golden. Remove from the heat and carefully swirl in the remaining 1/4 cup of cream and the vanilla. Use caution; this is very hot and it may splatter.
- While the caramel is hot, dip and turn the apples into the caramel to coat and let the excess drip off. Dip the bottoms into the chopped nuts. Arrange the apples on a nonstick or waxed paper-lined cookie sheet and let cool.

- Preheat oven to 350ºF (180ºC).
- Core apples and cut into ¼-inch (6 mm) slices, then cut those slices in half width-wise.
- In a large bowl, combine apples and all filling ingredients. Stir well and transfer to a 13x9 inch (23x33 cm) baking dish.

- Line a baking sheet with waxed paper; grease the paper. Wash and thoroughly dry apples. Insert a wooden pop stick into each; place on prepared pan. Refrigerate 15 minutes., In a large heavy saucepan, combine sugar, corn syrup and water; bring to a boil over medium heat, without stirring, until mixture turns amber. Remove from heat; stir in butter until melted. Gradually add cream, stirring constantly. Return to heat; cook and stir until a candy thermometer reads 245°-250° (firm-ball stage). Remove from heat., Place 1/4 cup pistachios in a shallow dish. Dip apples into caramel mixture until completely coated; allow excess to drip off. Then dip the bottom of each apple in pistachios. - Whisk sugar and 2 cups water in medium bowl until sugar is dissolved. Add apple slices. Refrigerate 10 min.
- Drain apples; dry completely. (Note: In order for the caramel sauce to stick to the apples, the apple slices need to be well chilled before drying and dipping into the caramel sauce.)
- Insert wooden pop stick into one end of each apple slice. Microwave caramels and remaining water in microwaveable bowl on HIGH 1-1/2 min. or until caramels are completely melted and mixture is well blended when stirred, stirring every 30 sec.

An easy recipe for making homemade caramel apples, this can be doubled or tripled easily to make more. Once dipped, the apples can be rolled in chopped nuts, candy, or drizzled with chocolate for a little extra flair. Be sure to start with room temperature apples as cold apples will cause the caramel mixture to harden too quickly making it difficult to work with.

- Line a baking sheet with a silicone baking mat or a piece of lightly greased parchment paper. Place the apples onto the prepared baking sheet, and press a treat stick firmly into the stem end, into the center of each apple.
- In a medium pot, combine the sugar, corn syrup and 1/3 cup water. Stir the mixture with a silicone spatula or wooden spoon over medium heat until the mixture begins to bubble at the edges. Once it begins to bubble, stop stirring.
- Cook the mixture (without stirring) until it begins to turn a medium amber color, 10 to 12 minutes. When the desired caramel color is reached, stir in the salt, cream, vanilla and butter - the mixture will bubble up vigorously - stir until it's combined and smooth.
- Continue to cook the caramel over medium heat, stirring constantly, until the mixture reads 245 degrees on an instant-read thermometer, another 8 to 10 minutes. Leave the syrup mixture in the pot, and allow to cool to 200 degrees. (If the mixture cools too much, it can be reheated until fluid.)
- Working quickly, dip 3/4 of an apple into the caramel, tilting the pot as needed to coat. Hold the apple over the caramel, letting the excess drip off, then transfer to the baking sheet. Repeat with remaining apples, reheating the caramel as necessary. Cool completely before serving.

- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.

This recipe comes from the Manga book Kinou Nani Tabeta? or What Did You Eat Yesterday? by Fumi Yoshinaga. One of the main characters, Shiro, is a hardheaded (though hiding a soft heart within) lawyer by day, who comes home and cooks their meals every night. Use eating apples, not tart cooking apples, for this dish, since not much sugar in proportion to the apples is used. Gala, Fuji and Gravenstein work well. If you plan to use unpeeled apples, select a rosy-skinned one for the best color.

- Wash the apples (peel them if you prefer), cut into half and core them, then cut into wedges or slices. Do this as you cook the caramel, if you're brave. Otherwise deal with the apples in advance so that you can pay full attention to the caramel.
- Put the sugar in a large, heavy-bottomed pan over high heat. Heat the pan until the sugar starts to melt. Stir if you see clumps. The sugar will start to caramelize quickly at some point. If it looks like it's going to turn black, take the pan off the heat for a while to cool it down. Continue melting the sugar until a thick caramel is formed.
- Tip all the sliced apples into the pan at once - be careful, the pot might spit at you when the moisture of the apples hits the caramel, and spitting caramel is very painful. Stir to combine the apple and caramel as well as you can - the caramel will stick to the bottom of the pan and your stirring spatula quite a lot, but don't worry about it. If your spatula gets too caramel-clogged, scrape it off gently with the back of a knife and plop the caramel lump back into the pot. It will melt as the apple cooks down and exudes more moisture.
- Lower the heat to low, just high enough so that the pan is barely simmering. Put a lid on, and let it cook, stirring occasionally, for about 30 to 40 minutes, until the apple slices are permeated with caramel color, as in the photo above. At this point add the optional butter and stir it in, though it's fine to leave it out if you wish.
- Let cool thoroughly before packing into jars or plastic containers. Since this doesn't have the large amount of sugar that jams or preserves do, it needs to be stored in the refrigerator, where it will keep for a couple of weeks, or the freezer, where it should keep for a month or more.
- Eat hot or cold. It's really nice on pancakes, with or without butter, as well as on oatmeal, yogurt, ice cream, or on its own. In the manga they lightly toast some bread, pile the apple on top with a pat of butter, and toast it again in a toaster oven.

- For the Caramel Sauce (make a few hours ahead or night before): Making caramel is a bit like a game of chicken. You want to cook the mixture until it gets dark amber, but if you chicken out and pull it off the heat too early, your sauce will be light and lack flavour. Let it cook too long, and it will taste bitter and burnt. Just be sure to watch carefully and have your cream measured and at hand to quickly add to the sauce when the colour is right.
- To make, combine the sugar, 1/2 cup water and corn syrup in heavy-bottomed, medium sized saucepan. Stir over medium heat until sugar dissolves (mixture becomes clear). Increase the heat and boil, without stirring, until mixture turns a deep amber color, occasionally swirling the pan, about 10 minutes. Remove from heat. Add the butter to the water and heat in the microwave or a saucepan until hot. Pour the hot water/butter into the dry ingredients. With strong strokes, beat the batter 100 times by hand, or for 2 minutes with a stand mixer kneading hook. Add a bit more flour, if necessary, to make a dough that can be lifted from the bowl and placed on the work surface.

- Wash and thoroughly dry the apples then press a lollipop stick firmly into the top of each apple. Line a baking sheet with wax paper.
- Unwrap the caramels then place them in a medium saucepan set over medium-low heat. Add the heavy cream and cook the caramels, stirring occasionally, until they melt and the mixture is a smooth consistency. Reduce the heat to low.
- Dip each of the apples into the caramel mixture, shaking off any excess and scraping any caramel off the bottoms of the apples.
