4 pounds bone-in chicken thighs
3/4 cup freshly squeezed orange juice, about 2 oranges
2 tablespoons grated orange zest
1 teaspoon salt
2 teaspoons freshly cracked black pepper
1 teaspoon chiffonade fresh mint leaves
1 1/2 tablespoons chiffonade basil leaves
3 tablespoons white balsamic vinegar
3 tablespoons minced shallots
1 tablespoon celery seeds
Glaze, recipe follows
1 tablespoon olive oil
1 tablespoon minced shallots
1 teaspoon minced ginger
1/2 cup orange marmalade (look for marmalade with small rinds)
1/4 cup sweet chili sauce
1 tablespoon white balsamic vinegar
1/4 cup reserved marinade, strained

Steps:

  • Combine all the ingredients in a large resealable plastic bag and refrigerate for 6 to 8 hours.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken from the marinade, reserving 1/4 cup for Glaze and put the chicken in a 13-by-9-inch pan and bake for 45 minutes. Baste with the Glaze, turn the pieces over and bake for an additional 15 to 25 minutes, basting every 7 minutes. Remove from the oven and arrange the chicken on a serving platter.
  • In a small saucepan, over medium-high heat, add the olive oil. When the oil is hot add the shallots and ginger and saute for 3 minutes. Add the remaining ingredients and reduce heat to a low simmer. Cook for 15 minutes. Baste the chicken with the glaze after 45 minutes.

1/2 teaspoon ground ginger
1/8 to 1/4 teaspoon cayenne pepper
1/3 cup orange juice
3 tablespoons reduced-sodium soy sauce
2 tablespoons water
2 tablespoons lemon juice
1 tablespoon honey
1 garlic clove, minced
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon zest
10 ounces boneless skinless chicken breasts, cut into 3/4-inch pieces
1 tablespoon olive oil
Hot cooked pasta, optional
1/4 cup sliced green onions

Steps:

  • In a small bowl, combine the cornstarch, ginger and cayenne. Stir in the orange juice, soy sauce, water, lemon juice, honey, garlic, orange and lemon zest until smooth; set aside. , In a large skillet, saute chicken in oil until no longer pink. Stir cornstarch mixture; gradually add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with pasta if desired. Sprinkle with onions.

This take on the humble chicken breast yields a dish that is at once crisp and moist, tangy and sweet. You can use bone-in chicken breasts, but you'll need to adjust your cooking time by a few minutes.

2 tablespoons extra-virgin olive oil
2 tablespoons butter
4 boneless chicken breasts
Salt and black pepper
1/4 cup flour
1 large orange
2 limes
1 tablespoon sugar

Steps:

  • Put a large skillet over medium-high heat for 2 or 3 minutes. Add olive oil and butter to the skillet and swirl it around.
  • Season the chicken with salt and pepper. Put flour on a plate. When the butter foam subsides in the pan, dredge the chicken in flour, shaking to remove the excess.
  • Add the breasts to the skillet and cook, turning once, until the chicken is browned on both sides and nearly cooked through, about 5 minutes per side. (Chicken should be constantly sizzling but not burning.) Transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Cut the orange in half. Section one of the halves as you would a grapefruit, removing any seeds. Juice the remaining orange half and one lime.
  • With the heat still on medium-high, add the orange juice, lime juice and sugar to the skillet and let it bubble, stirring, until it is reduced by half, about 2 minutes.
  • Add the orange sections to the skillet and turn heat to low, stirring, until mixture is slightly thickened.
  • Return the chicken to the skillet, turn it in the sauce, then serve, seasoned with salt and pepper to taste. Cut the remaining lime into wedges for garnish.

Roasting two chickens on one baking sheet is an effortless but strategic way to cook for a crowd.

1 lemon
2 (3 1/2-4-lb.) chickens
Kosher salt, freshly ground pepper
2 large red onions, quartered
2 bunches spring onions or 3 bunches scallions, trimmed, divided
4 green garlic bulbs, very finely chopped, or 4 garlic cloves, finely grated
1/2 cup extra-virgin olive oil
1/2 cup (1 stick) unsalted butter
6-8 (1"-thick) slices crusty bread
1/4 cup parsley leaves with tender stems
Crushed red pepper flakes (for serving)

Steps:

  • Preheat oven to 350°F. Very thinly slice 1 lemon; tease out seeds. Place chickens on a rimmed baking sheet; season outsides and insides all over with salt and black pepper. Scatter red onions, three-quarters of spring onions, and half of lemon slices around.
  • Cook green garlic, oil, and butter in a small saucepan over medium heat, swirling occasionally, until butter melts and garlic starts to lightly sizzle; season with salt and black pepper. Pour over chickens, letting some of the mixture drip onto onions and lemon.
  • Roast chickens, tossing onions and lemon and basting chickens with drippings in baking sheet occasionally, until chickens are golden brown all over and an instant-read thermometer inserted into the thickest part of the breast registers 160°F and onions and lemon are softened and starting to brown, 80 minutes-2 hours.
  • Remove baking sheet from oven and transfer chickens to a cutting board, leaving onions and lemon behind. Place bread slices on baking sheet and turn once to coat in chicken fat. Return baking sheet with bread and vegetables to oven and roast until vegetables are starting to sizzle and crisp and bread is toasted, 10-15 minutes.
  • Meanwhile, thinly slice remaining spring onions and toss in a medium bowl with parsley and remaining lemon slices. Season with salt, black pepper, and enough red pepper flakes to achieve your desired level of spiciness.
  • Carve chickens and transfer to a large shallow bowl or platter (or serve right on the cutting board). Pour any remaining juices on baking sheet over chicken and scatter roasted onions and lemon slices around, followed by raw spring onion mixture. Slice each toast into a few pieces and serve alongside.

1 cup dry white wine or 1 cup apple juice
1/4 cup fresh lemon juice, about 1 lemon
1/4 cup freshly squeezed lime juice, about 2 limes
3 large garlic cloves, minced or 2 tablespoons bottled minced garlic
1 tablespoon dried rosemary or 1 tablespoon tarragon
1 teaspoon salt
3 1/2 lbs whole chickens, preferably split in half

Steps:

  • Preheat oven to 475F
  • In a 9x13-inch baking dish or roasting pan (should hold 2 flattened chicken halves snughly), stir wine with lemon and lime juices, garlic, rosemary and salt.
  • If chicken hasn't been split, use kitchen scissors or shears to cut backbone out of chicken and discard.
  • Cut off and discard any excess fat or skin.
  • Slice chicken in half between breasts.
  • Place, skin-side up, on a flat surface.
  • Flatten the chicken as much as you can by pressing down on the breast bone with both hands or smash it with a heavy frying pan.
  • Rinse with cold water, pat dry with paper towels and place chicken, skin-side down, in dish and spoon some of wine mixture overtop.
  • Lay a large piece of foil over dish, then place soething heavy such as a cast iron ovenproof pan, cast-iron frying pan or a foil-wrapped brick on top of chicken to help keep it flat.
  • Roast in centre of 475F oven 30 minutes.
  • Remove heavy pan or brick and foil.
  • Remove chicken from oven, turn chicken over and spoon pan juices overtop.
  • Return to oven and roast, uncovered and basting occasionally with pan juices, until chicken is firm when pressed and temperature of the thickest part of meat reaches 170F (15 to 20 more minutes.
  • Remove chicken to a cutting board, slice into serving-size portions and place on dinner plates.
  • Spoon pan juices overtop.

8 Tbsp cilantro, chopped
2 Tbsp yellow bell pepper, chopped
1/4 sweet red onion, thinly sliced
1 6-oz pkg Southwestern-style chicken
Dressing Ingredients:
2 Tbsp orange juice
2 Tbsp white wine vinegar
1/4 tsp garlic, minced OR
1/2 clove garlic, crushed
1/4 tsp ground cumin
4 Tbsp canola oil
Make the Dressing:
In a small bowl, whisk dressing ingredients until smooth.
Let sit for 15 or 20 minutes to blend flavors.
Whisk just before drizzling onto salad or store in an airtight container in the refrigerator for up to 2 weeks.

Steps:

  • Make the Salad:
  • Place salad greens, cilantro, yellow pepper, & onion into a large salad bowl.

1 (16 ounce) package dry whole-wheat noodles
½ cup chicken stock
½ cup orange marmalade
⅓ cup tamari sauce
1 (1 inch) piece ginger root, peeled
ground black pepper to taste
1 lemon, juiced
3 tablespoons peanut oil
2 pounds skinless, boneless chicken breast halves, cut into thin strips
1 (16 ounce) bag frozen stir-fry vegetables, thawed

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil.
  • Stir in whole-wheat noodles and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through but is firm to the bite, 5 to 8 minutes. Drain well and set aside.
  • Combine chicken stock, orange marmalade, tamari sauce, whole ginger root piece, and ground black pepper in a pot over medium-high heat.
  • Bring sauce to a boil and reduce heat to medium. Simmer until sauce reduces and thickens; about 20 minutes.
  • Remove sauce from heat. Stir in lemon juice and set aside.
  • Heat peanut oil in a large skillet over medium-high heat.
  • Cook and stir chicken in hot oil until golden, no longer pink in the center, and the juices run clear, 5 to 10 minutes.
  • Remove chicken from skillet and set aside, leaving oil in the pan.
  • Cook and stir the stir-fry vegetables in the same skillet used for the chicken until vegetables are almost tender, 4 to 5 minutes.
  • Remove ginger root piece from sauce and discard.
  • Stir chicken and sauce into vegetables and cook until heated through, 1 to 2 minutes.
  • Serve over whole-wheat noodles.

  • Rinse chicken; pat dry.

2 skinless chicken breasts
1 heaped tbsp plain flour , seasoned
2 tbsp olive oil
1 banana shallot , finely sliced
1 carrot , cut into matchsticks
0.5 x 500g tub fresh chicken stock
juice and zest 1 lemon
juice and zest 1 orange
1 tbsp soy sauce
1 tbsp clear honey
cooked spring greens , to serve
steamed rice , to serve

Steps:

  • Place the chicken breasts between 2 pieces of baking parchment and lightly bash with a rolling pin to flatten. Dip each one in the flour to coat on both sides. Heat half the oil in a non-stick pan and fry the chicken for 2 mins each side until golden. Remove and set aside.
  • Add the remaining oil to the pan and tip in the shallot and carrot. Cook for 5 mins or until soft. Add the chicken stock, citrus juice and zests, soy sauce and honey. Continue to bubble down for 10 mins until thickened.
  • Return the chicken to the pan and turn down the heat. Simmer for 15-20 mins until the chicken is cooked through and the sauce is thick and glossy. If it gets too thick, add a splash of water. Season the chicken and serve with the sauce spooned over. Serve with greens and rice.
