1 can (6-1/2 ounces) minced clams
2 tablespoons diced onion
5 tablespoons butter, divided
3-1/2 teaspoons all-purpose flour
1/2 teaspoon prepared horseradish
1/4 teaspoon garlic powder
1/4 teaspoon Worcestershire sauce
Dash salt
9 slices bread, crusts removed
Paprika

Steps:

  • Drain clams, reserving juice; set aside. In a small skillet, saute onion in 1 tablespoon butter until tender. Stir in flour until blended. Gradually add the horseradish, garlic powder, Worcestershire sauce, salt and reserved clam juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in clams., Flatten bread with a rolling pin. Melt remaining butter; brush one side of each slice of bread. Spread with clam mixture; roll up. Brush with remaining butter; sprinkle with paprika. , Cut rolls into thirds; place on a greased baking sheet. Bake at 425° for 5-8 minutes or until lightly browned. Serve warm.

1/3 cup thinly sliced onion
1/2 cup mayonnaise
1 teaspoon Worcestershire sauce
3/4 teaspoon garlic powder
1/4-1/2 teaspoon Tabasco sauce
6 tablespoons parmesan cheese
6 tablespoons melted butter

Steps:

  • Mix all ingredients except bread and butter.
  • Trim crusts off bread and roll each slice with a rolling pin until thin.
  • Spread 1 tablespoon of clam mixture on bread and roll the bread up jellyroll style.
  • Brush with butter and place 1" apart on greased cookie sheet.
  • Bake at 400F for about 12-15 minutes, until lightly browned.

3 pounds fresh littleneck clams
1 bunch Swiss chard, stems removed and chopped (about 4 cups)
1/2 pound fully cooked Spanish chorizo links, chopped
1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1 medium onion, chopped
1 cup fresh or frozen corn
4 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 bottle (12 ounces) beer
1/3 cup olive oil
Grilled French bread baguette slices

Steps:

  • Place clams in a stockpot; top with the next 8 ingredients. Add beer and oil; bring to a boil. Reduce heat; simmer, covered, for 10 minutes., Stir; cook, covered, until clams open, 5 to 7 minutes longer. Discard any unopened clams. Ladle into bowls; serve with grilled bread.

These are a great appetizer for parties. They are a family favorite in my house. You can freeze some prior to baking and use as needed. We serve these with some worcestershire sauce sprinkled on them.

1 (14 ounce) package Pepperidge Farm stuffing
1 (8 ounce) bottle clam juice
4 (6 1/2 ounce) cans minced clams
1/2 cup butter
4 stalks celery, finely chopped
1 large onion, finely chopped
1 teaspoon oregano
1 dash pepper

Steps:

  • Melt butter in saucepan, add clam juice ,minced clams and juice form minced clams. Heat this mixture. In a large bowl add stuffing and sauted celery and onions, pepper and oregano. Pour hot liquid over stuffing mix. Mix well and cool. Roll into balls then bake for 30 minutes at 350.
