ROAST LEG OF LAMB WITH DARK BEER, HONEY AND THYME

- Preheat oven to 375 degrees F.
- Open the leg of lamb and season the inside with half the garlic, half the thyme leaves, 1 tablespoon olive oil, salt, and pepper. Tie the lamb closed with string. Place it in a roasting pan, season with salt and pepper, and brush it with olive oil. In a bowl mix the beer, honey, remaining garlic and thyme, juniper berries, and bay leaves. Pour this over the lamb and put the roasting pan into oven. Immediately turn the oven down to 325 degrees F. Baste every 10 minutes. Cook 12 to 13 minutes per pound for medium rare or until internal temperature reaches 130 to 135 degrees F. Remove the roast from the oven, cover it loosely with foil and allow it to rest for about 10 minutes before carving. Serve with pan drippings.

- Pulse garlic, parsley, fennel seeds, and 1/2 cup fennel fronds in a food processor until very finely chopped. With motor running, slowly add 1/4 cup oil and process until smooth; season generously with salt and pepper (mixture should taste quite salty as this is the only seasoning meat will get). Rub parsley mixture all over lamb. Transfer to a roasting pan, cover, and chill at least 8 hours.
- Let lamb sit at room temperature 1 hour. Bring vinegar and honey to a boil in a small saucepan. Reduce heat and simmer, stirring occasionally, until slightly thickened, 8-10 minutes. Set glaze aside.
- Place racks in lower third and middle of oven and preheat to 325°F. Toss fennel and carrots with remaining 1/4 cup oil in a medium bowl and arrange half around lamb in roasting pan; place remaining vegetables on a rimmed baking sheet.
- Roast vegetables on baking sheet on lower rack and lamb on middle rack until an instant-read thermometer inserted into the thickest part of lamb registers 100°F, about 1 hour.
- Increase oven to 450°F, brush roast with glaze, and continue to roast until an instant-read thermometer registers 120°F, 20-25 minutes longer. Transfer lamb to a cutting board and let rest 30 minutes before carving (temperature will rise to 140°F for medium-rare while lamb is resting).
- Continue to roast vegetables, tossing occasionally, until golden and tender, 20-25 minutes longer.
- Serve lamb with vegetables, topped with fennel fronds.
- DO AHEAD: Lamb can be rubbed with parsley mixture and vegetables can be prepped 1 day ahead. Cover separately and chill.

- Combine the honey, mustard, rosemary, ground black pepper, lemon zest and garlic nicely in a bowl.
- Rub this spice and honey mixture now into the lamb.
- Cover.
- Allow to marinate, refrigerated, overnight so to allow the flavours to intensify to their fullest.
- Preheat the oven to 450F (230C).
- Place lamb on a rack in a roasting pan.
- Sprinkle with salt to taste.
- Bake at 450F (230C) for 20 minutes.
- Reduce heat to 400F (205C).
- Roast for 55-60 minutes more.
- There is an accompanying note with the recipe that says the internal temperature will measure 145F (63C) for medium rare and 165F (74C) for well done.

- Heat the oven 375°F/190°C.
- Cut the ginger into slivers.
- Using a sharp knife, make small cuts in the leg of lamb and insert the ginger and rosemary.
- Mix the butter and honey together and spread this over the lamb.
- Put in a roasting tin, pour in half of the cider and cover loosely with foil.
- Roast in the oven allowing 25 minutes per pound.
- When three-quarters cooked, remove the foil and continue cooking, basting frequently with the juices from the roasting tin, adding more cider if necessary.
- Remove the joint from the oven, lift out of the pan, removing any excess fat, and pour in the rest of the cider to deglaze the pan.
- Boil this up well, return the non-fatty juices and thicken with a little arrowroot if you wish.
- A well seasoned mixed mash of carrot, parsnip, turnip and potatoes tastes perfect with the roast leg of lamb.

- Allow the leg of lamb to rest at room temperature for 1 hour before cooking.
- Preheat an oven to 400 degrees F (200 degrees C). Place the oven rack in the lower third of the oven.
- Whisk the garlic, pepper, red pepper flakes, bay leaf, rosemary, 1/2 cup olive oil, vinegar, and honey together in a small bowl. Rub the mixture over the lamb, then season with 2 tablespoons coarse salt. Set aside. Place carrots, potatoes, beet, yam, and turnips in a large roasting pan. Toss with 2 tablespoons olive oil and a pinch of salt. Arrange the seasoned leg of lamb on top of the vegetables.
- Roast the lamb in the preheated oven for 20 minutes, then reduce oven temperature to 325 degrees F (165 degrees C). Continue roasting to your desired degree of doneness, about 90 minutes more for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
- Allow the leg of lamb on a cutting board, tented with aluminum foil, for 30 minutes before carving. Place the vegetables on a serving platter and cover with aluminum foil to keep warm until ready to serve.

- Bring leg of lamb to room temperature, about 2 hours.
- Pour wine into a slow cooker. Mix lemon juice, honey, mustard, garlic, vinegar, rosemary, thyme, sea salt, and pepper together in a bowl until a thick paste forms. Massage paste into the lamb using your hands; gently place into the slow cooker.

- Preheat the oven to 425°F. Calculate the cooking time for the lamb: 12 minutes per pound for medium rare, 15 minutes per pound for medium. Score the fat around the leg of lamb in a crisscross pattern. Drizzle a little olive oil over the fat, then rub all over with salt and pepper. Place in a deep roasting pan and scatter the garlic and thyme over and around the leg. Sprinkle with the lemon juice and drizzle on more olive oil. Sprinkle with a little more seasoning. Roast in the hot oven for 20 minutes.
- Quarter and core the apples. Remove the lamb from the oven and reduce the heat to 350°F. Scatter the apples around the lamb, and baste the lamb with the cider. Turn the leg over and drizzle on 2 tablespoons of honey. Roast for 30 minutes.
- Turn the lamb around. Baste with the pan juices, then drizzle another tablespoon of honey over the meat. Continue to roast for the calculated time. To check for doneness, insert a skewer into the thickest part of the lamb, then press the meat lightly: the redder the juices, the rarer the meat. Lift the lamb onto a carving board and cover with a piece of foil. Let rest in a warm place while you prepare the gravy.
- At this point, the apples and garlic in the roasting pan should be very soft. Press with a fork, then tip the entire contents of the pan into a fine sieve set over a saucepan. Push down with the back of a ladle to extract all the juices and flavor from the apples and garlic. Discard the pulp. Place the saucepan over medium heat and add the stock. Bring to a boil and let bubble vigorously until the sauce has thickened to the desired gravy consistency. Taste and adjust the seasoning, then pour into a warm gravy boat. Carve the lamb into thin slices and serve with the apple and cider gravy.
