PIZZA DIP THREE WAYS
Perfect for serving during the big game, this pizza dip will satisfy all your friends, is endlessly customizable -- and it's fun to eat, too.

Steps:
- Preheat the oven to 375 degrees F.
- Dust a work surface with flour to keep the dough from sticking. Divide each dough ball into 12 equal-size pieces. Roll each piece into an 8-inch rope and twist into a knot. Arrange the knots around the edge of a 13-by-18-inch sheet pan, leaving 1/4 inch between each. Use the remaining knots to form 2 lines to divide the pan into 3 sections widthwise. Cover the pan with a clean kitchen towel and let the dough rise, about 15 minutes.
- Meanwhile, make the garlic oil. Combine the butter, olive oil, parsley, garlic powder, fresh garlic and 2 teaspoons salt in a medium bowl. Stir to combine.
- Brush the knots with about 1/4 cup of the garlic oil and sprinkle with 2 tablespoons Parmesan. Bake until just starting to brown, about 20 minutes. (The knots won't be fully baked.) Reduce the oven temperature to 350 degrees F.
- Meanwhile, combine the cream cheese, ricotta, heavy cream, red pepper flakes, 1 cup mozzarella, the remaining 1/2 cup Parmesan and 6 tablespoons of the garlic oil in a large bowl. Beat with an electric mixer until fluffy and combined, about 3 minutes.
- Make the dips in the pan of half-baked knots. Divide the marinara sauce evenly between the far left and far right sections. Sprinkle half of the pepperoni over the right-hand section. Sprinkle half of the peppers and onions over the left-hand section. Then dollop and spread two-thirds of the ricotta mixture in the center section. Divide the remaining ricotta mixture between the right and left sections, dolloping it over the sauce and gently spreading with the back of a spoon or small offset spatula. Divide the remaining cup mozzarella between the far right and far left sections, sprinkling it on. Top the far right section with the remaining pepperoni and the far left section with the remaining peppers, onions and olives. Bake until the knots are golden and the dips are bubbling and lightly browned, 20 to 25 more minutes.
- Brush the knots with the remaining garlic oil and sprinkle the fresh basil over the center section.

- Heat oil and garlic in a large saucepan or Dutch oven until garlic starts to sizzle and turn golden. Add tomatoes, tomato paste, basil and oregano; bring to a simmer. Simmer, uncovered, until sauce is thick enough for dipping, 15 to 20 minutes. Cool and refrigerate.

- Microwave butter, 1/2 teaspoon garlic powder and red pepper flakes, covered, until butter is melted. Cut each dinner roll into thirds; roll each piece into a ball. Dip dough balls in butter mixture; place along outer edge of a 10-in. cast-iron skillet, leaving center open. Gently stack remaining balls on top of bottom layer, leaving some space between them. Cover and let rise until almost doubled, about 30 minutes., Preheat oven to 400°. Bake until dough balls are set and beginning to brown, 15-18 minutes., Meanwhile, combine cream cheese, 1 cup mozzarella, mayonnaise, Italian seasoning and remaining garlic powder; spoon into center of skillet. Layer with 1/4 cup mozzarella and pizza sauce. Top with remaining mozzarella and pepperoni. Brush rolls with some of remaining butter mixture; sprinkle with Parmesan. , Bake until dip is heated through and rolls are golden brown, about 10 minutes, covering loosely with foil as needed to prevent rolls from becoming too dark. Sprinkle with basil.

CHUNKY PIZZA SAUCE
I like a thick, chunky pizza sauce with more flavors than just tomato. I couldn't find a recipe like this, so I combined bits from two or three others and made my own.

- Heat oil in a dutch oven.
- Saute onions, peppers and garlic, stirring often, until soft.
- Add remaining ingredients and bring to a boil.
- Reduce heat and simmer gently, uncovered, for 20 minutes, stirring often.
- Makes about 4 cups (enough for two 15" pizzas).
- I usually make one pizza and freeze the other half for next time.

- In medium saucepan, heat oil over medium. Cook onion and garlic until translucent, stirring, 3 minutes.
- Add whole, peeled tomatoes (lightly crushed with hands), crushed tomatoes, oregano, and a pinch of sugar (optional).
- Simmer, stirring until thickened, 10 to 20 minutes. Season with salt and pepper. Freeze any leftover sauce for up to 3 months.

PEPPERONI PIZZA DIP WITH GARLIC KNOTS RECIPE BY TASTY

- Preheat the oven to 350°F (180°C).
- Make the dip: In a medium bowl, combine the cream cheese, ½ cup (55 g) mozzarella, Parmesan, and lemon juice. Mix with an electric hand mixer until smooth. Stir in the salt, pepper, red pepper flakes, and oregano.
- Transfer the cream cheese mixture to a 9-inch (22 cm) pie dish and spread evenly. Top with the tomato sauce, then the remaining 2 cups (100 G) of mozzarella cheese. Finish with the pepperoni.
- Bake the dip for 18-20 minutes, until the cheese is melted and bubbling.
- While the dip bakes, make the garlic knots: Line 2 baking sheets with parchment paper.
- Unroll the pizza dough on a flat surface. Cut in half lengthwise, then crosswise 12 times so you have 24 small strips. Cover with a damp kitchen towel to keep from rising.
- In a small bowl, mix together the melted butter, salt, garlic powder, minced garlic, Parmesan, and parsley.
- Tie each dough strip into a knot, then place on the prepared baking sheets. Brush generously with the garlic butter.
- Bake the garlic knots for 10-12 minutes, until puffed and golden.
- Serve the garlic knots warm with the pepperoni dip.
