ALOO TIKKI RECIPE (INDIAN POTATO PATTIES)



Aloo Tikki Recipe (Indian Potato Patties) image

Aloo Tikki is a popular North Indian street food snack of savory, spiced and crispy potato patties. A basic Aloo Tikki Recipe is made with potatoes, spices, herbs, breadcrumbs or a binding flour and can be stuffed with a filling of mashed cooked green peas or cooked chana dal or paneer.

500 grams potatoes (or 4 to 5 large potatoes)
½ cup green peas (- 100 grams, fresh or frozen)
2.5 cups water
¼ teaspoon red chilli powder (or cayenne pepper)
½ teaspoon Coriander Powder ((ground coriander))
½ teaspoon fennel powder ((ground fennel seeds) - optional)
½ teaspoon dry mango powder (or ¼ to ½ teaspoon lemon juice)
2 teaspoons finely chopped ginger
1 teaspoon finely chopped green chillies (or 1 to 2 green chillies, finely chopped)
2 tablespoons finely chopped coriander leaves ((cilantro))
2 pinches black salt
salt (as required)
½ teaspoon red chilli powder (or cayenne pepper)
½ teaspoon Garam Masala (or curry powder)
1 teaspoon Coriander Powder ((ground coriander))
1 teaspoon dry mango powder (or ½ to 1 teaspoon lemon juice)
½ teaspoon cumin powder ((ground cumin) - optional)
½ teaspoon black salt
salt (as required)
¼ cup bread crumbs (or add as required )
¼ cup arrow root flour (or add as required)
2 tablespoons chopped coriander leaves ((cilantro))
4 to 5 tablespoons oil (for frying the tikki or add as required)

Steps:

  • The potatoes and green peas have to be cooked together first. You can choose to leave out cooking green peas if you do not want to stuff the patties.

Fried Potato Patties are the best way to use up leftover mashed potatoes -- gorgeously golden brown on the outside, and fluffy, creamy potato heaven on the inside!

2 cups cold, leftover mashed potatoes
1 large egg
1/3 cup grated yellow onion
1/2 cup all-purpose flour
3/4 teaspoon Kosher salt
1/4 teaspoon black pepper
About 1 1/2 cup canola oil

Steps:

  • In a large mixing bowl, mix together the cold mashed potatoes and the egg. Make sure the egg is evenly distributed through the potatoes.
  • Add the grated onion, flour, salt, and pepper and use a fork to gently mix in the ingredients.
  • Add enough oil to a large fry pan so that it is approximately 1/2" deep and place over medium heat. Allow the oil to come to temperature, about 350°F.
  • Scoop scant 1/2 cups of the potato mixture and gently drop them into the hot oil. Do not overcrowd the pan -- cook no more than 3-4 patties at a time. Gently, flatten each mound into a patty shape with a spatula.
  • Fry for about 2 1/2 to 3 minutes on the first side, until golden brown. Then, slide the spatula under the patty and turn it over. You'll find enlisting a second utensil makes the flip a bit easier! Then, cook for another 2 to 2 1/2 minutes.
  • Transfer the cooked patty to a cooling rack placed over paper towels. Allow to cool slightly, serve, and enjoy!

2 large eggs, lightly beaten
2 tablespoons finely chopped onion
1/4 teaspoon pepper
2 cups leftover mashed potatoes
2 cups leftover chopped cooked turkey
2 cups leftover stuffing
2 tablespoons butter
2 tablespoons canola oil
Unsweetened applesauce, optional

Steps:

  • In a large bowl, whisk eggs, onion and pepper. Stir in potatoes, turkey and stuffing., In a large skillet, heat butter and oil over medium-high heat. Working in batches, drop potato mixture by 1/2 cupfuls into skillet; press to flatten slightly. Fry on each side until golden brown and heated through, 4-5 minutes. Drain on paper towels. If desired, serve with applesauce.

2 cups cooked smashed potatoes (plain, boiled and fork-smashed potatoes work best)
1 cup shredded mozzarella cheese (can substitute cheddar)
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder or 2 tablespoons thin sliced green onions
1/4 teaspoon black pepper
1 egg, lightly beaten
1 cup breadcrumbs
1/4-1/2 cup vegetable oil

Steps:

  • Combine first 7 ingredients; chill.
  • Shape mixture into 6 patties.
  • Dip each patty into lightly beaten egg then lightly coat with breadcrumbs.

2 cups mashed potatoes (cooled)
1 egg (beaten)
1 onion (minced)
1/4 cup all-purpose flour
1/2 cup Parmesan cheese (grated)
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Mix together the mashed potatoes, beaten egg, and onion in a medium bowl.
  • Add the flour, cheese, salt, and pepper, and stir well with a wooden spoon.
  • In a large nonstick skillet over medium heat, heat the olive oil and butter together until the butter melts and the mixture starts to sizzle.
  • Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2 inch thick. Cook the potato patties until the bottom is browned and crisp, which will take about 3 to 4 minutes.
  • Carefully turn each patty over with a spatula and cook the second side until it is brown and crisp, about 3 to 4 minutes longer.
  • Remove the patties from the pan and drain briefly on paper towels.
  • Serve the patties immediately with ketchup or salsa or any other sauce you'd like. Enjoy.

My mother often made this recipe and probably grew up with it in the Appalachian area of Tennessee. She usually served it on Monday, making use of leftover mashed potatoes from Sunday dinner. We used to eat this topped with brown gravy.

1 medium onion, chopped
2 tablespoons butter
2 eggs
1-1/2 cups mashed potatoes
1/4 cups all-purpose flour
1/4 teaspoon salt

Dash hot pepper sauce, optional
1 tablespoon water

Steps:

  • In a large skillet, saute onion in butter until tender. Remove from the heat. In a large bowl, lightly beat one egg. Add the onion, potatoes, flour, salt, pepper and hot pepper sauce if desired. , Shape into four to six patties; place on a greased baking sheet. Lightly beat remaining egg; stir in water. Brush over potato cakes. Bake at 375° for 20-25 minutes or until heated through.

1 teaspoon Chaat Masala or store-bought
2 large russet potatoes or any pototes (about 1 pound)
1 tablespoon peeled minced fresh ginger
1 teaspoon fresh green chili pepper, such as serrano, minced with seeds
1 tablespoon ground coriander
1 teaspoon dried fenugreek leaves
1/4 teaspoon , coarsely ground ajwain, seeds
1/4 teaspoon cayenne pepper or to taste
1/2 teaspoon salt, or to taste
2 large eggs, lightly beaten
1/2 cup coarsely chopped raw cashew nuts
1 1/2 to 2 cups peanut oil for deep-frying

Steps:

  • 1. Prepare the chaat masala. Cook the potatoes in lightly salted boiling water to cover until tender, about 20 minutes. Cool, then peel and mash. In a large bowl, add the mashed potatoes, ginger, green chili pepper, coriander, fenugreek, ajwain, cayenne pepper, and salt. With clean hands, gently mix everything together. (Don't use a food processor over-mixing will result in glutinous potatoes.)2. With lightly greased hands, divide the mixture into 20 portions and shape each one into a round ball, then flatten lightly to make a smooth patty or an oval.3. Heat the oil in a large wok or skillet until it reaches 350°F to 375°F on a frying thermometer or until a small piece of the mixture dropped into the hot oil bubbles and immediately rises to the top. Dip each patty in the beaten egg, then coat well with the cashews. 4. Add the discs into the hot oil carefully with your fingers or a spoon to avoid spluttering. Add as many as the wok can hold at one time without crowding and fry each batch, turning a few times with a slotted spatula, until crispy and golden on all sides, about 1 to 2 minutes.5.
