Goat Cheese Pasta with Chorizo and Cherry Tomatoes image

A light, flavorsome dish that is nice to have all year round!

1 (16 ounce) package penne pasta
¼ cup olive oil
3 stalks green onion
1 ½ pints cherry tomatoes, quartered
½ cup finely chopped fresh basil
3 tablespoons balsamic vinegar
9 ounces smoked chorizo sausage links, sliced
2 (8 ounce) packages goat cheese

Steps:

  • Add 1 tablespoon salt to a large pot of water; bring to a boil. Add penne and olive oil and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • While the pasta is cooking, chop green onions: Cut green parts diagonally, and cut white parts into thin, round slices. Transfer to a bowl with the cherry tomatoes, basil, and vinegar.
  • Place chorizo in a separate bowl. Chop goat cheese, then crush it and mix it in with the chorizo.
  • Drain pasta and transfer to a large bowl. Add chorizo-goat cheese mixture; stir until cheese is melted and pasta is coated. Then put the vegetables into the pasta and stir to combine.

A low-calorie Spanish omelette with potatoes, pesto and cheese to be served in wedges with fresh salad leaves

4 medium potatoes (about 600g/1lb 5oz), thinly sliced
1 garlic clove , finely chopped
8 large eggs , lightly beaten
1 tbsp olive oil
100g pack soft rindless goat's cheese , sliced
3 tbsp pesto
handful rocket leaves
tomato and basil salad, to serve (optional)

Steps:

  • Boil the potatoes in salted water for 5 mins until just tender. Meanwhile, heat oven to 220C/200C fan/gas 7. Mix the garlic and eggs together with some seasoning, then drain the potatoes and stir into the egg.
  • Heat the oil in an ovenproof frying pan, then tip in the egg and potato mixture. Cook over a low heat for 5 mins or until two-thirds of the frittata is set, then cook in the oven for 10-15 mins until cooked through.
  • Arrange the goat's cheese round the edge of the frittata and drizzle with the pesto. Top with rocket and serve with a tomato & basil salad, if you like.

¼ pound chorizo, crumbled
1 (6 ounce) package baby spinach leaves
2 cups cherry tomatoes, halved
4 green onions, sliced
6 eggs
½ cup milk
1 ½ cups KRAFT Shredded Pepper Jack Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 375 degrees F. Cook chorizo in large ovenproof skillet on medium-high heat until done, stirring frequently. Remove chorizo from skillet, reserving drippings in skillet. Set chorizo aside. Add spinach to skillet; cook 2 min. or just until wilted, stirring frequently. Stir in tomatoes and onions. Remove from heat.
  • Whisk eggs and milk in medium bowl until blended; stir in 1 cup cheese. Add to ingredients in skillet; stir just until blended. Top with remaining cheese.
  • Bake 25 min. or until knife inserted in center comes out clean.

A great tasting easy dish that uses up some left over store cupboard items that can be eaten hot or cold.

Number Of Ingredients 9

1 tbsp of olive oil
4 large eggs
150 grated cheddar cheese (Gruyere works well or even Feta)
100ml single cream
1 medium onion, finely chopped
125g of Chorizo (I use Tesco's finest) - skin removed and finely sliced
100g of sliced mushrooms
Cracked black pepper
Some leafy salad to serve (optional)

Steps:

  • Preheat your oven to 180 deg C.
  • Heat the oil in a 25cm oven proof frying pan over a medium heat, add to the onion and cook until softened. Then add the mushroom and Chorizo for a further five minutes or so.
  • Meanwhile, beat the eggs in a jug with the cream
  • Even out the pan ingredients as if it were a pizza topping and season with cracked black pepper.
  • Sprinkle over half of the cheese (or all of it if using feta) and slowly pour in the egg mixture. Then evenly sprinkle over the remainder of the cheese.
  • Place the pan into the oven for around 20 minutes or unitil the egg is cooked through.
  • Serve with the crisp leafy salad

80 ml milk
1 teaspoon olive oil
1 red onion, chopped
1 chorizo sausage, sliced
2 garlic cloves, crushed
1 teaspoon dried chili pepper flakes
2 (400 g) cans chopped tomatoes
sea salt
black pepper, cracked
200 g goat cheese (or feta)
1/2 cup coriander, chopped (cilantro)

Steps:

  • Place eggs, milk and chopped coriander in a bowl and lighlty whisk, set aside.
  • Heat the oil in a non stick fry pan over high heat, add the onion, garlic, chorizo and chili and cook for 3-4 minutes or until onion is softened.
  • Add the tomato, salt and pepper and cook for 5-6 minutes or until thickened slightly.
  • Add egg mixture, top with cheese of choice (feta or goat) and cook until egg is just set.
  • Place the frying pan under a preheated grill (broiler) for 5-6 minutes until golden.
