MY NANA'S LACE COOKIES



My Nana's Lace Cookies image

These are delicate lace cookies with an amazing taste! A tradition in our family for Christmas since I was a little girl. These cookies spread to make a very thin wafer, almost transparent. Super easy to make, but be careful, as they can be quick to burn or cool too much on your cookie sheet - and then you'll be chipping the cookies off of your cookie sheet! I hope you enjoy these as much as my family does. Store in an airtight container until serving.

2 ¼ cups old-fashioned oats
2 ¼ cups packed light brown sugar
3 tablespoons all-purpose flour
1 teaspoon salt
1 cup unsalted butter, melted
1 large egg, slightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Mix oats, brown sugar, flour, and salt together in a bowl. Stir in melted butter until well blended. Pour in egg and vanilla extract and mix until well blended.
  • Drop dough by 1/2 teaspoonfuls, at least 2 inches apart, on the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, 4 to 5 minutes.
  • Remove from the oven and let cool slightly until firm, 5 to 10 minutes. Transfer cookies to wire racks to cool completely. Continue baking remainder of cookies, 1 cookie sheet at a time, according to instructions.

1 cup butter, softened
2-1/4 cups confectioners' sugar
1/4 cup light corn syrup
1-1/4 cups all-purpose flour
1 cup chopped pecans
1/4 cup dried cranberries

Steps:

  • In a bowl, cream butter and confectioners' sugar until light and fluffy. Beat in corn syrup. Gradually beat in flour and mix well. Fold in pecans and cranberries. Shape dough into two 6-in. logs; wrap each and chill until firm, at least 2 hours. , Unwrap and cut into 1/4-in. slices. Place 3 in. apart on ungreased foil-lined baking sheets. Bake at 350° until center and edges are browned and lacy, 11-12 minutes. Allow cookies to cool completely before carefully removing from foil.

½ cup butter
¾ cup white sugar
1 egg, beaten
1 cup quick cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
  • Drop teaspoonfuls of dough onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

Crisp and chewy at the same time, these Southern delicacies are simple to make, and they keep well in an airtight container.

Yield Makes about 25 3-inch cookies

Number Of Ingredients 7

1 1/2 cups (3 sticks) unsalted butter
3 cups uncooked rolled oats (do not use instant)
1 1/2 tablespoons all-purpose flour
1 teaspoon salt
1 3/4 cups sugar
2 teaspoons vanilla extract
2 large eggs, lightly beaten

Steps:

  • Heat oven to 325 degrees. Cover a baking sheet with parchment paper.
  • In a large saucepan over low heat, melt the butter. Let cool a bit and add all remaining ingredients except the eggs. Stir well to combine, then add the eggs. Mix thoroughly.
  • Place 1 1/2 tablespoons of batter at a time on the parchment, leaving at least 3 inches between cookies. Flatten batter into a circle with the back of a spoon. Bake for 13 to 15 minutes, or until just golden brown. Cool on wire racks.

I added this to my Christmas cookie list about four years ago - they were a big hit. I've been making them ever since. It's so hard to stop eating them!

2 1/4 c confectioners sugar
1 c butter
1 1/4 c all-purpose flour
1/4 c light corn syrup
1 c chopped pecans
1/4 c dried cranberries

Steps:

  • 1. Mix creamed butter and confectioners sugar until light and fluffly.
  • 2. Beat in corn syrup. Slowly beat in flour and mix well.
  • 3. Fold in pecans and cranberries.
  • 4. Form dough into two 6 inch logs and wrap each log in plastic wrap. Chill for at least 2 hours or until firm.
  • 5. Unwrap and cut into 1/4 inch slices. Place each cookie about 3 inches apart on an ungreased foil lined baking sheet.
  • 6. Bake at 350 for 11-12 minutes or until center and edges are browned and lacy. Make sure you the cookies have completely cooled before removing them from the foil.

They also keep pretty well so they're perfect if you're looking for an idea for an edible holiday gift for any cookie lover on your list--just stack them up in a box and tie them with a bow!

1 ½ cups whole raw almonds
½ cup unsalted butter
¾ cup light brown sugar
¼ cup honey
½ teaspoon vanilla extract
1 pinch salt
3 tablespoons all-purpose flour
1 cup semisweet chocolate chips, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Place almonds into the bowl of a food processor; alternate pulsing and running at full speed every few seconds until finely chopped and crumblike. Be careful not to go too far; you don't want them too fine and pasty.
  • Combine butter, brown sugar, and honey in a saucepan over medium heat. Stir a few times and cook until melted and dissolved. Bring to a boil, then carefully remove from the heat.
  • Add vanilla extract, salt, and flour, and whisk until smooth. Add chopped almonds and mix with a spatula until everything is combined.
  • Drop eight uniformly sized, rounded spoonfuls of batter (each about 2 teaspoons, or 15 grams) onto the prepared sheet. Fine-tune the cookie shapes and make sure they are evenly spaced.
  • Place in the center of the preheated oven and bake until golden brown and a bit darker around the outsides, 10 to 12 minutes, rotating the pan halfway through.
  • Remove from the oven and slide the silicone liner off the baking sheet and directly onto the countertop. Allow to sit until cool and crisp, 3 to 5 minutes, then gently peel cookies off the liner. Repeat to bake remaining batches.
  • Spread melted chocolate over the flat side of one cookie. Place a second cookie, flat-side down, on top to make a sandwich and press very gently to seal. Repeat to form remaining cookies. Let sit until chocolate has firmed up, about 30 minutes.
