MAPLE CINNAMON SPIDER WEB FRITTERS
With just a few pantry ingredients, you can make cinnamon-flavored spider web fritters. They're so good it's scary!

- Pour enough oil into a large skillet so it's about 1 inch deep. Heat the oil over medium-high heat until a deep-fry thermometer registers between 280 to 300 degrees F.
- Meanwhile, whisk together the flour, granulated sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the center and add the milk, egg and 1 tablespoon of the maple syrup. Whisk the dry and wet ingredients together until smooth.
- Transfer the batter to a large pastry bag fitted with a #3 or 4 open tip. Working in batches and making a few at a time, carefully squeeze the batter into the oil in a circular pattern and then back and forth, to make a free-form spider web-like design, 3 to 4 inches in diameter. Cook until the bottoms are golden, about 2 minutes. Using tongs or a slotted spoon, turn the fritters over and cook until golden on the other side, about 1 minute more. Transfer the fritters to paper towels to drain briefly. Repeat with the remaining batter.
- Brush the webs lightly with maple syrup and dust with confectioners' sugar. Serve warm or at room temperature garnished with jelly spiders or nonpareils if using.

- In deep fat fryer or heavy saucepan, heat 3 inches oil over medium-high heat to 350°F.
- In large bowl, mix Bisquick™ mix, cold water, egg, sugar and cinnamon. Fold in peaches.
- Drop dough by rounded tablespoonfuls into hot oil; fry 2 to 3 minutes on each side until golden brown. Remove from oil with slotted spoon; place on paper towel-lined plate to drain. Sprinkle with powdered sugar, and serve.

SPICED OATMEAL FRITTERS WITH COCONUT CARAMEL PEARS

- In a large saucepan, combine the almond milk, cloves, nutmeg and 3 tsp of the cinnamon. Bring to a simmer. Tip in the oats and cook for 6 mins over a low heat, stirring constantly, until thick and creamy, like porridge. Scrape into a mixing bowl, cover, and cool for 20 mins.
- While you wait, make the caramel pears. Sprinkle the sugar evenly over a frying pan set on a low heat. Don't stir it, but wait until it starts to melt, turning dark golden here and there. When most of the sugar is melted, gently swirl to incorporate any dry patches. Stir in 25g of the coconut butter. Toss the pear slices in the remaining cinnamon, then add to the caramel and cook for 5 mins until softened. Set aside.
- Return to the oats now, beating in the eggs and ½ tsp salt to make a loose pancake-like batter. Heat oven to 140C/120C fan/gas 1 and put plates in to warm.
- Melt a little of the remaining coconut butter in a frying pan. When hot, add half-ladlefuls of the batter spaced apart and cook for 4 mins each side, or until golden brown. Remove to a plate and keep warm in the oven. Continue frying the fritters, adding more coconut butter as needed. Serve the fritters topped with a spoonful of coconut yogurt followed by the warm pears.

- Drain pears, reserving syrup; set the pears aside. In a small saucepan, combine the syrup, brown sugar, nutmeg and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, stirring frequently. Add pears and simmer for about 5 minutes more or until heated through.

- In a large bowl, combine the flour, yeast, cinnamon, salt and nutmeg. In a saucepan, heat the milk, oil and honey to 120°-130°. Add to dry ingredients; beat until moistened. Add eggs; beat on medium speed for 3 minutes. Stir in pear. Cover and let rise in a warm place until doubled, about 1 hour., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown on both sides. Drain on paper towels. Roll in sugar while warm. Serve warm.

Steps:
- Melt butter.
- Knead in flour and 2 tsp cinnamon until dough is firm, may need more or less flour than 1 cup.
- Add the water gradually and knead again.
- Stir in the eggs one at a time and knead until dough becomes elastic.
- Heat oil to 350 degrees in deep pan.
- Drop pieces of dough into hot oil.
- Let fritters cook until golden brown.
- Drain.
- Mix sugar and 2 tsp cinnamon.
- Roll warm fritters in cinnamon sugar.
- Serve immediately with raspberry or strawberry jam.

- Combine milk, 1/4 cup oil and honey in a saucepan; heat to 120 degrees F.
- Combine flours, yeast, cinnamon, salt and nutmeg in a mixing bowl. Add hot milk mixture, mix thoroughly. Dough will be stiff. Add egg substitute, beat well. Stir in pears. Cover and let rise in a warm place about 1 hour or until doubled.
- Deep-fry 2 heaping tablespoonfuls at 375 degrees F in 2-inches oil until nicely browned, turn once. Drain on paper towels; shake with splenda to serve.
