2 cups pitted sweet cherries
2 cups fresh blueberries or frozen unsweetened blueberries
3/4 cup sugar
1/4 cup all-purpose flour
1/8 teaspoon ground nutmeg
Pastry for a double-crust pie (9 inches)
1 tablespoon butter
Additional sugar

Steps:

  • In a large bowl, gently combine cherries and blueberries. In a small bowl, mix sugar, flour and nutmeg; stir into fruit. Let stand 10 minutes., Preheat oven to 425°. On a lightly floured surface, roll one half of the dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. Sprinkle with additional sugar. Cover edge loosely with foil., Bake 15 minutes. Reduce oven setting to 350°. Bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

1 (15 ounce) package refrigerated pie crusts
½ cup white sugar
2 tablespoons cornstarch
¼ teaspoon ground cinnamon
1 (21 ounce) can cherry pie filling
1 ½ cups frozen blueberries
1 egg white
1 teaspoon water
2 teaspoons sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Press one of the pie crusts into a 9 inch pie plate. In a large bowl, stir together 1/2 cup of sugar, cornstarch and cinnamon. Stir in the cherry pie filling and blueberries. Spoon into the pie crust. Top with the second crust, and press the edges to seal. Flute edges, or press with the tines of a fork. In a cup, whisk together the egg white and water with a fork. Brush over the top of the pie, then sprinkle with 2 teaspoons of sugar.
  • Bake for 45 to 55 minutes in the preheated oven, or until crust is golden brown. Cover the edges of the crust with aluminum foil if they appear to be getting too dark. Cool for at least 2 hours to allow the filling to set before serving.

2 cups pitted cherries
2 cups blueberries, rinsed and drained
1 ¼ cups white sugar
¼ cup all-purpose flour
1 tablespoon ground cinnamon
½ teaspoon lemon juice
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Mix sugar, flour, and cinnamon in large bowl. Add fruit. Add lemon juice, and stir well.
  • Pour into a 9 inch unbaked pie shell. Dot with the butter or margarine. Cover with top crust and flute edges. Cut small slits in the top.
  • Bake at 375 degrees F (190 degrees C) for 1 hour. I put a baking sheet under mine to catch any liquid that might bubble over.

In 2001 I moved from Ontario to Newfoundland with my Newfie husband. As most people know, Newfoundland has an abundance of delicious blueberries. I needed a few recipes to use up all the berries we pick. I asked around and this was one of the recipes I received from a co-worker. This recipe is very good because the filling stays thick and luscious. Enjoy!

1 cooked pie shell
4 cups blueberries, washed
1 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
1 cup water
1 tablespoon margarine

Steps:

  • In a saucepan, mix 1 cup of the blueberries with sugar, cornstarch, salt and water.
  • Cook over low until thickened.
  • Add the remaining 3 cups of blueberries and margarine.
  • Stir until combined.
  • Pour into pie shell and cool until no longer hot.
  • Serve and enjoy!

36 graham crackers, crushed
4 eggs
2 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla extract

Steps:

  • Melt the butter or margarine, and add 1 cup sugar and the graham crackers. Press this mixture into a 9x13 pan.
  • Beat the eggs. Gradually beat cream cheese, sugar, and vanilla into the eggs.
  • Pour egg and cream cheese mixture over the graham cracker crust. Bake at 325 degrees F (165 degrees C) for 15-20 minutes. Cool.

2-1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup cold butter, cubed
6 to 8 tablespoons cold water
FILLING:
2 cups fresh or frozen sliced peaches, thawed
1-3/4 cups pitted fresh dark sweet cherries or 1 can (15 ounces) pitted dark sweet cherries, drained
1 cup fresh or frozen blueberries, thawed
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1-1/2 cups sugar
1/4 cup all-purpose flour
1/4 cup quick-cooking tapioca
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 tablespoon butter

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions. Shape each into a disk; cover and refrigerate for 1 hour or overnight., In a large bowl, combine peaches, cherries, blueberries and extracts. I wanted to make a pie for 'drop-in' company and didn't have enough ingredients with out running to the store...didn't want to do that. So as I checked the pantry and freezer I found a can of cherry pie filling and some bluebrries I cleaned and frozen a couple months earlier. Had to brainstorm quickly...so this is what I came up with. Was a huge hit, everyone loved it. If you give it a try I hope you like it...soooooooo easy. You can ofcourse use any combo of fruits that more easly fit your taste buds.

MAKE ENOUGH PASTRY DOUGH FOR A DOUBLE CRUST PIE (OR USE PRE-MADE)
1 can(s) (20 oz) of cherry pie filling
1 cup(s) fresh frozen blueberries
3/4 teaspoon(s) rum
3/4 teaspoon(s) lemon juice concentrate
2 tablespoon(s) liquid 100% egg whites (to brush on crusts top)

Steps:

  • I made enough pastry for a double crust pie (recipe link below). Warmed the canned cherry pie filling in a sauce pan on the stove, with the rum and lemon juice. Pour 1/2 of it into the pastry-crust you've put in bottom of pie plate. Sprinkled a layer of ''fresh frozen'' blueberries on top of cherry filling, then pour the other half of the cherry pie filling on top of the blueberries. Covered with a the other pastry crust, seal edges and crimp. Brush the liquid egg white over the top of crust and edges. Then I made some slits (also an ''S'' for my last name) on top crust and sprinkled sugar crystals on top. I used red & clear crystals. Baked pie at 425 dF for 30 minutes. Don't let edges get too dark or burn, cover edges if needed. OPTION: Serve hot or warm with vanilla ice cream. Easy as pie =;D & delish!!!

4 cups frozen blueberries
3/4 cup sugar
1/4 cup quick-cooking tapioca
1 teaspoon lemon zest plus 2 tablespoons juice (from 1 lemon)
1/4 teaspoon kosher salt
3 tablespoons unsalted butter, cut into small pieces
1 large egg, lightly beaten

Steps:

  • Place a baking sheet on the middle rack of the oven and preheat to 400 degrees F.
  • Roll 1 pie dough into a 12-inch round and fit it into a 9-inch pie plate, leaving an overhang for now. Place the dough into the refrigerator while you make the filling.
  • Mix the blueberries, sugar, tapioca, lemon zest and juice and salt in a large bowl until well combined. Remove the pie plate from the refrigerator and fill with the berry mixture. Steps:

  • Heat oven to 350 degrees.
  • Lightly spray 16 (2-inch wide) muffin tins with nonstick cooking spray.
  • In a medium bowl combine flour, brown sugar and cinnamon.
  • Using a pastry blended cut the cold butter until it resembles coarse crumbs; stir in nuts.
  • Separate the dough into 8 biscuits.
  • Split each biscuit in half to make 16 rounds.
  • Using floured fingers flatten each to form a 4-inch round.
  • Press each round into muffin cup.
  • Spoon about 2 tablespoons pie filling into each biscuit-lined cup.
  • Sprinkle each with about 2 tablespoons flour/cinnamon mix (cups will be full).
  • Bake for 15-22 minutes or until golden brown.
  • Cool 5 minutes, then remove from muffin tins.
  • Place on a wire rack to cool.
  • In a small bowl mix the 3 tablespoons sugar with 1/2 teaspoon cinnamon.
  • Just before serving top each with whipped cream then sprinkle the cinnamon/sugar on top of the whipped cream.
