COCKTAIL FRANKS IN A BAGUETTE WITH ONION-TOMATO RELISH
Ficelles are thin baguettes, named after the French word for string. If you can't find one, use a baguette.

Steps:
- Heat oil in a large skillet over medium heat. Add franks, and cook, turning occasionally, until golden brown and heated through, 6 to 8 minutes.
- Spread cut sides of bread with relish. Place franks, end to end, on top of relish. Cut sandwich into 6 equal portions, and serve with yellow mustard.

Serve this alongside our Cocktail Franks in a Baguette.

Steps:
- Heat the oil in a medium skillet over medium-high heat. Add onions; cook, stirring occasionally, until beginning to soften, about 7 minutes. Reduce heat to medium. Add tomatoes; cook, stirring occasionally, 10 minutes.
- Stir in sugar, vinegar, salt, and cayenne pepper. Cook, stirring occasionally, until onions are soft and mixture is shiny, about 20 minutes (if the onions begin to brown, reduce heat to medium-low). Serve warm or at room temperature.
EASY TOMATO ONION RELISH
This is a condiment for sandwiches, hamburgers, or hot dogs. Also can be a great topping for cooked fish, chicken, or beef. You can adjust the sweetness with the amount of sugar.

- Place fish in a greased 15x10x1-in. baking pan. Drizzle with butter; sprinkle with 1/4 teaspoon salt and the lemon pepper. Bake at 425° for 10 minutes or until fish flakes easily with a fork., In a small bowl, combine the tomato, orange, onion, capers, brown sugar, vinegar and remaining salt. Serve with fish.
