- Begin by preheating your oven to 350 degrees F. Then, roll out the pie dough. Use cookie cutters to cut detailed shapes or a knife to cut strips or squares.
- In a small bowl, whisk together the cinnamon and sugar to combine. Sprinkle the cut dough with the cinnamon and sugar.
- Transfer to a baking sheet lined with parchment and bake for 8-10 minutes or until lightly browned.
- Usually, you can re-roll and cut the extra dough once or twice before it becomes unworkable.

PIGGIES (SUGAR AND CINNAMON PIE DOUGH COOKIES)
Crumbly sugar and cinnamon cookies that you can make as fast as they disappear. My father told me about these cookies that his mother used to make. When she made a pie, she would take the excess dough and make these simple cookies. You don't have to make a pie first, all you need is pie dough. My father loves when I make them for him, and I think you will be hard-pressed to find someone who doesn't. My father said she called them Piggies. That's what I call them.

- Preheat oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray, or line with parchment paper.
- Mix flour and salt together in a bowl, and use a pastry cutter to cut in 1/3 cup of shortening until the mixture forms pea-size balls. With a fork, form a small well in the center of the mixture, and pour in water, a couple of teaspoons at a time, and stir with the fork to mix in the water and form a dough. Incorporate each addition of water before adding the next, until about 3/4 of the flour mixture has formed a stiff dough. Work a little more water in with your hands, and shape the dough into a ball.
- Working on a well-floured work surface with a floured rolling pin, roll the dough out into a rectangle about 12 by 16 inches, and about 1/8-inch thick. Spread 1 tablespoon of shortening over the surface of the dough with a soft spatula, and sprinkle sugar all over the dough square. Sprinkle the dough with cinnamon. Pick up a long edge of dough, and tightly roll the dough into a log shape. With a sharp knife, slice the log into 3/4-inch thick slices. Place the slices onto the prepared baking sheet.
- Bake in the preheated oven until the cookies are lightly browned and sizzling on the bottom, about 8 minutes. Cool on paper towels; freeze extras for later.

- Gather any leftover pie crust and scraps. Make one big flattened disk from it. Roll crust out into a rectangle so that it is the thickness of pie crust. If it is a little thicker it will work fine too. Place the crust on a baking sheet. Combine the sugar and cinnamon together, stir to mix. Sprinkle generously over the pie crust. You may not use all the cinnamon and sugar mixture or you may need to mix up a little more, depending on how much crust you had leftover. Place in an oven preheated to 350° F. Bake for about 10 minutes. The crust should be nicely browned. If not, bake for an additional 1 or 2 minutes. Watch carefully so it doesn't burn. Remove from the oven, cool slightly and enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix sugar and cinnamon together in a bowl.
- Roll out pie crust to a 8x12-inch rectangle about 1/8-inch thick. Spread softened butter over the entire rectangle. Sprinkle cinnamon-sugar evenly over the butter. - Preheat oven to 375 degrees. Spray a baking sheet with nonstick cooking spray.
- Dust your surface with the flour to roll out the pie dough.
- With a rolling pin dusted in flour, roll out the dough to approximately 1/8" thickness.
- Cut the dough into whatever shape you prefer and place the pieces on the baking sheet.

- Preheat oven to 350 degrees. Line a baking sheet with parchment paper or use silpat. On a slightly floured surface, roll your pie crust into a large rectangle. Roughly a 10 x 8 or so. If you are using scraps of pie crust, roll into the size rectangle you can.
- Mix together sugars, cinnamon in a small bowl. Brush pie crust with butter, you just want a thin layer of butter on the crust. Sprinkle cinnamon mixture evenly over pie crust (you may not need the whole amount depending on how big your crust is)
- Roll you pie crust as if you were rolling cinnamon rolls. Slice into ½ inch to 1 inch thick pieces. Place on baking sheet and bake for 8-10 minutes or until pie crust is just about finished.
- Allow to cool completely before serving. Drizzle a little bit of a sugar glaze on top ( mixture of confectioners sugar and milk- adding milk or confectioners sugar until desired consistency)
