CHORIZO NACHOS



Chorizo Nachos image

9 ounces raw pork chorizo, removed from casing
1/2 cup chopped white onions
3/4 cup white wine
1 lemon, juiced
1 pound shredded Monterrey Jack cheese
1 tablespoon cornstarch
One 11-ounce package tortilla chips
1 tablespoon chopped fresh cilantro
1 tablespoon chopped chives

Steps:

  • In a large heavy saute pan, cook the chorizo over medium-high heat until crisp, about 6 minutes. Add the onions and cook until translucent, about 4 minutes. Transfer to a paper towel to drain off excess fat.
  • In a saucepan, add the wine and lemon juice. Bring slowly to a boil and reduce the heat to medium low. Add the cheese and cornstarch and whisk until the cheese is fully melted.
  • Arrange the tortilla chips on a serving platter. Drizzle with the melted cheese mixture. Top with chorizo-onion mixture. Garnish with the cilantro and chives. Serve immediately.

2 tablespoons vegetable oil, or more if needed
1/2 pound fresh bulk chorizo sausage, or packaged, with casings removed
1/2 medium onion, finely chopped
2 cups canned refried beans, heated
1 cup guacamole, purchased or homemade
red salsa, purchased or homemade

Steps:

  • Prepare the tortilla chips, if using homemade. Then, in a medium nonstick skillet, cook the chorizo over medium heat until brown, 4 to 5 minutes. Add the onion and cook until the onion softens, about 3 minutes. To assemble, layer the chips equally with beans, chorizo, and guacamole. Put a dollop of salsa on top. Serve warm. 1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, well drained
3 to 4 jalapeno peppers, seeded and sliced
4 cups multigrain tortilla chips
1 cup shredded cheddar cheese
Optional toppings: Sour cream, chopped fresh cilantro and additional jalapeno slices

Steps:

  • Preheat oven to 350°. Mix beans, tomatoes and jalapenos. Arrange chips in an even layer in a 15x10x1-in. pan. Top with bean mixture and cheese., Bake, uncovered, until cheese is melted, 10-12 minutes. Serve immediately with toppings as desired.
