EASY HOMEMADE CINNAMON ROLLS
I love this easy homemade cinnamon roll recipe because it allows me to skip the first rise, and I can get them on the table a lot sooner. We usually top with cream cheese, but we have used buttercream.

Steps:
- Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
- Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
- Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
- Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
- Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.
- Turn dough out onto a lightly floured surface and use your hands to shape into a small rectangle. Roll dough out into a rectangle that is about 1/4-inch thick.
- Mix brown sugar and cinnamon together in a small bowl. Spread 1/3 cup softened butter over dough and sprinkle with cinnamon-sugar mixture. Roll dough into a log and cut into 12 equal pieces.
- Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
- Preheat the oven to 400 degrees F (200 degrees C).
- Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

- Into the large bowl of the stand mixer, add in a cup of warm milk, the softened butter, an egg, a teaspoon of salt, 4 tablespoons castor sugar, 3 teaspoons active dry yeast, and the flours.
- Using the dough hook knead the dough until all the ingredients are well combined to form a soft smooth dough. Place the dough in a greased bowl, cover with a cling wrap and allow it to rise until doubled about 2 hours.
- When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9 inch rectangle.
- Combine the filling ingredients - butter, sugar and cinnamon together. Spread over the rolled out dough evenly.
- Beginning at the 15-inch side, role up the dough dough into a log. Cut the rolled log into 12 to 15 slices. Notice the beautiful pin wheel the dough has formed into.
- Place the cinnamon roll slices close together in the greased pan. Cover and we will now allow it to rise for another 30 minutes.
- Preheat the oven to 180 C.
- After 30 minutes of rising, place the rolls in a preheated oven and bake for about 30 minutes or until browned from the edges.
- Once baked, remove from the oven and allow it to rest while we make the glaze.
- Meanwhile, mix butter, powdered sugar, and vanilla in a large mixing bowl. Add milk or cream 1 tablespoon at a time until the glaze reaches thick pouring consistency. Spread over slightly cooled rolls.
- Serve the Homemade Cinnamon Rolls hot along with saucy glaze or allow it to cool and set. You can store the Cinnamon Rolls in the refrigerator and warm it up in the microwave and serve them for breakfast along with a hot cup of coffee.

- Pour milk into a microwave-safe bowl and heat in the microwave until warm but not hot to the touch, 45 to 60 seconds. It should be about 105 degrees F (41 degrees C). Pour into the bowl of a standing mixer.
- Add 1 tablespoon sugar and yeast to the warm milk. Stir and let sit (proof) until foamy, about 5 minutes. Add 1/2 cup sugar, melted butter, eggs, and vanilla extract; stir with a dough hook until combined.
- Add 4 cups flour, sea salt, and cinnamon; stir with the dough hook, starting on low speed and gradually increasing to high speed, until a large ball of smooth and slightly tacky dough is formed. Add 1 tablespoon flour at a time if dough seems too sticky, until a smooth ball is formed.
- Transfer dough to a floured surface and knead with your hands until smooth and elastic, 3 to 5 minutes. Form into a ball and place inside a greased bowl. Cover the bowl with a warm, damp towel and let dough rise in a warm place until doubled in size, about 1 hour.
- While the dough is rising, combine brown sugar, softened butter, and cinnamon for the filling in a small bowl until uniform throughout. Set aside.
- Gently press the gas out of the dough and transfer to a large, floured work surface. Roll the dough into a 24x12-inch rectangle, about 1/4-inch thick. Spread the filling over the dough with greased hands or a greased spatula. Roll up the dough and cut into 12 equally sized rolls, about 2-inches long.
- Line a 9x13-inch glass baking dish with lightly greased parchment paper. Place cinnamon rolls in the prepared baking dish in 4 rows of 3, evenly spaced. Cover and let rise until nearly doubled, about 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until golden brown, 18 to 20 minutes.
- While the rolls are baking, beat together powdered sugar, cream cheese, softened butter, vanilla extract, and salt for frosting. Keep at room temperature while rolls bake.
- Spread frosting on warm rolls. Let cool before serving.

- In a large skillet, over medium high heat add 1Tbsp of olive oil. Add ground beef and cook until no longer pink, breaking apart with a spatula or spoon. 3-4 minutes. - While pasta is cooking prepare the cheese mixture. By adding ricotta cheese, 1 large egg, ½ Parmesan cheese, 1 ½ cups of mozzarella cheese and parsley to a large bowl. Mix until fully incorporated.
