This vintage Watergate Cake is a pistachio, pecan, and coconut dessert that's topped with a creamy whipped frosting.

1 (15.25 ounce) box white cake mix
¾ cup vegetable oil
1 small box instant pistachio pudding mix
3 eggs
1 cup club soda, 7UP or ginger ale
½ cup finely chopped pecans
½ cup sweetened coconut flakes
2 envelopes (2.6 oz total) Dream Whip
1 ¼ cups cold milk
1 small box instant pistachio pudding mix
½ cup sweetened coconut flakes
½ cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • In a large bowl, combine cake mix, oil, pudding mix, eggs and soda. Using an electric mixer, beat on low speed for about 30 seconds, and then on medium speed for about 3-4 minutes (scraping the sides of the bowl regularly). Fold in the pecans and coconut. Transfer batter to prepared baking dish.
  • Bake the cake at 350 degrees F for about 35-40 minutes, or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool completely.
  • Once the cake is cool, prepare the frosting.
  • In a large bowl, combine Dream Whip and cold milk. Beat on high speed until soft peaks form (about 4-5 minutes). Add pudding mix and beat until fluffy. Spread on cake and sprinkle coconut and pecans over top.

1 cup vegetable oil
1 cup lemon-lime flavored carbonated beverage
2 (3 ounce) packages instant pistachio pudding mix
1 cup frozen whipped topping, thawed
1 cup cold milk

Steps:

  • Combine cake mix, eggs, oil, soda drink and 1 box pistachio pudding. Pour batter into a greased and floured 13 x 9 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until a toothpick inserted into cake comes out clean. Cool completely.
  • While cake is baking, mix 1 box pistachio pudding, whipped topping, and milk. Chill. Ice cooled cake with chilled frosting.

1 pkg. (2-layer size) white cake mix
2 pkg. (3.4 oz. each) JELL-O Pistachio Flavor Instant Pudding, divided
2 cups milk
1 can (8 oz.) crushed pineapple in juice, undrained
1/2 cup chopped pecans, divided
1-1/2 cups thawed COOL WHIP Whipped Topping
1 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter and bake as directed on package for 13x9-inch cake. Immediately poke deep holes in cake at 1-inch intervals, using handle of wooden spoon.
  • Beat 1 pkg. pudding mix and milk in medium bowl with whisk 2 min. Immediately pour over warm cake. Use offset spatula to spread pudding into holes in cake.
  • Combine pineapple, 1/4 cup nuts and remaining dry pudding mix in medium bowl. Gently stir in COOL WHIP; spread over cake.
  • Refrigerate 1 hour. Top with marshmallows and remaining nuts before serving.

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant pistachio pudding mix
1 cup club soda
1/2 cup canola oil
3 large eggs
3/4 cup pistachios
FROSTING:
2 packages (3.4 ounces each) instant pistachio pudding mix
2 cups heavy whipping cream
1 cup 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, pudding mix, club soda, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in pistachios. Transfer to a greased 13x9-in. baking pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack., For frosting, in a small bowl, combine pudding mix, whipping cream and milk; beat until soft peaks form. Spread over cake.

1 cup carbonated water
3 eggs
½ cup chopped walnuts
¼ cup milk
1 (1.5 ounce) envelope instant dessert topping
¼ cup chopped walnuts
12 maraschino cherries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan.
  • Combine the cake mix, 1 box of the instant pistachio pudding, the vegetable oil, club soda, eggs, and 1/2 cup of the chopped walnuts. Stir until just combined and pour into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes. Let cake cool then frost.
  • To Make Frosting: Beat the milk into the remaining box of pistachio pudding. Prepare topping mix according to package directions. Fold into pudding mixture. Spread over top of cooled cake and sprinkle with walnuts and maraschino cherries.
