Steps:

  • Preheat oven to 400 degrees. Combine sugar and cinnamon in a medium bowl. Add apples, and toss to coat. Spread apples in a single layer on a rimmed baking sheet. Bake, tossing halfway through, until tender but firm, 30 to 35 minutes.

3 Golden Delicious apples - peeled, cored, and thinly sliced
⅔ cup water
2 teaspoons cold butter, cut into small pieces
1 ½ teaspoons all-purpose flour
1 teaspoon cornstarch
½ cup brown sugar
¼ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer apple slices in the bottom of an 8-inch glass baking dish.
  • Mix water, butter, flour, and cornstarch together in a bowl until no lumps remain. Stir in brown sugar, cinnamon, and salt until smooth. Pour apples in the baking dish.
  • Bake in the preheated oven, stirring every 10 to 15 minutes, until soft and juicy, about 45 minutes.

50g natural dried breadcrumbs
8 dried apricots , roughly chopped
75g cinnamon sugar (see below)
75g butter , chopped
zest and juice 1 orange
6 large Bramley apples
custard or vanilla ice cream, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Mix together the breadcrumbs, apricots, cinnamon sugar, butter and zest.
  • Using an apple corer, remove the centre of each apple, then score the skin across the equator so they don't collapse during roasting.
  • Pack the filling into the apples, then sit them snugly into an ovenproof dish. Mix together the orange juice and 150ml water and pour round the apples. Roast for 40-50 mins until nicely browned and very soft, but still just holding their shape. Serve with the sticky pan juices and custard or ice cream.

Quick and easy baked apples are an old-fashioned comfort food. They can be made in the microwave, or baked in the oven. I often make them a little less sweet by using brown rice syrup instead of the honey. Maple syrup is a good alternative as well.

2 tablespoons raisins
1 tablespoon honey
1/4 teaspoon ground cinnamon
1 teaspoon butter

Steps:

  • Core the apples and pare a 1-inch strip of skin from around the middle of each to prevent splitting.
  • Place the apples in two 10-oz custard cups.
  • Pack the raisins into the apples.
  • Mix the honey and cinnamon, pour over the raisins and into the apples.
  • Top with butter.
  • Cover tightly and microwave on high (100%) until tender when pierced with a fork, 3 to 4 minutes. If you prefer, they can also be baked at 375°F for 30 minutes.
  • Serve warm with cream, if desired.

2 tablespoons fresh lemon juice
4 Gala or Fuji apples
4 cinnamon sticks, plus more for garnish (optional)
2 pints vanilla ice cream

Steps:

  • Preheat oven to 450 degrees. Spread pecans in a 13-by-9-inch baking dish; toast until fragrant, 3 to 5 minutes. Remove pecans, and set aside (or store in a resealable plastic bag, up to 1 day).
  • In a large bowl, combine sugar, lemon juice, and 1/4 cup water. One at a time (to prevent them from turning brown), halve apples through the stem end, core, using a melon baller, and immediately toss with sugar mixture.
  • Arrange apples, cut side down, in baking dish; pour sugar mixture over. Tuck in cinnamon sticks; cover dish with foil. Bake until apples are easily pierced with the tip of a paring knife, 15 to 20 minutes.
  • Serve apples with ice cream, topped with pan juices and pecans. Garnish with cinnamon sticks, if desired.
