- Divide Puffcorn into 2 large bowls equally. Following package directions, microwave red candy melts with 1 teaspoon coconut oil until smooth and melted. Or In a smaller heat proof glass or metal bowl add red candy melts and coconut oil. Pour melted red chocolate over first bowl of the puffcorn and stir well. Spread puffcorn on a cookie sheet and allow to dry. Following package directions, microwave green candy melts with 1 teaspoon coconut oil until smooth and melted. Or In a smaller heat proof glass or metal bowl add green candy melts and coconut oil. Pour melted green chocolate over the second bowl of the puffcorn and stir well. Spread puffcorn on a cookie sheet and allow to dry. Once puffcorn is dry enough to touch, mix the two flavors together and serve. Store in an airtight container for up to 3 days.

- Begin by lining a baking sheet with parchment or silicon liner and set aside. Then, pour the bag of puffcorn in a large bowl.
- Next, in a separate small bowl, heat the almond bark in the microwave for 1minute 30 seconds. Let it sit for 2 minutes, then microwave for an additional20 seconds, if needed. Stir until the bark is smooth and ensure it is completely melted.
- Proceed to pour the melted chocolate over the puffcorn and stir until the almond bark completely coats puffcorn, then transfer the mixture onto the prepared baking sheet.
- After that, sprinkle with the Christmas candy and holiday sprinkles. Let cool to set for roughly 20-30 minutes, then gently break up into pieces and serve in a large bowl and enjoy!

- Combine corn puffs and peanuts in a large roasting pan.

- In 2 quart sauce pan bring the butter, sugar & corn syrup to bring to boil, then cook for 2 minutes.
- Add the baking soda- this will cause the caramel mixture to foam up.

HOLIDAY CORN PUDDING
This wonderful sidedish is always the first one I get asked to make at any holiday gathering, be it Christmas, Thanksgiving or Easter. My entire family loves it. My original recipe called for 1/2 cup sugar but we found that a little too sweet but feel free to up the sugar if you want to.

- Preheat oven to 350.
- Spray a 2QT casserole dish with Pam and put aside.
- Now in a large bowl, empty in the cans of corn, add the sugar, and the eggs, now beat gently with a wooden spoon until blended.
- Now melt the butter in a seperate bowl, microwave is great for this and then add to the mixture.
- Finally add your flour and baking powder, mix until it is all combined.
- Pour into the casserole dish and bake for about 1 hour until the top is a nice golden color. I give it the jiggle test, just open oven carefully and with a pot holder jiggle the casserole and if it jiggles give it a few more minutes until it is set, just keep an eye on it since ovens vary.
