1 ¼ cups all-purpose flour (177g)
½ teaspoon salt
¾ teaspoon baking powder
¼ teaspoon freshly grated nutmeg
2 eggs
1 cup firmly packed light brown sugar (215g)
8 tablespoons butter, melted and cooled (113g)
1 teaspoon vanilla
½ cup chunky peanut butter (133g)
18 Reese's Peanut Butter Cups, cut in quarters
½ cup peanut butter-flavored chips (85g)
½ cup semi-sweet chocolate chips (85g)
extra peanut butter cups and chips for sprinkling on top

Steps:

  • Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with non-stick cooking spray. See note*
  • Combine the flour, salt, baking powder, and grated nutmeg in a bowl and whisk to combine.
  • In another mixing bowl, whisk eggs. Add brown, cooled melted butter, and vanilla. Whisk until smooth.
  • Add peanut butter and whisk until smooth.
  • Remove 1 tablespoon from the flour mixture and toss with peanut butter and chocolate chips.
  • Add flour mixture to wet mixture and stir with a wooden spoon until combined.
  • Add peanut butter chips, chocolate chips, and chopped Reese's cups and stir gently to combine.
  • Transfer mixture to prepared baking pan and smooth.
  • Bake until set and golden on the edges, about 30 minutes. Do not overbake.
  • Let cool completely before cutting into squares.

Nonstick cooking spray, for the pan
1 cup sugar
1 cup light corn syrup
1 teaspoon vanilla
1/2 teaspoon kosher salt
1 cup unsweetened peanut butter
7 cups cereal flakes, such as Special K
1 cup dark chocolate chips
1 cup butterscotch chips
Flaky salt
Sprinkles, for topping, if desired

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square pan with cooking spray and line with parchment so that wings come up the sides by 1 inch.
  • In a large pot, combine the sugar, corn syrup, vanilla and salt over medium heat and cook until the sugar is melted. Stir in the peanut butter, then the cereal. Pour into the prepared pan and pack it down firmly and evenly with a spatula. Scatter the chocolate chips and butterscotch chips all over the top.
  • Bake until the chips are melty, about 3 minutes. Use an offset spatula to spread the melted chips in an even layer all over the top. Sprinkle with flaky salt and sprinkles if using and allow to set at room temperature or in the fridge. Slice into 25 squares.

1/3 cup sugar
1/2 cup butter
FILLING:
2 eggs
1/2 cup corn syrup
1/2 cup sugar
1/4 cup crunchy peanut butter
1/4 teaspoon salt
1/2 cup sweetened shredded coconut
1/2 cup semisweet chocolate chips

Steps:

  • In a bowl, combine flour and sugar; cut in the butter until mixture is crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until lightly browned. , In a large bowl, beat the eggs, corn syrup, sugar, peanut butter and salt until smooth. Fold in coconut and chocolate chips. Pour over crust. Return to the oven for 15-20 minutes or until golden. Cool on a wire rack. Cut into bars.

½ cup white sugar
½ cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract, or more to taste
1 cup peanut butter
1 ¾ cups unbleached flour
¾ teaspoon baking soda
10 ounces chocolate chunks (such as Ghirardelli® Bittersweet Chocolate)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat butter, white sugar, and brown sugar together with an electric mixer in a large bowl until light and fluffy. Beat egg and vanilla extract into the butter mixture. Add peanut butter and beat until incorporated.
  • Sift flour and baking soda together in a separate bowl; mix into the butter mixture. Fold chocolate chunks into the mixture.
  • Spread the batter into a 13x9-inch baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool completely before cutting into squares.

Found in a Nestle booklet. It has been a while since I've made these but my notes say they stay chewy & moist for a while if kept tightly covered. Pretty sweet so cut into smaller bar sizes (2"x1"). A little bite goes a long way.

1 cup brown sugar, firmly packed
2/3 cup butter, softened (equals 10 2/3 tbls)
1/3 cup light corn syrup
1 teaspoon vanilla
4 cups quick oats, uncooked
1 cup semi-sweet chocolate chips
2/3 cup creamy peanut butter
1/2 cup unsalted peanuts, chopped

Steps:

  • Preheat oven to 350°F Grease at 13x9" baking pan.
  • In a large mixer bowl, beat brown sugar and butter together until creamy.
  • Beat in corn syrup and vanilla; then stir in uncooked oats.
  • Press dough into bottom of the prepared pan.
  • Bake 15 minutes. Cool slightly (about 10-15 minutes).
  • While this is cooling, in a small saucepan, combine chocolate chips and peanut butter. Cook over low heat, stirring constantly until smooth.
  • Spread this mixture over the crust. Sprinkle with chopped peanuts and then cool completely. Refrigerate 10 minutes to set chocolate mixture after letting it cool on its own to set chocolate mixture.
  • Cut servings into 2x1 inch bars.

This is adapted from the The Cake Mix Doctor cookbook. I have made them for many different occasions and I always bring home an empty plate.

Number Of Ingredients 8

1 (18 1/4 ounce) package yellow cake mix
1 cup chunky peanut butter
8 tablespoons butter, melted
2 large eggs
2 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
2 teaspoons pure vanilla extract

Steps:

  • Place rack in the center of the oven and preheat the oven to 325 degrees F. Set aside an ungreased 13x9 inch baking pan.
  • Place cake mix, peanut butter, melted butter and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. The mixture will be thick. Reserve 1 1/2 cups for the topping. Transfer the remaining crust mixture to the pan. Using your finger tips, press the crust evenly over the bottom of the pan so that it reaches all sides. Set aside.
  • For the filling, place the chocolate chips, condensed milk, and 2 tablespoons butter in a medium-size heavy saucepan over low heat. Stir and cook until the chocolate is melted and the mixture is well combined, 3-4 minutes. Remove the pan from the heat and stir in the vanilla. Pour the chocolate mixture over the crust, and spread it evenly so that it reacheds the sides of the pan. Crumble the reserved crust and scatter it evenly over the chocolate. Place in the oven.
  • Bake until light brown, 25 to 30 minutes. Remove from the oven and place on a wire rack to cool for at least 30 minutes before cutting.
  • Cut into 48 bars. Store in an airtight container at room temperature for up to 3 days or in the refrigerator up to one week. (If they last that long) These freeze beautifully.

2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
  • Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
