12 ½ pounds green tomatoes, chopped
8 large onions, chopped
10 green bell peppers, chopped
3 teaspoons salt
6 chopped green chile peppers
1 quart distilled white vinegar
1 ¾ cups white sugar
½ cup prepared horseradish
1 tablespoon ground cinnamon
1 tablespoon ground allspice
¼ teaspoon ground cloves

Steps:

  • In a large bowl combine tomatoes, onions, bell peppers and salt. Let stand overnight.
  • Drain the tomato/pepper mixture and add the hot chile peppers, vinegar, sugar, and horseradish. Wrap the cinnamon, allspice, and cloves in cheesecloth or a porous bag, and add to tomato/pepper mixture.
  • Boil for 15 minutes, or until tender.
  • Pack tightly in sterilized jars and seal.

When my husband and I started dating years ago, his grandmother would send down quarts of her Chow-Chow when she found out how much I loved it. Sadly, we lost her sometime after that and the recipe was lost too....or so I thought. My DH's aunt had it! This will scorch very easy. Don't try to rush it.

1 gallon red ripe tomato, peeled
4 cups sugar
1 1/2 cups white vinegar
6 hot peppers
6 large onions
6 green bell peppers

Steps:

  • Chop tomatoes peppers and onions bite-size or smaller.
  • Put all ingredients in a large pot and cook on low simmer for 3-4 hours. (Recipe says to cook it "slow and cook down low").
  • Sterilize your canning jars & lids in boiling water.
  • Fill the jars and place tops on tight.
  • After filling jars, give them a 45-minute bath in boiling water.
  • Enjoy.

This is a family favorite that my dad loves. I came across it in one of my grandma's old recipe books.

1 large cabbage, finely shredded
1 large onion, finely chopped
6 hot banana peppers, finely chopped
1 large bell pepper, finely chopped
1 tablespoon crushed red pepper flakes
1 large carrot, finely chopped
5 cups cider vinegar
water
2 cups sugar
1/8 cup salt

Steps:

  • Finely chop or shred all ingredients.
  • Put cabbage in very large pot and boil until soft.
  • Add remaining ingredients except vinegar and sugar and boil an additional 30 minutes.
  • Drain off about half of the liquid.
  • Add vinegar and sugar, simmer for 30 minutes.
  • Drain off 1/3 of the liquid before serving.

10 - green tomatoes
7 cup(s) cucumbers
6 cup(s) cabbage
2 medium green bell peppers
1 medium red bell pepper
2 medium onions, yellow, medium
1 tablespoon(s) black mustard seed
1 tablespoon(s) white mustard seed
1 tablespoon(s) celery seed
1 tablespoon(s) turmeric,
4 pound(s) sugar
3 pint(s) vinegar

Steps:

  • Grind and cover the first 6 ingredients with salt. Let stand 5 to 15 minutes. Then drain.
  • Add the rest of the ingredients. bring to a boil and cook 20 minuits.
  • Have jars, rings, and lids sterilized. Fill jars leaving a 1/4 inch head space. Seal.
  • Bring water to boil in you water bath canner when boiling put in your jars to cover, when water start boiling again time for 15 minutes.
