4 cups arugula
3 tablespoons chopped toasted walnuts
1 fennel bulb, thinly sliced, plus 1 tablespoon chopped fronds, for garnish
1 orange, segmented, plus the juice squeezed from the pulp
Seeds from 1 pomegranate
1/2 red onion, thinly sliced
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Toss the arugula, walnuts, fennel, orange segments, pomegranate seeds and onions together in a large bowl.
  • Whisk together the Dijon, vinegar and orange juice in a small bowl. Whisk in the oil. Season with salt and pepper.
  • Drizzle the salad with the dressing to taste. Garnish with fennel fronds and serve immediately.

Christmas Deli Salad With Pomegranate, Parma Ham and Gorgonzola image

A fabulous wilted salad boasting the rich, festive colours of vibrant crimson reds and lush holly greens, as well as being full of flavour - this is simply a wonderful salad for the Christmas, New Year or Thanksgiving family table. Please do use any blue cheese or ham of your choice; Stilton or Roquefort would be lovely as well as Prosciutto or Bayonne ham.......and, if you are serving any vegetarians, just leave the ham out of the equation! The dressing can be made up a few hours or a day beforehand, just wilt the leaves and assemble the salad right before serving. Serve this salad with crusty rolls or some thinly sliced rye bread and a glass of chilled Rosé or Chardonnay.

250 g radicchio chicory lettuce (red endive leaves)
250 g savoy cabbage (the green leaves)
1 tablespoon olive oil
200 g gorgonzola, cubed
300 g parma ham, shredded
50 g olives (black or green)
100 g pomegranate seeds (from one or two pomegranates)
100 g rocket (arugula)
3 teaspoons Dijon mustard
3 tablespoons lemon juice
50 ml olive oil
salt and pepper

Steps:

  • Wash and trim the radicchio and Savoy cabbage leaves, and remove the chunkier stems and centre stem of the Savoy cabbage. Then cut or tear the leaves into even sized strips. Heat the olive oil in a large wok or frying pan. Wilt the leaves in the olive oil - just for a few minutes so the leaves are still crunchy but warm.
  • Lay the wilted leaves out on a large platter or individual plates and top with the gorgonzola cheese cubes, Parma ham slices (which have been shredded) and the olives.
  • Scatter the rocket (arugula) leaves over the top and then scatter the pomegranate seeds over before adding the dressing. Serve immediately.

This is an exact copycat recipe of the totally easy and delicious Chicken Gorgonzola Salad available in the Fred Meyer Deli case (recipe deciphered by Bitchin' Vittles.) It's a light, flavorful summer salad that is sure to be a huge hit at your next potluck, BBQ or family get together!

1 lb penne pasta
2 boneless skinless chicken breasts
1/2 teaspoon lemon pepper seasoning (to taste)
2 cups red grapes (seedless, sliced in half)
4 green onions (thinly sliced)
1/3 cup pecans (coarsely chopped)
1/2 cup gorgonzola (crumbled)
1 cup mayonnaise (for best results, use a quality brand like Best Foods)
2 tablespoons extra virgin olive oil
2 tablespoons seasoned rice vinegar (you may use apple cider vinegar, but rice vinegar is better here)
3 tablespoons white sugar (to taste)
1/2 teaspoon kosher salt (regular table salt will be TOO SALTY)
1/4 teaspoon black pepper (to taste)

Steps:

  • Cook the pasta according to the package directions, NOT al dente. You don't want it to be too gummy or too mushy. Drain in a colander and run COLD water over until it's completely cold. Transfer to a large bowl.
  • Sprinkle the chicken breasts with lemon pepper. "Grill" the chicken breasts by whatever method you prefer. You may use a panini type grill, a barbecue grill, or simply bake in the oven. Your cooking times will vary based on your method, but just make sure the breasts are fully cooked by reaching an internal temperature of 165 degrees, or when the juices run clear. Allow the chicken pieces to cool until you can handle them. Slice the chicken thinly, then cut slices in half so they are bite-sized. Spread out to cool completely while you prepare the remaining ingredients.
  • Pour the dressing ingredients (mayo, oil, vinegar, sugar, salt, pepper) into the bowl and whisk until incorporated.
  • After the chicken and pasta are completely cooled, add all the remaining ingredients to the bowl and stir gently. Refrigerate until ready to serve.
  • TIPS: If the salad is too stiff after prolonged refrigeration, you can make it creamy again by stirring in a tiny bit of olive oil, milk or warm water. Gorgonzola cheese is similar to bleu cheese, but slightly milder. It is an acquired taste for some people, so feel free to use more or less to taste. I use MORE! For best results, don't substitute or omit ingredients. I usually try doing things to lower fat or calories, but in this case, the results will NOT be the same.

1 (6 ounce) jar marinated artichoke hearts
2 teaspoons lemon juice
3/4 can kidney bean, drained and rinsed
3/4 cup black olives
1/2 cup green onion, sliced
1/2 cup celery, sliced
1 cup red bell pepper, slices
1 teaspoon oregano
1 1/2 cups reduced-calorie Italian dressing
1/2 cup feta cheese, crumbled

Steps:

  • Drain artichokes, reserving liquid and quarter them.
  • Place pasta in boiling water and cook according to package directions.
  • Drain.
  • Mix pasta with liquid from artichokes.
  • Add lemon juice, artichokes, beans, olives, green onions, celery, bell peppers and oregano.
  • Mix gently and chill.
  • One hour before serving, add feta and Italian dressing.
  • Mix to coat.
  • Serve cool.
