2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.
  • Mix apples, pears, 3/4 cup brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 9x9-inch glass pan. Sprinkle oat mixture atop apple-pear mixture; top with almonds.

2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 tablespoons raw honey
1/2 teaspoon salt
2 tablespoons of lemon juice
1 cup regular oats
1/2 cup white whole wheat flour
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into pieces

Steps:

  • Preheat oven to 350.
  • To a large bowl add, sliced pears, sliced apples, cinnamon, nutmeg, raw honey, salt, and lemon juice. Gently toss to coat all the fruit with the spices.
  • Pour fruit mixture into 13×9″ baking dish or 11″ skillet.
  • In medium bowl, add regular oats, flour, brown sugar, cinnamon, salt, and butter.
  • Using your hands or a pastry blender, combine the butter into the dry ingredients until everything is combined and crumbly.
  • Sprinkle Crisp topping on top of the fruit mixture.
  • Bake for 35-40 minutes, until top is browned.

Steps:

  • For the crisp topping: In a large bowl, mix together the flour, granulated and brown sugars, oats, pecans and salt. Add the cubed cold butter and mix until crumbly.
  • Chill until ready to use. Store leftover topping in the freezer.
  • For the crisp filling: Peel the apples and pears, then dice into large pieces and put in a bowl. Toss in the orange and lemon zest and juice, granulated sugar, cornstarch, vanilla, cinnamon and ginger. Add the cranberry sauce and toss until thoroughly combined
  • For the toffee pecans: Combine the pecans, granulated sugar, butter and salt in a medium saucepan and cook over medium heat until caramelized and golden, 5 to 10 minutes. Spread on a half-sheet pan and leave until cooled.
  • For the cinnamon creme anglaise: Heat the cream, milk, granulated sugar, ground cinnamon and cinnamon sticks in a saucepan until it boils. Remove from the heat and allow the mixture to steep for about 20 minutes. Remove and discard the cinnamon sticks.
  • Reheat the cream mixture. Whisk together the egg yolks. Then slowly whisk the cream mixture into the egg yolks by the ladleful. Return the mixture to the pot and heat over medium-high heat, whisking constantly, until the mixture coats the back of a spoon, 5 to 8 minutes.
  • Strain the mixture and divide among six 2- to 4-ounce small ramekins.
  • To assemble the crisp: Preheat the oven to 325 degrees F.
  • Grease six 6-ounce brulee dishes with butter. Spoon the crisp filling into the dishes and divide the crisp topping evenly to top them. Bake until the tops are golden and the edges are bubbling, 30 to 40 minutes, depending on the depth of the dishes.
  • Let cool until just warm, 20 to 30 minutes. Top with the toffee pecans and serve with the cinnamon creme anglaise.

2 tablespoons hemp seeds
½ cup crushed raw walnuts
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl combine filling ingredients and stir until apples and pears are completely coated.
  • Pour the pear and apple filling into a large oven-safe baking dish.
  • In the same large bowl used to make filling, add rolled oats, almond flour, shredded coconut, coconut palm sugar, pumpkin seeds, hemp seeds, walnuts, cinnamon, and salt and stir to combine.

Steps:

  • Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan or 9 inch skillet with nonstick cooking spray. Set aside.
  • To make the topping: Combine the flour, oats, brown sugar, cinnamon and walnuts in a large bowl until well-combined. Pour in the melted butter and use your hands to combine until the mixture becomes crumbly and resembles wet sand. You may need to use your hands/fingers to form into nice crumbles. Cover the bowl with plastic wrap and place it in the fridge until ready to use.
  • To make the filling: place pears, maple syrup, cinnamon, vanilla and arrowroot starch in a large bowl and toss to combine. Take 1/3 cup of the topping mixture and toss with the pear mixture. Place the pear mixture in a prepared pan and sprinkle evenly with the remaining topping.

  • By Hand Method: In a medium-size bowl whisk together the flour, 1 tsp cinnamon, brown sugar, and salt. Add the cubed, chilled butter and cut in with a fork or pastry cutter, until it resembles coarse crumbs. Mix in the oats and nuts. Sprinkle over the apple-pear mixture.
  • Bake at 375°F for 40 minutes or until apples and pears are tender and topping is golden brown. Cool 20 minutes on a wire rack. Serve warm or at room temperature.
