1 tablespoon olive oil
1 tablespoon coarse grain mustard
6 tablespoons balsamic vinegar
1 dash Tabasco sauce
1 tablespoon caraway seed, pounded with a little olive oil
1 1/2 lbs beets, cooked, sliced into thick rings
1 ounce flat leaf parsley, leaves only
2 small red onions, diced very small
5 ounces chorizo sausage, sliced
4 ounces salad leaves
3 ounces feta cheese, crumbled
fresh ground black pepper

Steps:

  • Mix the oil, mustard, vinegar, tabasco & caraway seeds into a thin dressing.
  • Pour over the sliced beet & leave for ½ hour in a cool place, for the flavours to develop.
  • Before serving, mix in the parsley, red onion, seasoning & chorizo.
  • Arrange the mixed lettuce leaves onto a large plate or serving dish & arrange the beetroot & sausage mixture on the top, followed by the crumbled feta cheese.

We used several varieties of beets -- including golden globe and Chioggia -- for a colorful salad, but you may use any variety you like.

1/2 cup pecans
4 bunches small beets (16 to 20 beets)
3 tablespoons cider vinegar
3 tablespoons olive oil
4 ounces feta cheese, crumbled
2 tablespoons freshly chopped flat-leaf parsley, plus sprigs for garnish
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Place pecans on a baking sheet, and toast until fragrant, about 10 minutes. Transfer to a bowl to cool. Coarsely chop, and set aside. Raise oven temperature to 450 degrees.
  • Trim greens and long roots from beets. Wrap in 2 to 3 aluminum-foil packets, dividing beets according to size. Place in oven, and roast until tender, 45 to 60 minutes, depending on size of beets. Using paper towels to protect your hands, wipe the skins from the beets. Cut into wedges, and transfer to a serving bowl.
  • Drizzle vinegar and olive oil over beets; toss to coat (beets can be made ahead). When ready to serve, add feta, parsley, pecans, and salt and pepper to taste; toss to combine. Garnish with parsley sprigs.

Combine succulent pear, colourful beetroot, spicy chorizo and buttery manchego cheese in this vibrant winter salad that's ideal for sharing with friends

Number Of Ingredients 10

1kg mixed beets , leaves trimmed
200g chorizo , skinned and thickly sliced
100g whole blanched almonds (use Marcona if it's a special occasion)
2 tbsp membrillo (quince paste)
4 tbsp sherry vinegar
1 tbsp lemon juice , plus an extra squeeze
1 tbsp extra virgin olive oil
1 large pear or 2 small firm pears (I used Red Williams)
small pack parsley , leaves picked and roughly torn
50g manchego , shaved

Steps:

  • Put the beets in a large pan of water (if you have a mix of colours, cook in separate pans as the colours will bleed). Bring the water to a boil, cover and leave to simmer - about 20-40 mins, depending on the size of the beets. Use a skewer or small sharp knife to check that they're tender in the centre (try not to poke too often or they'll bleed all their juices into the water).
  • Drain the beets and leave to cool in a colander. When cool enough to handle, peel away the skins, root and stalks, then roughly chop or slice the beets.
  • Put the chorizo in a cold frying pan and fry over a medium heat until crisp - you should collect lots of oil in the pan. Lift out the chorizo with a slotted spoon and keep warm. Tip in the almonds and fry quickly until just turning brown on the edges. Scoop out with a slotted spoon and place on kitchen paper to dry.
  • Make the dressing by melting the membrillo in the pan with the chorizo oil, sherry vinegar and 1 tbsp lemon juice. Mix in the olive oil and season.
  • Core and thinly slice the pear, toss with a little lemon juice to stop it browning, then arrange on a platter with the beets, chorizo and almonds. Toss together with the dressing, if you like, or serve the dressing on the side. Sprinkle over the parsley and manchego and serve immediately.

The 1 hour cooking time is for the chilling time required for the beet mixture. You can skip the chilling time if you refrigerate the can of beets during the day. 4 small beets, trimmed, leaving 1 inch of stems attached
4 cloves garlic, chopped, divided
1 teaspoon olive oil
3 heads baby bok choy, chopped
2 tablespoons peanut oil
1 ½ teaspoons butter
⅓ cup crumbled feta cheese

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Place the beets, 1/4 of the chopped garlic, and the olive oil on a piece of heavy aluminum foil; fold the foil around the beets into a sealed packet.
  • Roast beets in the preheated oven until easily pierced with a fork, 40 minutes to 1 hour. Let beets cool just until they can be handled, then rub with a paper towel to remove skins. Chop into 1/2-inch cubes; set aside.
  • Heat the peanut oil and butter in a heavy skillet over medium-high heat. Cook and stir bok choy and the remaining garlic together until bok choy is slightly softened but still crunchy, about 5 minutes. Remove from heat; stir in the beets and the feta. Serve warm.

2019-09-10 Method. Fry the chorizo until browned and cooked through. Add the tomatoes to the same pan, season and cook until they just start to soften. Put the watercress onto 2 plates. Whisk together the vinegar, mustard and olive oil, season, and use to dress the watercress. Scatter over the feta and avocado, then spoon over the tomatoes and chorizo.
