CLASSIC VANILLA BUTTERCREAM

Provided by Food Network

Categories     dessert

Time 55m

Yield frosting for 1 layer cake

Number Of Ingredients 5

2 cups sugar
1/2 cup water
4 egg whites
1 pound butter, cut up
1 to 2 teaspoons vanilla extract

Steps:

  • In a small clean dry saucepan, place 2 cups sugar and then pour 1/2 cup water down the sides of the pan. Make an X in the sugar with 1 finger to encourage the water to seep into the middle of the pan of sugar. Bring to a boil and cook until softball stage or 235 degrees F on a candy thermometer.
  • Meanwhile, in a mixer with a whip attachment, whip the whites until they form soft peaks. When the syrup is up to temperature, drizzle it down the wall of the mixing bowl with the mixer running. Continue whipping until light, fluffy and almost cooled down. Start adding the butter a few cubes at a time to cool the frosting and thicken it. When it gets thick you can stop adding butter; you may not use the whole pound (it depends on how much water you cooked out of your syrup). Add vanilla extract to taste.

  • Combine the butter, salt, and confectioner's sugar in a mixing bowl fitted with the paddle attachment. Stir on low until thick and combined. (Trust me. You do not want a sugar explosion by putting the mixer on high too quickly.)
  • Add the milk and salt. Slowly increase the speed to medium-high and beat until fluffy and smooth. Scrape the bowl to ensure all the ingredients are combined fully. Beat another minute more.
  • Spread or pipe onto cakes or cupcakes as desired. PRO TIP: To store buttercream frosting, place plastic wrap directly on the surface to ensure no air can form a crust on top. This buttercream will keep at room temperature for 24 hours, and up to a week in the fridge. To softened refrigerated buttercream, let stand overnight at room temperature, or microwave on the defrost setting at 30-second increments. Rewhip until smooth.

  • Add half of the powdered sugar, flavoring and half of the milk. whip until light and fluffy again. Add the rest of the powdered sugar and add the milk, just a half Tablespoon at a time until the desired consistency.
  • If you have leftover buttercream frosting, you can store it in your fridge for a couple of weeks. Just put your buttercream frosting in a covered container with a lid. When you're ready to use it again, just take the frosting out of the fridge and let it get to room temperature again. Using a hand-held mixer, just mix the frosting again until you have fluffy buttercream frosting again.
