1 cup water
3-3/4 cups sugar
1-1/4 cups light corn syrup
1 teaspoon red liquid food coloring
1 teaspoon cinnamon oil
1/3 cup confectioners' sugar

Steps:

  • Line a 15x10x1-in. pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes. , Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container.

Steps:

  • In a small sauce pot add water and cinnamon and bring to boil. Simmer for 10 minutes, and strain out cinnamon sticks. Bring water back to a boil, add sugar and stir until sugar is dissolved.

STEP 1
7 lb cucumbers, halved, peeled, seeded and sliced into 1/2-inch slices
1 c pickling lime
STEP 2
1 vinegar
1 large bottle red food coloring
1 tsp alum
water to cover
STEP 3
2 c vinegar
7 c sugar
8 stick cinnamon
1 small package cinnamon red hots (candy)

Steps:

  • 1. Soak prepared cucumbers in lime mixed with 1 gallon of water for 24 hours. Drain and rinse with ice water. Cover and let stand for 3 hours draining on an old sheet.
  • 2. Mix 1 cup vinegar, food coloring, alum and enough water to cover and simmer for 2 hours. Drain and throw away.
  • 3. Mix 2 cups vinegar and 2 cups water, sugar, cinnamon sticks, and red hots. Pour over cucumbers and let stand for 24 hours.
  • 4. Drain and save liquid. Bring liquid to a rolling boil. Pack cucumbers in jars and fill with boiling liquid. Seal jars and process in hot water bath for 15 minutes.

Steps:

  • Preheat oven to 325°F. In a large bowl, whisk egg white until frothy; whisk in brown sugar, maple syrup, and oil. Add oats, coconut, almonds, pepitas, flaxseeds, almond flour, cinnamon, and salt; stir to combine.
  • Firmly press mixture evenly into bottom and all the way to edges of a parchment-lined 9-by-13-inch rimmed baking sheet or pan.
