1 (750-ml) bottle Prosecco or French Champagne, chilled
1/2 cup orange juice
2 cups Mint Simple Syrup, recipe follows
1 lemon, zested and thinly sliced
1 lime, zested and thinly sliced
1/2 cup sliced strawberries
5 fresh mint sprigs
Crushed ice
2 cups sugar
2 cups water
1 cup packed fresh mint leaves

Steps:

In a large pitcher, combine the Prosecco, orange juice, Mint Simple Syrup, lemon zest, and lime zest. Add the sliced strawberries, lemon slices, lime slices, and mint sprigs.
Fill glasses with crushed ice and pour the sangria over the top. Serve immediately.
In a small saucepan, combine the sugar, water, and mint over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.

4 cups freshly squeezed grapefruit juice
1 cup ginger ale
1 lemon, thinly sliced
1 blood orange, thinly sliced
3 clementines, thinly sliced
1 honey crisp apple, thinly sliced
1/2 cup pomegranate arils
1/4 cup sugar
1/3 cup water
pinch of salt
1 bottle of chilled champagne

Steps:

Prepare simple syrup by stirring sugar and water until sugar completely dissolves. Keep in refrigerator to chill while prepping other ingredients. In a tall pitcher, add all fruits + grapefruit juice + salt + simple syrup and ginger ale . Chill in refrigerator for a few hours, preferably overnight. To serve, add sangria in a fancy-schmancy glass and top it with bubbly champagne!

1 cup water
1 cup granulated sugar
3 oranges
3 lemons
6 limes
1 cup tequila
750 mL white wine, we used sauvignon blanc
5 cups club soda

Steps:

Combine water and sugar in a saucepan, bring mixture to a boil, then remove from heat and let cool.
Squeeze fresh juice from 2 oranges, 2 lemons, and 4 limes into the cooled simple syrup, then stir.
Using a mesh sieve, strain the citrus simple syrup into a large pitcher.
Slice 1 orange, 1 lemon, 2 limes, and add the slices into the pitcher. Pour in tequila, wine, club soda, and give it all a good stir.
Serve with ice and garnish with a slice of fruit.

1 (750 milliliter) bottle dry white wine
1 tablespoon white sugar
1 splash orange juice
1 orange, cut into 4 wedges
1 lemon, cut into 4 wedges
1 lime, cut into 4 wedges
4 cups ginger ale
4 (1.5 fluid ounce) jiggers lime-flavored gin

Steps:

Pour white wine into a large pitcher. Add white sugar and orange juice; stir until sugar is dissolved.
Squeeze juice from orange wedges, lemon wedges, and lime wedges into the pitcher. Add wedges to the pitcher. Stir in ginger ale and gin.
