Homemade Cinnamon Grahams and Salted Chocolate Ganache S'mores image

Even though graham crackers and s'mores are completely American, my Hungarian-American kids love them, and they're always on our mind after goulash, since we usually make goulash over a live fire. Andras' mom bakes a lot with graham flour, since many Hungarian pastries are more rustic-so we've learned to love the sweet, earthy flavor. If you don't have it you can use a local or freshly-ground whole-wheat flour, which has the earthy graham-forward flavor. The traditional sweetness comes from honey and a touch of molasses, which give these a familiar flavor (even the dough tastes great!). If you want a lighter "honey" graham style, skip the molasses. The beautiful thing about homemade grahams is you can make them in any shape you want-rectangles with scored quarters (like boxed grahams), squares or even rounds.Whenever I make s'mores, I set the chocolate squares onto the grahams and let it melt by the fire for a long time before I stack with my blistered marshmallow. The melt factor helps it deliver far better on satisfaction. But it's far easier to make a quick ganache, with the ratio slightly skewed in favor of the chocolate, to make a just-spreadable paste for homemade grahams. Then no matter what kind of marshmallows I use, we get a totally dreamy, melty result.

1 1/4 cups graham flour
1 cup all-purpose flour, plus more for the surface
1/2 cup dark brown sugar or coconut sugar
1 teaspoon baking soda
1 teaspoon fine sea salt
1/4 teaspoon cinnamon
Pinch ground nutmeg
3 ounces (6 tablespoons) unsalted butter, melted
1/3 cup heavy cream, half-and-half or whole milk, at room temperature
1/4 cup honey
1 tablespoon molasses, optional
1 egg, well beaten
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
Salted Chocolate Ganache, recipe follows
Toasted marshmallows
1/2 cup heavy cream
5 ounces bittersweet or dark chocolate, finely chopped
Flaky sea salt, such as Maldon, for sprinkling

Steps:

  • For the homemade cinnamon grahams (graham crackers): Whisk together the flours, sugar, baking soda, sea salt, cinnamon and nutmeg. In a separate bowl, whisk together the melted butter, heavy cream, honey and molasses if using. Combine the wet and dry ingredients and stir to make a moist dough. Divide in half, press into 2 squares (roughly 6-by-5-inches each), wrap tightly in plastic and chill for at least 1 hour and up to 3 days.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or silicone baking sheets.
  • Dust a clean work surface lightly with flour. Working with 1 portion at a time, roll each square into a larger 10- to 11-inch square, about 1/8 inch thick, turning the dough frequently to ensure it isn't sticking and taking care to keep it in a rough rectangular shape. (Use a pastry scraper and a light dusting of flour when it sticks.) Repeat with the remaining dough.
  • Use a sharp knife or a pastry cutter to cut each square of dough into 16 squares, roughly 2 1/2-by-2 1/2-inches, trimming the edges as needed. Use a fork to mark each a few times. Brush with the beaten egg.
  • For the cinnamon sugar: Whisk together the sugar and cinnamon in a small bowl, then sprinkle lightly over each graham.
  • Bake, rotating the trays halfway through, until the grahams are deeper brown around the edges, 15 minutes. Cool completely on a rack and serve the day they are baked, or store, well-wrapped, for up to 3 days. Freeze any additional grahams for up to 2 weeks.
  • To serve: Use a little knife or a spoon to spread some Salted Chocolate Ganache on a graham, then top with a toasted marshmallow and another graham.
  • Heat the cream in a small pot until simmering. Place the chocolate in a medium, heat-proof bowl and pour the simmered cream over the top. Let stand for 2 minutes before whisking until a smooth paste. Pour into a small pot or jar and sprinkle the top with flaky sea salt. Chill until ready to use (it should be thick but still easy to spread with an offset spatula or a spoon). Makes 3/4 cup.

1 cup whole milk
3 tablespoons unsalted butter
Oil, for greasing
3 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon salt
1 large egg
One 1/4-ounce packet instant yeast (2 1/4 teaspoons)
1/4 cup unsalted butter, at room temperature
3/4 cup light brown sugar
1/4 cup granulated sugar
2 tablespoons ground cinnamon
1/2 cup brown sugar
2 cups pecan pieces, toasted
1 pound granulated sugar
1/2 cup corn syrup
1 cup heavy cream
4 ounces butter
1 1/2 cups peeled and diced apples
2 tablespoons grapeseed oil
4 ounces rum, such as Bacardi 151
1 quart vanilla ice cream, for serving

Steps:

  • For the cinnamon buns: In a pot, combine the milk and the butter and bring to a simmer to melt the butter. Remove from the heat and cool the mixture to 120 degrees F. Grease a bowl with oil.
  • In a stand mixer fitted with a dough hook, combine the cooled milk mixture, 1 cup of the flour, the sugar, salt, egg and yeast. Mix with a dough hook on low for 3 minutes. Add the remaining 2 1/2 cups flour and mix on low until the dough forms a ball and pulls away from the sides of the bowl. Turn the speed of the mixer up to medium-high and knead the dough for 8 minutes.
  • Transfer the dough to the greased bowl and cover with plastic wrap and kitchen towel. Place the dough in a warm place and allow it to proof for 2 hours.
  • For the filling: Preheat the oven to 375 degrees F. Turn the dough out onto a floured work surface and roll out to a 1/4-inch thick sheet. Spread the butter over the surface of the dough leaving about a 1/2-inch border around the edges uncovered.
  • In a bowl combine the brown sugar, granulated sugar and cinnamon. Spread an even layer of the filling on top of the buttered dough. Roll up the sheet of dough into a log. With the seam-side down cut the log into 12 to 16 even portions. Place the portions in large muffin tins and allow them to proof again until the buns fill the muffin tin.
  • Bake for 20 to 30 minutes.
  • For the pecans: In a pan, combine the brown sugar and 2 tablespoons water, and cook until the water is cooked off and the sugar is melted.
  • In a bowl, toss the pecan pieces with the melted sugar. Spread the coated pecans on a sheet pan and cool. Break up the candied pecans once they are cooled, and reserve for later use.
  • For the caramel sauce: In a pot over medium heat, combine the sugar and corn syrup. Stir regularly until the sugar begins to melt, about 10 minutes. Once melted, stir the sugar until it reaches a golden-caramel color. Remove the caramel from the heat and slowly stir in the heavy cream. Stir in the butter and hold.
  • In a saute pan, heat the oil. Add the apples and saute until tender. Add the rum and flambe. Add the apples to the caramel sauce and simmer to marry the flavors, 2 to 3 minutes.
  • To serve, warm 6 of the cinnamon buns and place the one bun in the center of each plate. Spoon the apple-rum caramel sauce over the cinnamon buns. Sprinkle the candied pecans over the caramel sauce. Top the dressed cinnamon buns with a scoop of vanilla ice cream.

1 cup plus 6 1/2 tablespoons sugar
3/4 cup water
6 tablespoons dark corn syrup
3 cinnamon sticks, broken in half
6 whole cinnamon graham crackers, crushed to coarse crumbs
4 1/2tablespoons unsalted butter, melted
6 medium peaches, pitted, sliced into wedges
1 1/2 tablespoons fresh lemon juice
3/4 teaspoon ground cinnamon
French vanilla ice cream
6 cinnamon sticks (optional)

Steps:

  • Stir 1 cup plus 2 tablespoons sugar, 3/4 cup water, corn syrup and halved cinnamon sticks in heavy medium saucepan over medium heat until sugar dissolves; bring to boil. Reduce heat to low; simmer until syrup is reduced to 1¤ cups, about 20 minutes. Cool; remove cinnamon sticks. (Can be made 1 week ahead. Cover; refrigerate.)
  • Preheat oven to 350°F. Combine cracker crumbs, butter and 1 1/2 tablespoons sugar in small bowl; toss to coat evenly. Spread mixture out on small baking sheet. Bake until golden, stirring occasionally, about 5 minutes. Cool.
  • Mix peaches, 3 tablespoons sugar, lemon juice and ground cinnamon in medium bowl. Let stand until juices form, at least 15 minutes and up to 1 hour.
  • Place 2 scoops of ice cream in each of 6 bowls. Spoon peaches and juices over ice cream. Drizzle with syrup and sprinkle with crunch topping. Garnish with cinnamon sticks, if desired, and serve.
