Christmas Tree Cheesecake Pops image

Trimming the tree gets new meaning when it comes to decorating these adorable cheesecake pops. Freezing the cheesecake slices overnight is the key to easy dipping. Which tree is your favorite -- classic, rainbow lights, white lights or snowy?

One 30-ounce frozen New York-style cheesecake, such as Sara Lee
15 ounces green candy melting wafers
1/2 cup refined coconut oil
Green sprinkles, for decorating
8 gold star dragees
Rainbow nonpareils, for decorating
Silver nonpareils, for decorating
One 4.25-ounce tube white decorating icing, such as Wilton
White nonpareils, for decorating

Steps:

  • Line a baking sheet with parchment paper.
  • Cut the cheesecake into 8 even wedges. Firmly insert a wooden ice pop stick into the short side of each cheesecake slice, about 2 1/2 inches deep. Transfer to the prepared baking sheet and freeze until solid, at least 6 hours and up to overnight.
  • Line a second baking sheet with parchment paper.
  • Add the green candy melting wafers and coconut oil to a tall wide-mouth microwave-safe container. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 1 minute 30 seconds.
  • To make a plain tree: Dip a frozen cheesecake slice in the candy melts to fully coat. Transfer to the prepared baking sheet and immediately sprinkle with green sprinkles. Dip the bottom of a gold star dragee in the candy melts and press on the top of the tree.
  • To make a tree with rainbow lights: Follow the directions above for a plain tree, quickly sprinkling a few a few rainbow nonpareils over the green sprinkles. Add a gold star as above.
  • To make a tree with white lights: Follow the directions above for a plain tree, quickly sprinkling a few silver nonpareils over the green sprinkles. Add a gold star as above. Attach a small round piping tip to the tube of white decorating icing and pipe a garland on the tree.
  • To make a tree with snow: Follow the directions above for a plain tree, quickly sprinkling a few white nonpareils over the green sprinkles. Add a gold star as above.
  • Freeze the pops until ready to serve. Use a sharp knife to trim any frozen candy melt drips from the sides of the pops. Let sit at room temperature for 10 minutes before serving, or serve frozen.

100g Rice Krispies
6 ice-cream cones
500g icing sugar
½ tsp green food colouring
sweets and sprinkles , to decorate

Steps:

  • Melt the marshmallows and golden syrup in a pan, then stir in Rice Krispies. Working quickly, pack the mixture into ice cream cones and push a lolly stick into the middle of each one. Chill the cones for 1 hr until completely firm. Mix icing sugar with green food colouring and enough water to make a thick icing. Dip the cones into the icing and decorate with sweets and sprinkles. Prop up on a wire cooling rack to set.

6 cups crispy rice cereal (such as Rice Krispies®)
⅓ cup chopped dried cranberries
⅓ cup chopped dried apricots
1 small orange, zested and juiced
3 tablespoons unsalted butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground cloves
1 (10 ounce) package large marshmallows
⅓ cup dried apricots, or as needed
⅓ cup dried cranberries, or as needed
½ cup chopped white chocolate
1 tablespoon unsalted butter

Steps:

  • Mix crispy rice cereal, cranberries, and apricots together in a large bowl. Toss gently to combine and set aside.
  • Combine orange zest and juice, butter, vanilla extract, cinnamon, salt, and cloves in a large saucepan over low heat. Cook until butter is melted and stir to combine. Add marshmallows all at once; cook, stirring constantly, until fully melted, 3 to 5 minutes.
  • Quickly pour the marshmallow mixture over the cereal mixture and toss to combine, making sure cereal is thoroughly coated.
  • Lightly butter or oil clean hands and a 1/3 cup measure. Scoop out 1/3 cup of the cereal mixture and press firmly into a tree shape. Flatten the bottom of the tree and set aside. Continue making trees, re-buttering your hands as needed, until all the mixture is used up. Allow trees to cool and harden for 15 to 30 minutes.
  • Cut whole apricots into star shapes, using a sharp paring knife or small cookie cutter. Set the scraps aside for extra decoration. Chop dried cranberries for extra decoration.
  • Combine white chocolate and butter in a small heat-proof bowl. Microwave until chocolate is melted, about 30 seconds. Stir to combine. Pour white chocolate into a piping bag.
  • Pipe white chocolate into decorative patterns all over the trees, covering the very tops to adhere the apricot stars. Use remaining white chocolate to adhere extra chopped apricots and cranberries as desired. Reheat chocolate in the microwave for 10 seconds if it begins to harden. Allow chocolate to fully harden on the trees before serving.
