Steps:
- Preheat oven to 350 degrees.
- Place the hazelnuts in a food processor and grind coarsely. Reserve 1/4 cup of the hazelnuts. Grind the remaining nuts fine and add the oil. Blend the mixture thoroughly into a hazelnut butter. Set aside.
- Cream the butter and sugars together until light and fluffy (this can be done in the washed food processor or with an electric mixer in a bowl). Beat in the hazelnut butter, the egg and the vanilla. Mix thoroughly.
- Sift the flour and add with the baking soda and the salt. Mix thoroughly and add the reserved hazelnuts. Using a teaspoon, form the dough into balls and arrange them 2 inches apart on baking sheets that have been greased or lined with parchment paper. Using the prongs of a fork that have been dipped into flour to prevent sticking, flatten the balls into 1 1/2 inch rounds (Tip: If you want a clearly visible criss-cross design on the cookies, chill dough for 30 minutes before doing so).
- Bake in the middle of the oven for 8-to-9 minutes or until the cookies are golden. Cool on racks. The cookies will keep for about a week in a sealed jar.

- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together butter, brown sugar, and white sugar until fluffy. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats and nuts until just blended. Drop by heaping teaspoonfuls onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
- Bake for about 12 minutes in the preheated oven. Cool cookies on a wire rack.

- In a bowl, combine eggs and sugars. Add butter; mix well. Add oats. - Preheat oven to 350F. Line baking sheets with parchment paper and set aside.
- In a large mixing bowl, whisk together oats, flour, cocoa powder, baking soda, and salt.
- In another bowl using a handheld or stand mixer, cream together butter and sugars until light and fluffy, about 2 minutes.
- Beat in egg, egg yolk, and vanilla, mixing untii just combined.
- Add in dry ingredients and mixing until just combined. Do not over mix. Fold in chocolate chunks.
- Drop dough by rounded tablespoon onto the prepared baking sheet. Bake for 10 -12 minutes.
- Cool on the baking sheets for 2 minutes, then remove to a rack to cool 5 minutes longer.

- Cream butter and sugars in a large bowl. Add eggs and vanilla and beat well.
- slowly add dry ingredients, mixing well after each addition.
- Add rolled oats and raisins. Let stand for 30 minutes.
- Roll into balls, about 1 1/2 tsp in each. Place 2 inches apart on a greased cookie sheet and bake at 350 degrees for 8 minutes or until golden. Cool completely.

- Heat oven to 180C/160C fan/gas 4 and lightly grease a non-stick baking tray (or line a normal baking tray with baking parchment). Tip the butter and syrup into a small non-stick pan and melt together, then add the apple and cook, stirring, over a medium heat until it softens, about 6-7 mins. Stir in the cinnamon and raisins.

- Using a hand mixer, or an electric mixer fitted with the paddle attachment, cream the softened butter and both sugars on a low speed until smooth. Add in the eggs one at a time, making sure each is fully combined before adding the next. Scrape down the sides of the bowl, add in the vanilla, and honey and mix until combined.
- Sift together flour, baking powder, baking soda, cinnamon and salt. Keeping the mixer on low, mix in dry ingredients until completely combined. Add in the oats, hazelnuts, and optional chocolate chips. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat.
- Roll balls of dough (about 2 Tablespoons each) and place two inches apart on the baking sheet. Bake for 12-13 minutes, or until the edges are golden brown and the center is still just a little shiny. Remove from the oven and let cool on the baking sheet for at least five minutes before removing. They will continue baking during this time.
