CHRISTMAS FRUIT DUMPLING IN THE MICROWAVE
A quick replacement for Christmas pudding that's lighter and very tasty

Steps:
- Put the water, fruit, fat and sugar in a large pan and slowly heat until all the sugar and fat has dissolved - Tip: you are only melting not cooking so don't let it get too hot..
- Sieve the next five ingredients into a large bowl and mix well to ensure an even spread of the spices.
- Add warm wet ingredients into the bowl of dry ingredients and add the two beaten eggs and mix well.
- Put into suitably sized microwaveable dish lined with cling film, but do not cover over the top with the cling film. I use a glass mixing bowl as the cooking dish to get a nice pudding shape. Place in microwave (timings for 900w) adjust timing for lower or higher power microwave
- Once cooked turn out onto a plate and remove cling film. Allow to cool. This can be sliced up and frozen in handy portions. It's great re-heated and then dry fried to get a tasty crust on it...

MICROWAVE CHICKEN AND DUMPLINGS
Our version of this old-fashioned dish works beautifully in the microwave. It is made with rotisserie chicken, so you're halfway done before you start. Golden cornmeal dumplings make a tender-chewy topping; using a bowl in a smaller microwave protects them from overcooking.

- For the filling: Whisk together the chicken broth and flour in a microwave-safe 8-by-8-by-2-inch baking dish for an 1,100-watt oven or a 4-quart microwave-safe bowl for a 700-watt oven, until there are no lumps. Stir in the onions, celery, butter, thyme sprig, 3/4 teaspoon salt and a few grinds of pepper. Cover tightly with plastic wrap; cut a small slit in the center with the tip of a paring knife to vent excess steam. Microwave on high (at 100 percent power) for 5 minutes in an 1,100-watt oven or 8 minutes in a 700-watt oven.
- Remove the dish from the microwave, and remove the plastic wrap (be careful to avoid the hot steam). Carefully whisk the broth mixture until there are no clumps of flour at the bottom. Put the dish back in the microwave, uncovered, and cook on high (at 100 percent power) until the broth is bubbly and thick, 5 minutes in an 1,100-watt oven or 8 minutes in a 700-watt oven.
- For the dough: Meanwhile, in a medium bowl, whisk together the flour, cornmeal, baking powder and salt. Add the milk and oil in the center, and stir everything together with a fork until the dough just comes together (it will be sticky and wet).
- To assemble: Remove the dish from the microwave. Remove and discard the thyme sprig, and whisk the broth mixture again. Stir in the shredded chicken and frozen peas and carrots. Arrange rounded teaspoons of the dough (about 16 dumplings) about 1/2 inch apart along the perimeter of the dish or bowl. Grind a little pepper over each dumpling.
- Cover the dish tightly with a new piece of plastic wrap; cut a small slit in the center. Microwave on high (at 100 percent power) until the dumplings are puffed and a toothpick inserted in the center comes out clean, 6 minutes in an 1,100- or a 700-watt oven. If they are not cooked through, microwave them again in 30-second increments, testing with a toothpick after each.
BAKED FRUIT DUMPLINGS
A wonderful light dessert. Good with apples, pears, blueberries, raisins, nuts, and probably anything you think of. Serve with vanilla ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 7x11 inch baking dish.
- In a large bowl, mix flour, baking powder, salt and brown sugar. Cut in butter. Pour in milk and stir to form a dough. Turn out onto a well-floured surface and roll out. Cut into 6 - 6 inch squares.
- Place a whole apple in the center of each square. Fill the core with blueberries. Drizzle with maple syrup. Pull up corners of dough and pinch edges together to seal. Place dumplings in prepared pan and sprinkle with cinnamon and nutmeg.
- Combine remaining maple syrup with enough water to pour over dumplings to a 1 inch depth in dish. Submerge remaining blueberries and apple peelings with dried orange peel in liquid.
- Bake in preheated oven 45 minutes, basting as necessary, until crisp and browned. Serve warm with sauce.

This recipe has been tried and tested by my friends, family and work mates. They never expect it to work as traditional dumpling take hours of steaming. This takes about 10 minutes. Tastes authentic or I would not use it, or be asked for copies of it, so often. Very quick and easy. A cheats delight.

Steps:
- Into a heavy pan place the following ingredients; water, spices, fruit, sugar, butter and treacle.
- Bring to a boil and simmer for 1 minute only; remove from the heat.
- Stir the eggs, flour, and bicarbonate of soda into the mixture. It will appear to start cooking the mixture. Do not worry.
- Put mixture into pudding basins which have been lined generously with cling wrap. Wrap should flap over the sides of the basin; tap to get rid of air pockets.
- Place into the microwave for about 7 minutes. Do not cover the top with the cling wrap.
- Each microwave is different and, depending on size and power, you will have to use your own judgement.
- They are ready when a skewer comes out clean and feels firm on top.
- Now it's up to you. Play around with the sizes and make individual ones (approximately 2 or 3 minutes) or play about with the fillings.

- put the first 8 ingredeints in a microwave bowl and heat till butter has melted. add flour and baking powder and mix. then add eggs and mix well. have a 2 liter microwave safe bowl lined with plastic wrap and pour in mix. set timer for 8-9 minutes, checking and turning bowl every few minutes so that it does not get hard in places. allow to cool. enjoy with butter or plain and a nice cuppa tea.
