Again this recipe comes from a favorite cookbook of mine "A Real American Breakfast: The Best Meal of the Day, Any Time of the Day" by Cheryl Alters Jamison and Bill Jamison. Please Note: If you don't have leftover potatoes for the Home Fries, you can make equally good home fries from scratch. Starting with raw potatoes means a longer cooking time, but they require little more than an occasional stir while you're preparing the rest of your breakfast and figuring out your going to do with the rest of your day.

3 tablespoons unsalted butter
1 1/2-1 3/4 lbs russet potatoes or 1 1/2-1 3/4 lbs yukon gold potatoes, peeled and cut into 3/4-inch cubes
salt & freshly ground black pepper
1/4 cup diced onion
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
1/2 teaspoon chili powder (optional)
minced fresh chives (optional) or parsley (optional)

Steps:

  • Warm the butter in a 10- to 12-inch cast-iron skillet over medium-low heat.
  • Stir in the potatoes, and when coated with a bit of butter, season them with salt and pepper and cover the skillet.
  • Cook for 20 minutes, during which you should hear only a faint cooking sound.
  • Uncover the potatoes and cook for 30 minutes longer, turning them at 10 minute intervals and patting them back down.
  • When you turn them the first time, stir in the onion, bell peppers, and chili powder if desired.
  • As the potatoes soften, pat them down more lightly, bringing as much of their surface in contact with the skillet as possible without mashing them.
  • Cook the potatoes for about 20 minutes longer, turning them at 5-minute intervals.
  • During the last 10 minutes, bring the heat up to medium and, if you wish, add more salt and pepper.
  • The home fries are ready when the potato cubes are richly browned and clearly crisp with tender, melting centers.
  • Plate them up immediately, scatter with chives if you wish, and serve.

Heavenly Country-Style Home Fries image

These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

2 tablespoons butter
3 large potatoes, diced, unpeeled (white or red)
1 medium onions, chopped or 1 cup chopped onion
1/2 teaspoon ground paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
  • In a large, non-stick skillet over medium heat, melt butter.
  • Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
  • Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.
  • When potatoes are fork-tender, remove skillet cover.
  • With the back of your spatula, pat potatoes down into an even layer in skillet. Allow to fry untouched for 2 minutes. Then turn potatoes over and do the same for another 2 minutes. This will nicely brown and crisp the outside of the potatoes.
  • Serve immediately.

I found this on another website, and decided to give it a try. A twist on the old fry sauce, from Paula Deen. At first I wasn't sure about it--the color isn't the most attractive, and it took several dips to connect to the flavor. But I kept eating...and eating...and eating some more. They are addictive, and fortunately I have extra sauce left, because I'm out of ranch mix. Darn that Paula.

1 (26 ounce) bag frozen shoestring French fries (I used Ore-Ida Extra Crispy Fast Food Fries)
1 (1 ounce) package hidden valley ranch dressing mix
1/2 cup ketchup
1/2 cup mayonnaise

Steps:

  • Preheat oven to 450. Measure out 1 tablespoon of ranch dressing mix and set aside. In a small bowl, mix mayo and ketchup until blended and smooth. Stir in remaining dressing mix. Refrigerate. Spray a rimmed baking sheet with nonstick cooking spray. Place fries on sheet in a single layer and sprinkle evenly with the tablespoon of dressing mix you set aside earlier. Bake for 15-20 minutes, or until fries are crispy and golden. Remove from oven and serve with the sauce for dipping.
  • NOTE~I recommend preparing the fry sauce the day before, as it tastes even better after the flavors have had time to blend. It's best served at room temperature. Also, I would empty the mix into your hand instead of sprinkling from the packet, as it would likely be more evenly distributed that way. Some of my fries had too much on them, making them a little too salty.

  • Add dressing mix and shake to coat fries.
  • Place on a jelly roll pan in a single layer.
  • Bake at 425º for 30-35 minutes or until golden. Stir and bake 5 to 10 minutes longer.

Steps:

  • Scrub the potatoes well and cut into thin strips. (I use my french fry cutter).
  • Place in a large zip-loc bag and spray with cooking spray while turning to coat.
  • Sprinkle in 1/2 the ranch mix, toss to coat; repeat.
  • Place on a large cookie sheet coated with cooking spray or non-stick foil. Bake at 450° for 25-30 minutes. Turning once. (Ovens vary so check at 20 minutes!).

1/2 cup mayonnaise

Steps:

  • Preheat oven to 450°. Arrange french fries in a single layer in a greased 15x10x1-in. baking pan. Sprinkle with 2 tablespoons dip mix; toss lightly to coat. 1/2 cup zesty Italian salad dressing
1/2 teaspoon black pepper
1 large red onion, cut into chunks
1/4 cup chopped fresh parsley
1/4 cup bacon bits
1 cup 2% shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 450.
  • Toss potatoes with dressing and pepper in greased 15"X10"X1" pan. Spread in single layer.
  • Bake 20 minutes; stir in onions.
  • Return to oven and continue baking 20 minutes (or until tender).
  • Sprinkle with parsley and bacon bits, stir. Top with cheese. Bake 2 more minutes.
