CINNAMON-LOG SLICES
The dough for these bark-like slice-and-bake cookies is amped up with cinnamon and cocoa and finished with a crust of raw sugar.

Steps:
- Beat together butter and granulated and brown sugars with an electric mixer on medium-low speed until creamy, about 3 minutes. Beat in whole eggs 1 at a time, then salt and 1 teaspoon cinnamon, until combined. Beat in milk and vanilla. Add flour a little at a time, beating until incorporated. Divide dough into 4 balls. Roll 1 ball into a 12-inch log; wrap in parchment and refrigerate, along with remaining 3 balls of dough, until firm, about 1 hour.
- Combine cocoa powder and remaining 1 teaspoon cinnamon and sprinkle over work surface. Roll out 1 ball of dough into a 6-by-12-inch rectangle in cocoa mixture. Flip rectangle over onto lightly floured work surface so that 1 long side is facing you; brush off excess cocoa mixture. Place log of dough, also with a long side facing you, in center of rectangle and wrap rectangle around log to enclose completely. Firmly squeeze and massage wrapped log of dough to adhere rectangle to log. Repeat process with second ball of dough, rolling it out into an 8-by-13-inch rectangle, then with final ball, rolling it out into a 10-by-14-inch rectangle. Refrigerate log until firm, about 1 hour, 15 minutes. Log can be stored in refrigerator up to 1 day.
- Preheat oven to 350 degrees. Lightly beat egg white. Brush outside of log with egg white and roll in turbinado sugar, patting to adhere. Refrigerate until sugar is set, about 10 minutes. Slice log into 1/4-inch-thick rounds and transfer to parchment-lined baking sheets. Bake until slices are golden around edges (rings may separate slightly), 18 to 20 minutes. Let cool completely. Slices can be made 3 days ahead and stored at room temperature.

- Roll the bread slices until very flat. Butter the bread, and sprinkle with cinnamon sugar. Starting on one side, roll up the bread slice until tight. Repeat with the second bread slice. Cut the bread rolls into 1 inch slices.
- Mix the confectioners' sugar with the water in a small bowl to make a thin frosting. Drizzle frosting over the bread slices, and serve.

CINNAMON SLICES
Steps:
- If using loaf, slice into 24 thin pieces. If using rolls, cut each roll in half and flatten each half into a 2×3-inch oval. Combine the sugar and cinnamon and mix well. Dip each dough piece in the melted butter and then in the cinnamon sugar. Line them up in a sprayed 9×5-inch loaf pan, each piece on it's edge, to make a loaf shape. Cover with plastic wrap and let double in size. Remove wrap and bake at 350°F 20-25 minutes. Cool in pan 5 minutes and then place on cooling rack. Combine glaze ingredients and drizzle over warm cinnamon slices.

Steps:
- Trim crusts from bread.
- Using a rolling pin, roll out bread slices flat so they are only 1/4" thick.
- Beat cream cheese, egg white, and powdered sugar together on medium speed until smooth.
- Spread evenly on top of each bread slice, then roll up the slices into tight logs.
- Stir together granulated sugar and cinnamon and place into a bowl.
- Place melted butter into another bowl.
- Have ready some lightly greased baking sheets and preheat oven to 350°F.
- Dip bread logs into butter, then roll in sugar mixture, then place onto baking sheets.
- Bake for about 15 minutes, or until browned.
- Let cool on wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
- Arrange sweet potato slices on the baking sheet. Brush with 1/2 the butter. Mix the sugar and cinnamon in a small bowl, and sprinkle 1/2 over the potatoes.

PIKELETS WITH CINNAMON APPLE SLICES
Delicious plain pikelets with a cinnamon applesauce. The sauce is a bit different because of the slicing of the apples. One or two pikelets makes a very nice dessert with a spoonful of vanilla ice cream! If using non hydrogenated margarine for the pancakes and sauce, such as Becel, use a little less because of the higher moisture content. Recipe altered from Apple & Pear Australia Ltd.

Steps:
- Sift the flour into a mixing bowl and stir in the sugar; Mix together the egg, melted butter and milk; Whisk into the flour mixture.
- Heat a greased frying pan and add 2 tablespoons of mixture into the pan for each pikelet; Cook for 2 minutes or until bubbles appear on the surface of the pikelet; Turn over and cook for another 30 seconds.
- Remove from pan and keep warm; Repeat with pikelet mixture.
- For the cinnamon apples: Melt the margarine in a small sauce pan. Add the sugar, cinnamon and lemon juice and stir until well combined; Add the slices of apple and simmer in the mixture until tender (about 4 minutes).
- Serve slices of apple on top of the pikelets and drizzle the sauce over.
- For a nice dessert, accompany with a spoonful of ice cream.
